Categories     Side Dishes

Time 44m

Number Of Ingredients 6

1.5-2 lbs. red potatoes, chopped
1 5.3oz. container non-fat plain Voskos Greek Yogurt
1 head of garlic
2 tablespoons fresh sage, chopped
1 tablespoon extra virgin olive oil, divided
salt & pepper to taste

Steps:

  • Preheat oven to 400 degrees.
  • Cut off the tips of the head of garlic and drizzle with 1/2 tablespoon of the olive oil. Wrap the garlic in aluminum foil and place on a baking sheet in the oven. Roast for about 40 minutes.
  • Meanwhile, place potatoes in a medium pot with cold water and bring to a boil. Reduce heat to a simmer and cook potatoes for about 30 minutes until fork tender.
  • Drain potatoes and place in a large bowl.
  • Add the remaining 1/2 tablespoon of olive oil to a small skillet over medium-high heat.
  • Once hot, add the sage and pan-fry for about 1 minute until aromatic and starting to crisp.
  • Add the fried sage to the potatoes.
  • At this point the garlic should be roasted. Remove from oven and let cool until you can handle it.
  • Squeeze the roasted garlic cloves out into the bowl with the potatoes and sage.
  • Add the Voskos Greek Yogurt and salt & pepper to the bowl.
  • Mash with a potato masher until all ingredients are incorporated into the potatoes but the texture is still "chunky".

ROASTED SMASHED POTATOES

Roasted Smashed Potatoes image

The key to perfect smashed potatoes is completely chilling the parboiled potatoes before smashing, which gives you plenty of time to infuse some butter with garlic and herbs for drizzling over top. Roasted, the potatoes will end up crispy, buttery, and crusty on the outside, with a light, fluffy interior. It's like taking the best parts of home fries, mashed potatoes, French fries, and potato pancakes, and smashing them all together.

Time 9h30m

Yield 16

Number Of Ingredients 8

3 ½ pounds medium yellow potatoes, washed
⅓ cup kosher salt
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ cup unsalted butter
4 cloves garlic, thickly sliced
4 sprigs fresh rosemary, or to taste
4 sprigs fresh thyme, or to taste

Steps:

  • Place potatoes into a 5-quart stockpot and cover with 3 quarts of cold water. Add kosher salt and bring to a simmer over high heat. Reduce heat to medium-low and simmer gently until potatoes are just tender, 15 to 20 minutes. Remove from heat and drain well. Let potatoes cool just until they're safe to handle.
  • Transfer potatoes onto a sheet pan and continue cooling to room temperature. Make 4 or 5 shallow cuts down the sides of each potato, about every inch or so, to ensure the skin splits evenly when smashed. Refrigerate until completely chilled and ready to smash; 8 hours to overnight is best.
  • Combine butter, sliced garlic, rosemary, and thyme in a small pan over medium heat. Cook, stirring occasionally, until butter melts and begins to bubble, and garlic softens and starts to turn translucent, 3 to 5 minutes. Remove from heat.
  • Preheat the oven to 450 degrees F (232 degrees C). Line 2 metal baking sheets with silicone baking mats (such as Silpat®) and generously brush on some of the infused melted butter.
  • Remove potatoes from the fridge and gently smash each between two pieces of plastic using a flat, heavy object until 1/2- to 3/4-inch thick. Season generously with salt, pepper, and cayenne on both sides, being careful not to break potatoes up into small pieces. Transfer onto a sheet pan, being careful not to overlap potatoes. Very generously drizzle and brush most of the melted butter on top.
  • Bake potatoes in the preheated oven until well browned and crunchy around the edges, 35 to 45 minutes.
  • Meanwhile, place the pan with the remaining garlic and herb butter back over medium-low heat. Cook, stirring, until garlic starts to turn a very light golden brown, 3 to 4 minutes. Remove from heat and reserve.
  • Carefully transfer potatoes onto a serving platter and scatter over the golden brown slices of garlic. Crumble the toasted herbs on top if desired. Serve immediately.

SMASHED POTATOES WITH GREEK YOGURT AND SCALLIONS

Smashed Potatoes with Greek Yogurt and Scallions image

Tangy Greek yogurt upgrades these otherwise simple mashed potatoes. Not only does it add protein and calcium, but it's also a probiotic, which is important for gut health.

Provided by Food Network Kitchen

Categories     side-dish

Time 1h5m

Yield 6 servings

Number Of Ingredients 8

2 pounds small, thin-skinned all-purpose potatoes (15 to 20), scrubbed
1 bay leaf
2 tablespoons extra-virgin olive oil
1 bunch scallions (about 6), thinly sliced
2 cloves garlic, grated (about 1/2 teaspoon)
Kosher salt
1 cup full-fat Greek yogurt
Freshly ground black pepper

Steps:

  • Put the potatoes and bay leaf into a medium saucepan, cover with cold water and bring to a simmer. Cook over medium-high heat until fork-tender, 35 to 40 minutes, adjusting the heat as needed to maintain a simmerthe water should not boil. Reserve 1 cup of the potato water; drain the potatoes well, and return them to the saucepan.
  • Meanwhile, heat the oil in a small skillet over medium heat. Reserve 2 tablespoons of the scallions; add the remaining scallions, garlic and 1/4 teaspoon salt to the skillet, and cook, stirring occasionally, until the scallions are tender, about 5 minutes. Turn off the heat, and whisk in 3/4 cup of the yogurt.
  • Add the yogurt mixture, 1/2 cup of the reserved potato water, 1 1/4 teaspoons salt and 1/4 teaspoon pepper to the hot potatoes. Mash with a potato masher until mostly smooth (a few chunks are fine). Stir in additional potato water if you want creamier potatoes. Transfer to a serving dish, dollop the remaining Greek yogurt on top and garnish with the reserved scallions.

Provided by Food Network Kitchen

Categories     side-dish

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 9

2 pounds red-skinned potatoes (about 6)
Kosher salt
1/2 cup extra-virgin olive oil, plus more for drizzling
3 cloves garlic, smashed
2 wide strips lemon zest (removed with a vegetable peeler)
2 sprigs thyme
1 sprig rosemary
Freshly ground pepper
1 tablespoon chopped fresh chives

Steps:

  • Put the potatoes in a large saucepan and cover with cold water by 1 inch. Add a generous pinch of salt, bring to a simmer and cook until the potatoes are easily pierced with a knife, about 40 minutes. Reserve 1/2 cup cooking water, then drain the potatoes and return to the saucepan.
  • Meanwhile, combine the olive oil, garlic, lemon zest, thyme and rosemary in a small saucepan over medium heat. Cook until the garlic starts to sizzle, about 30 seconds. Reduce the heat to medium low and cook until the garlic has softened and browned, 2 to 3 more minutes. Remove from the heat and discard the lemon zest and herb sprigs with a slotted spoon.
  • Add the garlic and oil to the saucepan with the potatoes along with 3/4 teaspoon salt and a few grinds of pepper. Lightly smash with a potato masher, gradually adding the reserved cooking water as needed, until combined. Transfer to a serving dish and drizzle with olive oil; top with the chives just before serving.

Time 1h55m

Yield 12

Number Of Ingredients 10

3 pounds potatoes, peeled and cubed
3 cups hot water
½ cup fresh lemon juice
⅓ cup vegetable oil
1 tablespoon olive oil
1 ½ teaspoons dried oregano
2 teaspoons salt
½ teaspoon ground black pepper
2 cloves garlic, minced
¼ cup chopped fresh parsley

Steps:

  • Preheat oven to 475 degrees F (245 degrees C).
  • Place the cubed potatoes, water, lemon juice, vegetable oil, and olive oil in a 12x18 inch baking dish or roasting pan. Season with oregano, salt, pepper, and garlic.
  • Roast, uncovered, in the preheated oven until the potatoes are tender and golden brown and the water has evaporated, about 1 1/2 hours. Allow the water to evaporate during the final 15 to 20 minutes of cooking, but be careful that the potatoes do not burn. Stir in the chopped fresh parsley, and serve.

  • Wash potatoes, then add them to a large pot and submerge with water. Bring potatoes to a boil, then cover and let simmer for about 20-25 minutes, or until they are fork-tender. Drain potatoes.
  • Preheat your oven to 425F. Next, toss the potatoes in olive oil, salt, and pepper, then spread them out onto a baking sheet.
  • Using a fork, gently "smash" each potato down, making sure not to push your fork all the way through (or else the potatoes will fall apart). Keep a bit of space between each potato, and pop them in the oven for about 20-25 minutes till they get nice and crispy.
  • While the potatoes are in the oven, you can prepare the parsley yogurt sauce. Simply mix plain Greek yogurt, tons of fresh parsley, garlic powder, lemon, salt, and pepper into a food processor, and pulse until combined. Adjust seasonings to taste, and transfer the yogurt sauce into a small bowl.
