HOW TO ROAST GARLIC
Roasting garlic couldn't be easier. You'll love the mellow, rich flavor so much you'll be popping cloves straight into your mouth!

- Preheat oven to 400F.
- Cut the top 1/2 inch from garlic bulb (straight across the top so you cut into just the tops of the cloves). Place garlic bulb in a ramekin, drizzle with olive oil and cover with foil.
- Roast for 30-40 minutes or until garlic is very soft and lightly browned. Remove from oven and allow to cool.
- Squeeze the garlic out of its skin and into a small dish. Mash with a fork and use as desired.

GARLIC NOODLES
These deceivingly simple, yet devastatingly delicious garlic noodles were invented back in the '70s at a restaurant in San Francisco called Thanh Long. Usually served with roasted Dungeness crab, the recipe is a very closely guarded family secret, but after lots of investigation, and even more experimentation, I think this is very close.

Steps:
- Stir soy sauce, oyster sauce, Worcestershire sauce, fish sauce, sesame oil, and cayenne pepper together in a small bowl for the secret sauce.
- Place secret sauce near the stove. Place garlic, butter, Parmesan cheese, and green onion in individual bowls within easy reach.
- Melt butter in a skillet over medium heat. Add garlic; cook and stir just until fragrant, about 1 minute. Quickly stir in the secret sauce and turn off the heat.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet slightly firm to the bite, about 12 minutes.
- Transfer spaghetti into the sauce using tongs, bringing some of the cooking water with it. Toss until well coated and stir in Parmesan cheese. Splash in more pasta water if noodles are too dry.
- Plate noodles. Garnish with red pepper flakes and green onions.

ROASTED GARLIC POLENTA CAKES
Old school, but delicious. Polenta cakes have been around for ages and there is a reason for that. They are simple, inexpensive and very satisfying. The possibilities are endless with how you can flavour them and they compliment many dishes.

Steps:
- Line a casserole dish with plastic wrap and set aside.
- 2. Preheat a large heavy bottom pot on medium-low heat. Add the butter, onion and garlic and sauté until nicely browned, stirring occasionally.
- Once brown, add the milk and water and turn the heat up to bring to a boil. Keep a close eye on the pot as milk loves to boil over and make a huge mess.
- Just as the milk reaches a boil, reduce heat to medium-low again and using a whisk, slowly stir in the corn meal. Make sure the corn meal is evenly distributed and there is no clumping.
- Season with salt, cumin and paprika and then cook for about 15 minutes. Make sure to give a good stir with a wooden spoon every 5 minutes or so and check that its not burning on the bottom.
- Once the polenta is soft and cooked, its time to stir in the parmesan cheese. Go with fresh grated Parmesano Reggiano if you can.
- Now pour the warm polenta into the plastic lined casserole dish and spread out and compact in an even layer with a wet spatula (so it does not stick) and place in the fridge to cool.
- After 2 hours or so, you can remove the polenta from the dish by lifting the plastic wrap. Place on a cutting board and cut into desired shape. Square, rectangle, circle with a cookie cutter, half moon etc.
- Fry cakes until warm and browned with a little butter in a preheated fry pan on medium heat. Serve as an appy or as part of dinner.
MIDNIGHT PASTA WITH ROASTED GARLIC, OLIVE OIL AND CHILE
This recipe is a version of aglio e olio pasta, which is often known as midnight pasta because it can be made quickly with a few pantry staples: garlic, olive oil, red-pepper flakes and pasta. This recipe takes a bit more time because it calls for roasting the garlic first, but doing so adds a complex, mellow flavor to the entire dish. If you're a planner, you could even roast a couple of heads of garlic in advance. (Roasted garlic will keep in an airtight container in the refrigerator for up to two weeks and in the freezer for up to two months.) Add whatever vegetables or proteins look good to you.

- Heat the oven to 400 degrees. Cut off the top 1/4 inch of the head of garlic to expose the top of the cloves, then place on a piece of foil, cut-side up. Sprinkle exposed cloves with salt, then drizzle with 1 teaspoon oil. Wrap the garlic in the foil and roast until soft and golden brown, 40 to 50 minutes.
- When you're ready to make the pasta, bring a large pot of salted water to a boil. Finely chop the parsley leaves. Add pasta to the boiling water and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta.
- While the pasta cooks, in a large Dutch oven or skillet, heat the remaining 1/2 cup oil over medium heat. Squeeze the roasted garlic cloves into the oil and cook, breaking them up with your spoon, until very fragrant, 2 to 3 minutes. Add the red-pepper flakes and a few generous grinds of pepper. Remove the pan from the heat to infuse the oil while the pasta finishes cooking.
- When the pasta's done, heat the garlic oil over medium, then add the cooked pasta, 1/2 cup reserved pasta water and the parsley, and simmer, tossing constantly and adding more pasta water as needed, until the pasta is glossed with sauce.
- Serve with more red-pepper flakes, black pepper and Parmesan.
ROASTED GARLIC
Roasted garlic is great served with bread, crackers or apples. People can peel off a clove of the garlic and literally squeeze the garlic out of it's shell onto their bread or cracker. Delicious!

ROASTED GARLIC NOODLE CAKE
This amazingly flavorful dinner cake came to The Times from Allen Susser, a Florida chef. It's an Americanized and sweetly garlicky version of noodle kugel. With white and green fettuccine, it makes a festive spring or holiday presentation, rich and firm, that can hold its own at the center of the table.

- Preheat oven to 350 degrees. Place garlic in a small baking dish. Drizzle with 1 tablespoon of the olive oil. Cover with foil and bake until garlic is very soft, about 1 hour. Squeeze the garlic from the skins and set aside.
- Heat 1 tablespoon of the olive oil in a small skillet. Add shallots and saute until they begin to caramelize, about 3 minutes. Set aside.
- Cook the spinach and white fettuccines separately in salted water until tender but firm. Drain and place each in a separate large bowl. Whisk together the roasted garlic, 1 teaspoon of the salt, 1/2 teaspoon of the white pepper, thyme, nutmeg, 1 1/2 cups of the half-and-half and 4 of the eggs. Pour over the white fettuccine and mix well. Whisk together the shallots, 1 teaspoon salt, 1/4 teaspoon white pepper, 1/2 cup half-and-half and 2 eggs. Pour over the spinach fettuccine and mix well.
- Grease a 10-inch round springform pan with the remaining tablespoon olive oil. Coat the pan with the Parmesan. Place half of the white fettuccine mixture in the bottom of the pan. Top with the spinach fettuccine mixture. Cover with the remaining white fettuccine mixture. Cover the pan with aluminum foil. Bake for 45 minutes. Let rest for 5 minutes. Run a small knife around the edge of the pan to loosen. Unmold, cut into wedges and serve.

- Loosen the yakisoba noodles in a large pan.
- In a large sauté pan (non-stick preferably), add the cooking oil, cook in medium heat.
- Add the fresh garlic, about 10 seconds, add the granulated garlic.
- Add the noodles right away, then, add the chicken broth.
- Stir the noodles around to blend with the garlic mix.
- Add the soy sauce, and then the fish sauce.
- Stir constantly but be careful not to break the noodles apart.
- Cook until noodles are smooth and coated (about 10 minutes).
- Add the oyster sauce and stir about 5 more minutes.
- Serve plain or with any of the toppings mentioned above.

GARLIC NOODLES WITH VEGETABLES (CHEESECAKE FACTORY STYLE/COPYCAT

- Prep the vegetables as described in the ingredients section.
- Heat a pot of water, add salt and a couple of drops of EVOO and boil the spaghettini till aldente! About 7-8 mins (Do not overcook! ).
- At about 6 minutes add the broccoli florets to the pasta and let it cook.
- In the meanwhile when the noodles are cooking, heat the oil and butter in a large pan, add minced garlic and saute. Add the asparagus and mushrooms and saute for 3-5 mins.
- Drain pasta and broccoli into a colander.
- Add the pasta and broccoli to the pan, toss in the chopped fresh tomatoes, add salt and pepper and mix well.
- Transfer to a serving dish and sprinkle grated parmesan.
