MOM'S WALNUT BALLS
Mom's Walnut Balls are buttery, tender and absolutely heavenly! These Christmas cookies have been at every family Christmas for decades now. Tried and true, they make the holidays brighter.

Steps:
- Using a good quality chefs knife carefully chop walnuts until 2 cups is achieved. Finely chopped walnuts can also be purchased at the grocery store.
- Preheat oven to 375℉.
- Using a stand mixer or hand held mixer cream together butter, sugar and vanilla until light and fluffy.
- In a separate sized mixing bowl measure and sift flour and salt. Mix well into butter mixture until a soft dough forms. Stir in walnuts.
- Using a teaspoon break apart pieces of dough and then form by rolling between clean hands.
- Bake on ungreased cookie sheet for 12- 15 mins or until lightly golden brown. Using a spatula, remove from cookie sheet and let cool slightly. The cooling helps to prevent crumbling when rolling in powdered sugar.
- Place powdered sugar onto a plate and while cookies are still warm roll in sugar. If desired, roll a second time for an additional coating.

- In a large bowl, combine the first 7 ingredients. Stir in the crackers, walnuts and cheese. Coat hands with cooking spray; shape mixture into 1-in. balls. Place in a 13x9-in. baking dish coated with cooking spray., In a small saucepan, combine sauce ingredients. Bring to a boil. Pour over walnut balls. Bake, uncovered, at 350° for 25 minutes or until a thermometer reads 160°.

WALNUT BALLS
This is an old, old recipe that has been in the family for years. The origin is unknown. Recipe uses very little sugar in it and is rolled in superfine sugar to sweeten.

- Preheat oven to 350 degrees F (180 degrees C).
- Cream the sugar and butter. Add flour, nuts, salt and vanilla. Mix well. Batter will be very crumbly.
- Shape into 1 inch balls. Bake for 15 minutes, remove from oven and allow to cool for 3 minutes. Roll in super fine sugar. When cool, roll again, if desired.

OLD-FASHIONED WALNUT BALLS RECIPE
Steps:
- Gather the ingredients.
- Preheat oven to 375 F. Cream butter, sugar, and vanilla in a stand mixer or with an electric hand beater at medium speed until fluffy; the butter should approximately double in size and turn pale yellow.
- Sift flour and salt together.
- Add it in two or three batches to the creamed mixture; mix gently to incorporate it between each addition. Stir in walnuts.
- Pinch a walnut-size chunk of dough off, roll it into a ball, and place it on an ungreased cookie sheet. Repeat with remaining dough, leaving about 1 inch of space between each ball.
- Bake cookies for 12 to 15 minutes. Transfer walnut balls from cookie sheet to a wire rack using a spatula. Cool for 10 to 15 minutes.
- Roll cooled cookies in sifted confectioners sugar.

- Preheat oven to 325°F
- In large bowl, w/ mixer on medium speed, beat butter, granulated sugar, and vanilla until creamy, occasionally scraping bowl with rubber spatula. Reduce speed to low; gradually beat in flour and salt just until blended, occasionally scraping bowl. Stir in walnuts.
- Shape dough by rounded measuring teaspoons into 1-inch balls. Place balls, 1 inch apart, on ungreased large cookie sheet. Bake cookies 13-15 minutes or until bottoms are lightly browned.
- Place confectioners' sugar in pie plate. While cookies are hot, with metal spatula, transfer 4 or 5 cookies at a time to pie plate with confectioners' sugar. gently turn cookies w/ fork to generously coat with sugar. Transfer cookies to wire rack to cool completely.
- Repeat with remaining dough and confectioners' sugar. Store cookies in tightly covered container at room temperature up to 1 week or in freezer up to 3 months. Dust with additional confectioners' sugar before serving if you like.

MOM'S WALNUT BARS
These are sinfully delicious walnut cookies made with no flour! They can be made at Christmas with little poinsettia's on the top or on Halloween with R.I.P. written on top (we call them 'coffin cookies' when they are made like that). I hope you like them as much as we do! Note: Mom uses lemon, but I like orange better.

- Preheat oven to 200 degrees F (100 degrees C).
- Combine the white sugar, ground walnuts, orange zest, orange juice and 2 egg whites. This mixture will become very sticky and paste-like.
- Form the paste into a long rectangle on a smooth surface sprinkled with sugar so that it won't stick. The rectangle should be about 16 x 4 inches.
- Make the frosting by mixing the remaining egg white with the confectioners' sugar. You don't need to beat the egg white first! You may need to add a little water, or a little more powdered sugar to form a paste that you can easily spread, but that isn't runny.
- Spread the frosting over your rectangle. Use a knife covered with sugar to cut the rectangle into small 1 x 2 inch bars and place them on an ungreased cookie sheet.
- Bake in preheated oven for about 35 minutes or until frosting is hard but still white. Enjoy with a big glass of milk!

CHERRY-WALNUT BALLS
A surprising and delicious filling of maraschino cherries and toasted walnuts makes these sweet bites irresistible. Powdered sugar makes a quick (and delicious) topper. They will be well received as gifts also.

- Preheat oven to 325°F
- Drain maraschino cherries on paper towels; pat dry to remove any excess liquid.
- Set cherries aside.
- Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds.
- Beat in the 1/2 cup powdered sugar, almond extract, and vanilla until combined, scraping side of bowl occasionally.
- Beat in as much flour as you can with the mixer.
- Stir in any remaining flour, nuts, and cherries with a wooden spoon.
- Shape dough into 1-inch balls.
- Place 2 inches apart on ungreased cookie sheets.
- Bake in preheated oven for 18 to 20 minutes or until bottoms are lightly brown.
- Cool 5 minutes on cookie sheets on wire racks.
- Roll warm cookies in powdered sugar to coat and transfer cookies to wire racks and cool completely.
- If desired, roll cooled cookies in additional powdered sugar before serving. Makes about 48 balls.
- *NOTE: To toast nuts, spread them in a single layer in a shallow baking pan. Bake in a preheated 325F oven for 8 to 10 minutes or until nuts are slightly golden brown, stirring once or twice. Cool completely. Chop nuts and set aside.
- TO STORE: Place cookies in layers separated by pieces of waxed paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months. Thaw cookies, if frozen, before serving.
