1 cup low-fat buttermilk
1 tablespoon chopped fresh rosemary
Coarse salt and ground pepper
4 boneless, skinless chicken breast halves, (6 to 8 ounces each)
Vegetable oil, for grates

Steps:

  • In a large bowl, combine buttermilk, rosemary, 1 teaspoon salt, and teaspoon pepper. Add chicken to marinade, turning to coat. Marinate at room temperature for 30 minutes (or refrigerate, up to overnight).
  • Heat grill to medium; lightly oil grates. Lift chicken from marinade, shaking off excess; discard marinade. Grill until an instant-read thermometer inserted in thickest part of chicken registers 165 degrees, 5 to 8 minutes per side. Remove from grill. Tent loosely with aluminum foil; let rest 5 minutes before serving.

4 boneless, skinless chicken breasts
2 cups buttermilk
2 cups crushed herb-seasoned stuffing mix
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper
1 egg
1 tablespoon water
2 tablespoons peanut oil

Steps:

  • Place chicken breasts and buttermilk into a large resealable plastic bag, knead several times to coat chicken with buttermilk, and squeeze air from the bag. Seal and refrigerate at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Placed crushed herb-seasoned stuffing mix into a shallow bowl. Mix flour, salt, and black pepper in a separate flat dish. Beat egg with water in a bowl. Pour peanut oil into the bottom of a 9x13-inch baking pan.
  • Remove chicken from buttermilk, shake off excess buttermilk, and discard used buttermilk marinade. Dredge chicken breasts in seasoned flour. Dip each floured breast in egg, then press gently into stuffing mix to coat. Place coated chicken breasts into the pan with peanut oil.
  • Bake in the preheated oven for 25 minutes. Turn each chicken breast over and continue baking until chicken pieces are no longer pink inside and the coating is crisp, about 25 more minutes.

1 roasting chicken (5 to 6 pounds)
1/2 cup unsalted butter, softened, divided
1 cup chicken broth
3/4 cup orange juice
1/2 cup white wine or additional chicken broth
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
2 fresh rosemary sprigs
2 fresh thyme sprigs
2 fresh sage sprigs

Steps:

  • Preheat oven to 350°. With fingers, carefully loosen skin from chicken; rub 1/4 cup butter under skin. Secure skin to underside of breast with toothpicks. Place chicken on a rack in a shallow roasting pan, breast side up. Tuck wings under chicken; tie drumsticks together. Pour broth around chicken., Melt remaining 1/4 cup butter; brush over chicken. Drizzle with orange juice and wine. Combine garlic, salt and pepper; rub over skin. Place rosemary, thyme and sage in roasting pan. , Roast until thermometer inserted in thickest part of thigh reads 170°-175°, 1-1/2 to 2 hours (Cover loosely with foil if chicken browns too quickly.) Remove chicken from oven; tent with foil. Let stand 15 minutes before carving; remove toothpicks. If desired, skim fat and thicken pan drippings for gravy. Serve with chicken.

2 pounds boneless, skinless chicken breast, pounded to even thickness, cut into strips
2 cups whole wheat breadcrumbs
Olive oil, for drizzling
1/3 cup buttermilk
3 tablespoons 2% Greek yogurt
1 tablespoons chives, minced
1/4 teaspoon kosher salt
1 tablespoon blue cheese, crumbled (optional)
4 stalks celery, cut into sticks
2 romaine hearts, quartered
Hot sauce to taste

Steps:

  • Heat oven to 400 degrees. Line a baking sheet with a wire rack. Combine buttermilk, mustard, salt, and cayenne in a nonreactive dish. Dip chicken in mixture and transfer to dish with breadcrumbs, pressing to coat. Transfer to baking sheet. Drizzle with oil. Bake until golden and chicken is cooked through, about 16 minutes. 1 tablespoon fresh parsley, chopped
1 tablespoon fresh thyme leave
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1 (20 ounce) package boneless skinless chicken breast halves
1/3 cup buttermilk
1/3 cup butter

Steps:

  • Combine all coating ingredients in 9-inch pie pan. Dip chicken in buttermilk, then in coating mixture.
  • Melt butter in 12-inch skillet until sizzling; add chicken. Cook over medium-high heat, turning occasionally, until chicken is golden brown and fork tender (20 to 25 minutes).
  • Buttermilk Substitute: Use 1 teaspoon vinegar or lemon juice plus enough milk to equal 1/3 cup. Let stand 10 minutes.
  • TIP: If chicken breasts are too thick, pound them to 1/2-inch thickness using a meat mallet.
  • TIP: Reduce heat if chicken browns too quickly.

¼ cup salted butter, melted
1 ½ cups buttermilk, divided
¾ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
6 bone-in chicken breast halves, skinned
1 (10.5 ounce) can condensed cream of mushroom soup

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Pour melted butter into a 9x13-inch baking pan.
  • Place 1/2 cup buttermilk in a shallow bowl. Combine flour, salt, and pepper in a second shallow bowl. Dip each chicken breast in buttermilk, roll in the flour mixture, then place breast-side down in the prepared pan.
  • Bake, uncovered, in the preheated oven for 30 minutes. Turn chicken and bake for 15 more minutes.
  • Meanwhile, mix remaining buttermilk with condensed soup.
