CHEESY GARLIC SCALLOPED POTATOES
They are rich, but oh so good! You can vary the cheeses according to taste and add onions, too. I originally got the recipe from AllRecipes, but I have altered a couple of things that helped the recipe we believe. It is a family favorite!

Steps:
- Preheat the oven to 350 degrees F (165 degrees C).
- Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
- Layer half of the potato slices in the bottom of the casserole dish.
- Dot with half of the butter cut or pinched into small pieces.
- Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over.
- Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, butter, garlic, cream and Cheddar cheese, then top with the slices of provolone cheese.
- Season again with salt and pepper. Cover with foil that the underside has been sprayed with cooking spray.
- Bake for 1 hour in the preheated oven, then sprinkle the Parmesan or Romano cheese over the top.
- This will create a semi-hard cheese crust. Continue baking uncovered for another 30 minutes, or until potatoes are tender when tested with a fork.

Steps:
- Preheat oven to 450 degrees.
- clean, peel and slice potatoes.
- layer in a glass casserole dish.
- chop garlic and onions and add on top.
- add butter on tablespoons all over (dont melt oven will do that for you).
- cover with foil
- bake 30-45 minutes at 400 degrees or until reaches desired tenderness when poked with fork.
- after the potatoes are done to the desired tenderness uncover and add cheese ( less or more that I do).
- bake at 350 degrees until cheese is lightly browned.
- ENJOY !

- Peel the potatoes, and cut into 5-7 mm (¼ inch) thick slices (I do this using the food processor).
- Rinse and drain the potato slices and transfer to a bowl with the garlic, rosemary and oil. Use your hands to mix everything together very thoroughly, so that each slice is coated with the oily mixture.
- Arrange the potato slices on their sides in a 20 cm (8 inch) round baking dish. Pour the hot stock over the top, then microwave on high for 10 minutes. (The dish can be set aside at this point and baked later on.)

- Preheat oven to 350 degrees. To roast your garlic, slice off the very top (opposite the root end) of the head of garlic. Place the head of garlic on a square of tin foil, and drizzle with olive oil. Season with salt and pepper. Gather the sides of the foil and loosely wrap the garlic up in a little foil packet. Place the packet on a baking sheet and place it in the oven. Bake for 1 hour, then remove it from the packet and then set it aside and let it cool for a bit.
- Peel and slice your potatoes and then place them evenly in a greased 9 by 9 inch baking dish. Set aside while you make the white sauce.
- In a medium pan, melt butter over medium high heat. Sprinkle the flour over the butter, and cook for a few minutes stirring constantly. Whisk as you pour the milk into the pan, and bring to a gentle boil, stirring occasionally. Reduce heat to medium and allow the sauce to thicken slightly, stirring occasionally.
- Squeeze the garlic out of the skin into a small bowl and mash it into a paste. Add the roasted garlic to the white sauce, along with the heavy cream, salt, nutmeg and pepper.
