ROASTED GARLIC MAC AND CHEESE
Take your homemade mac and cheese to new heights by adding Roasted Garlic. The caramelized hint of the garlic makes this baked mac and cheese truly irresistible!

- Slice the tip off the garlic bulb to expose the cloves, drizzle with olive oil and wrap in foil. Pop in the oven for 45-60mins at 356F/180C or until golden brown and soft as butter.
- Squeeze out the garlic & mash with a pinch of salt to completely smooth it out. Add to a large saucepan over medium heat with 3 tbsp butter and stir to combine. Stir in 3 heaped tbsp flour to form a paste, then very gradually pour in 1litre/4cups milk, whisking as you go to avoid lumps. Important to make sure the sauce thickens before adding the cheese, don't use the cheese to thicken the sauce. If it's watery by the time you add all the milk just rapid simmer until it can coat the back of a spoon, then stir through cheeses (step 4).
- Meanwhile, cook 14oz/400g pasta in salted boiling water until only JUST cooked. You want it still a bit hard. Reserve a cup of starchy pasta water then drain and combine with cheese sauce. Pre heat oven to 200C/390F.
- Once thickened, add 1 tbsp dijon mustard and seasoning (to taste), then stir in 2cups/200g cheddar, 2cups/200g mozzarella and 1/2cup/40g parmesan (other half is to top). It may seem overly stringy at this point, but the small amount of pasta water attached to pasta will smooth it out.
- Add everything to a baking dish, top with 1/2cup/40g parmesan then 1/2cup/30g breadcrumbs. Finish with a pinch of salt & pepper and oil spray. Pop in the oven for 20-25mins or until golden on top. Sprinkle fresh chives over the top and serve.

ROASTED GARLIC MAC AND CHEESE

- Melt the butter in a medium saucepan over medium heat. Add the breadcrumbs and chives, stirring to combine. Cook for 1 to 2 minutes until toasted slightly. Transfer to a small bowl and set aside.
- Preheat the oven to 400ºF.
- Slice the top one-third off the head of garlic. Place the bottom portion on a piece of foil, drizzle it with olive oil, and season it with salt and pepper. Place the top portion back on the head of garlic and crumple the foil to create a sealed packet. Roast the garlic until golden and soft, about 45 minutes.
- Remove the roasted garlic from the oven and squeeze the cloves into a bowl. Using a fork, mashing the cloves into a paste. Set aside.
- Cook the pasta in a large pot of well-salted water until al dente. Drain the pasta, reserving 1/2 cup of the cooking water. Butter a 13x9-inch shallow baking dish.
- In a large, heavy saucepot (such as a Dutch oven), melt 1 stick butter over medium-low heat. Stir in the flour and reserved garlic paste. Cook the roux, stirring constantly, for 3 minutes until golden. Whisk in the milk. Bring the sauce to a boil, whisking constantly, then reduce it to a simmer and let it cook for 3 minutes. Stir in the shredded cheddar cheese, Parmesan cheese, mustard powder, salt and pepper until well combined.
- Add the pasta and the reserved 1/2 cup of pasta water to the pot, stirring to combine. (It will be soupy.) Transfer the macaroni and cheese to the buttered baking dish. Sprinkle it with the reserved crumb topping and place it on a sheet tray (in the event it bubbles over while baking). Bake the macaroni and cheese for 20 to 25 minutes until it's golden brown and bubbling.
- The garlic head can be roasted, and the garlic gloves mashed, 1 day in advance. Store the garlic paste, covered, in the fridge.
- The macaroni and cheese can be baked in a large baking dish or several smaller ramekins for individual servings.

MACARONI AND CHEESE WITH KALE

- Preheat the oven to 425 degrees F. Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 1 3/4 cups of the cooking water and then drain. Set aside.
- Heat 3 tablespoons oil in a large saucepan over medium heat. Add the kale and garlic and cook, stirring, until the kale begins to wilt. Add 1/2 cup of water, 3/4 teaspoon salt and 1/4 teaspoon pepper and continue to cook, stirring occasionally, until the kale wilts and is crisp-tender, about 3 minutes. Transfer to a bowl and set aside.
- Carefully wipe out the saucepan. Bring the half-and-half, cayenne and nutmeg to a simmer over medium heat. Cook until reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in the Cheddar and Havarti cheeses, a handful at a time, until all the cheese is melted and the sauce is smooth.
- Add the cooked pasta and reserved cooking water to the sauce and stir to combine. Stir in the kale and season with additional salt and pepper. Pour into a 13-by-9-inch baking dish. Toss the bread crumbs, remaining 1/4 cup olive oil and a large pinch of salt and pepper in a medium bowl and sprinkle evenly over the macaroni and cheese. Bake until bubbly and lightly browned, about 10 minutes.
HOMEMADE MAC AND CHEESE WITH KALE
A skillet macaroni and cheese made heartier and healthier with homemade kale!

- Clean your kale by rinsing it in cold water and then removing the leaves from the stems. Chop into small pieces.
- Heat olive oil on medium in a cast iron skillet or another large skillet (with a lid). Add onion and garlic and cook for approximately 90 seconds.
- Add kale and coat with oil and mix with garlic and onion. Let saute for another minute, add 1 teaspoon of salt, mix, and then add the stock. Cover and let braise in stock for about 10 minutes, or until most of the stock has cooked off.
- Meanwhile, bring 3 quarts of water to a boil. Add noodles and boil until al dente. Drain and rinse in cold water to prevent sticking.
- When your kale is done, remove from skillet and set aside.
- WIth skillet on medium, add butter and as it melts, add the flour and whisk to create a roux.
- Slowly add the milk, 1 cup at a time, and whisk it to incorporate it all before adding more milk and half and half.
- Let the sauce cook, whisking constantly to prevent from burning, until it begins to thicken. Add cheese, 1 cup at a time, and whisk to combine. Reduce to medium-low.
- Let the sauce thicken and then start adding the cheese, a handful at a time, whisking until it is all fully melted before adding more cheese. Repeat for 2 cups of cheese.
- Once cheese sauce is thickened, add 1/2 teaspoon salt, pepper, and mustard and mix. Add kale and mix well. This will ensure that the kale is more evenly distributed in the dish.
- Once the kale is well mixed in, then add the cooked pasta and mix well.
- This is where you can stop and set aside if preparing in advance. Or you can serve it now, as is. Otherwise, pre-heat oven to broil and set rack to top third.
- Add last 1/2 to 1 cup of cheese to the top of skillet and add to oven to melt and crisp up cheese for 3-5 minutes.
- Serve and enjoy!

- Heat the olive oil in a large, wide pot or a very large, deep skillet over medium-high, then add the onion, kale and ½ teaspoon salt and cook, stirring occasionally, until the kale has cooked down and the onion is smaller in size, 4 to 5 minutes.
- Add the garlic and tomato paste and cook, stirring often, until the paste darkens slightly, 1 to 3 minutes.
- Add the sausage and cook, breaking the meat into small pieces, until it loses its pink color, 4 to 5 minutes.
- Add the red-pepper flakes, sprinkle with salt and give everything a good stir. Add the chicken broth and pasta and stir to combine. Bring the liquid to a boil, then reduce the heat to low, place a lid on the pan and cook until the pasta is soft but still has some bite to it, about 10 minutes. Be sure to check on the pasta and stir every now and again. (The sauce will have thickened from the starch in the pasta.)
- Add the cheese and hot sauce and mix well. Add salt and additional hot sauce to taste before serving.
ROASTED GARLIC MAC AND CHEESE WITH SAUSAGE AND KALE

- Pre-heat oven to 400 degrees.
- Peel away the outer layers of garlic skin, making sure the cloves remain intact. Cut about 1/4 inch off the top of each head, so the cloves are exposed. Place heads of garlic in a muffin tin.
- Drizzle some olive oil over the tops, making sure it's rubbed into the cloves. And then wrap the tops with aluminum foil.
- Bake for 30-35 minutes, until the cloves get soft and are very fragrant. Remove garlic from oven, but keep oven on for mac and cheese.
- Once the garlic has cooled enough that you can touch it, pull the cloves out of the skin. Place cloves in a bowl and mash them with a fork. Set aside.
- Bring a large pot of salted water to a boil. Add pasta and boil until al dente. Drain pasta and keep pasta in colander so you can use pot for the cheese sauce.
- While pasta is boiling, cook sausage in a medium skillet over medium heat until it's cooked through. Remove from skillet to small bowl and set aside.
- Melt butter in the pot you cooked the pasta in over medium heat. Once melted, pour 2 Tbsp into a small bowl and set aside (this will be for the panko topping).
- Add flour and mustard powder to the remaining melted butter in the pot and whisk for a minute, without letting the flour darken. Whisk in milk and bring the mixture just to a boil, before reducing heat to medium-low and letting simmer for 2-3 minutes while sauce thickens.
- Remove saucepan from the heat and whisk in both cheeses and the smashed roasted garlic. Sprinkle with 1/4 tsp salt and 1/4 tsp pepper.
- Pour cheese sauce over cooked pasta in pot. Mix in sausage and kale.
- Put pasta mixture into a 9x11 baking dish.
- Add panko and 1/4 tsp sat to the bowl with the reserved butte and stir together. Evenly sprinkle over mac and cheese.
- Place in pre-heated oven for about 15-20 minutes, until the panko browns and gets crispy. Remove from oven and serve hot.
