BEER CHEESE DIP
This easy beer cheese dip is great served hot, warm, or even cold with soft pretzels, tortilla chips, or fresh veggies!

- Melt butter, flour, onion powder, garlic powder, and cayenne pepper over medium heat in a saucepan. Cook 1 minute.
- Stir in milk and beer a bit at a time, whisking until smooth after each addition. Continue cooking over medium heat, add in mustard and Worcestershire, cooking sauce until thick and bubbly.
- Reduce heat to low, add cheeses, and stir just until melted and smooth.
- Serve warm with vegetables, tortilla chips or soft pretzels.

ROASTED BROCCOLI AND CHEDDAR CHEESE DIP
This savory dip features the classic combo of earthy broccoli and rich, tangy Cheddar. Like most cheese dips it's best devoured immediately after it's prepared, while the sauce is piping hot. Be sure to use mild Cheddar in this recipe since sharp Cheddars tend to get grainy when cooked in this type of sauce.

- Position an oven rack in the center of the oven and preheat to 450 degrees F.
- Toss the broccoli florets with the oil, 1/2 teaspoon salt and a few grinds of pepper on a baking sheet and spread out in a single layer. Roast the broccoli until browned in parts and tender but not mushy, 15 to 20 minutes. Transfer the broccoli to a cutting board to cool. Coarsely chop the broccoli.
- Meanwhile, melt the butter in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until softened, 6 to 8 minutes. Add the garlic and stir until softened, about 2 minutes. Stir in the flour and cook until the flour is lightly browned and has a paste-like consistency, 3 to 5 minutes. Stir in the half-and-half and continue to cook, stirring frequently, until the mixture just comes to a bare simmer and has thickened to the consistency of heavy cream, 10 to 15 minutes. Turn off the heat and stir in the Cheddar and Monterey Jack until melted. Gently stir in the roasted broccoli and mustard. Season with salt and pepper.
- Transfer to a serving dish and serve with roasted potato wedges or other dippers.
ROASTED GARLIC & PARMESAN BEER CHEESE DIP RECIPE - (4.5/5)

- Preheat oven to 425. Cut the top tip of each head garlic off, just enough to expose all of the cloves. Place each head on a separate piece of tin foil. Drizzle with olive oil and seal the foil around the garlic. Place both garlic packets on a baking sheet or baking dish. Roast in the oven for 30 minutes. Remove from oven and allow to cool. Reduce oven temp to 350. In a food processor, add the cream cheese, 1 1/2 cup reggianno, gouda, beer, red chili sauce, salt, pepper and corn starch. Squeeze the roasted heads of garlic until the soft cloves comes out, add the roasted cloves to the food processor, taking care that none of the papery garlic skin is added to the food processor. Discard the empty garlic head. Process until well combined. Add to a baking dish, top with the remaining 1/4 cup cheese. Bake at 350 until melted and the top has started to turn a light golden brown, about 35-40 minutes. Remove from oven, top with green onions, serve warm.

Steps:
- Preheat oven to 425.
- Cut the top tip of each head garlic off. As long as you expose most of the cloves, it will work fine. Place them in a piece of tin foil. Drizzle with olive oil and seal the foil. Roast in the oven for 30 minutes. Poke with a knife to make sure the coves are mushy and soft.
- Wait until these are cool! You'll end up popping the cloves out mostly with your fingers and hot oil is no funsies.
- Reduce oven temp to 350.
- In a stand mixer or bowl with a hand mixer, add the cream cheese, 1½ cups of delicious cheese, beer, salt, pepper and corn starch. Mix thoroughly. I mixed it all on high for about two minutes. This will leave some large pieces of garlic, but some of it will also combine with the other ingredients.
- Add to a baking dish, top with the remaining cheese. Bake it in the preheated oven until it is bubbly. If you want it browned on top, bake it for 20 minutes and then broil for 5 minutes. Make sure the dish you're cooking in is broil friendly.
