CREAMY GRITS WITH ROASTED POBLANOS



Creamy Grits with Roasted Poblanos image

Grits, most often enjoyed at breakfast in the South, also make a creamy, luscious alternative to mashed potatoes for dinner.

3 fresh poblano peppers*
2 14.5 ounce cans reduced-sodium chicken broth
2.5 cup water
1.5 cup regular hominy grits
0.25 teaspoon salt
0.125 teaspoon ground black pepper
2 cup shredded aged cheddar cheese (8 ounces)
Milk

Steps:

  • Preheat oven to 425°. Line a baking sheet with foil; set aside. Halve peppers lengthwise; remove stems, seeds, and membranes. Place peppers, cut sides down, on prepared baking sheet. Bake for 20 to 25 minutes or until charred. Bring foil up around peppers to enclose. Let stand for about 15 minutes or until cool. Use a sharp knife to loosen edges of the skins; gently pull off and discard skins. Cut peppers into 2-inch long, 1/4-inch-wide strips.
  • In a 3-1/2- or 4-quart slow cooker combine peppers, broth, the water, grits, salt, and pepper.
  • Cover and cook on low-heat setting for 3 to 3-1/2 hours or on high-heat setting for 1-1/2 to 1-3/4 hours or until a small amount of liquid is visible on top of grits.
  • To serve, stir 1-1/2 cups of the cheese into the cooked grits; stir until cheese is melted. If grits become too thick, thin mixture with milk to desired consistency. Top each serving with some of the remaining 1/2 cup cheese.

Horseradish Cheese Grits with Confetti of Roasted Poblano Peppers and Red Onions image

In the South, grits are served every way from here to Sunday and are as sacred as good manners and sweet tea. The mildness and gritty, nurturing texture render them an idyllic backdrop for shrimp, tomatoes, sausage-you name it! I love the way the pungency of horseradish plays along with the grits, the smoky heat of roasted poblano peppers, and the sweetness of red onions in this versatile and easy-to-prepare side dish. Roasting is a great way to cut back a bit on any pepper's pungency while stepping up its sweetness.

Number Of Ingredients 10

3 cups whole milk
3/4 teaspoon salt
1/4 teaspoon ground pepper
3/4 cup stone-ground grits (yellow, white, or a blend)
2 poblano peppers
1 tablespoon olive oil
1/2 large red onion, thinly sliced
Salt and freshly ground pepper
3/4 cup grated aged white cheddar cheese
2 tablespoons prepared horseradish

Steps:

  • Bring milk, salt, and pepper to a boil in a medium saucepan. Pour in grits and whisk vigorously to blend. Reduce heat to medium-low and continue cooking, stirring every 1 to 2 minutes until thickened, about 40 to 45 minutes, adding more liquid (water or milk) as needed.
  • Meanwhile, heat the broiler (or flame grill) to high. Place the peppers directly under the hot broiler (or on the hot flames) and cook, turning occasionally, until blistered and blackened on all surfaces, about 3 to 5 minutes for each exposed surface; set aside to cool. Once cooled, run the peppers under a stream of cool water and pull off the blackened skin, seeds, and stem and discard. Stack the roasted pepper flesh and cut into thin, 1/4-inch-wide, 2-inch-long strips; set aside.
  • In a medium skillet, heat the oil over medium-low heat. Add the onion, salt, and pepper, and cook, stirring occasionally, until softened and lightly browned, about 20 minutes.
  • To finish, stir the cheese into the cooked grits until melted. Gently fold in the horseradish, roasted pepper, and sautéed onions. Taste and adjust seasonings if necessary. Serve immediately or keep warm for up to 3 hours over a gently simmering water bath.

ROASTED YELLOW PEPPER GRITS AND ROASTED POBLANO SAUCE

3 large yellow peppers
4 tablespoons olive oil
2 (16 ounce) cans hominy, drained
1 tablespoon unsalted butter
1 large Spanish onion, finely chopped
Salt and pepper
Salt and pepper
3 gloves garlic, finely chopped
1 tablespoon chipotle puree
1 cup heavy cream
1/2 cup grated white Cheddar
Poblano Pepper Sauce, recipe follows
3 poblano peppers, roasted, peeled, seeded and chopped
1/4 cup red wine vinegar
3 tablespoons chopped cilantro leaves
2 tablespoons honey
Salt and freshly ground pepper
1/2 cup olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Rub the pepper with 2 tablespoons of the oil and place on a baking sheet. Roast in the oven until soft and skin is blackened. Place the peppers in a medium bowl, cover with plastic wrap and let sit for 15 minutes. Remove the skin and seeds from the peppers. Place 2 of the peppers in a food processor and process until smooth. Cut the remaining pepper into fine dice and set aside.
  • Place the hominy in a food processor and process until smooth. Heat the remaining 2 tablespoons of oil and butter in a medium saucepan over medium heat. Add the onions, season with salt and pepper, and cook until soft. Add the garlic and cook for an additional 2 minutes. Add the hominy, yellow pepper puree, and heavy cream. Season with salt, pepper, and chipotle puree. Cook for 10 minutes and fold in the diced yellow peppers and Cheddar. Serve with Poblano Pepper Sauce.
  • Place peppers, vinegar, cilantro and honey in a blender and season with salt and pepper.
  • Blend until smooth. With the motor running, slowly add the olive oil until emulsified.

LOUISIANA GRILLED SHRIMP WITH CHEDDAR CHEESE POBLANO GRIT CAKES, ROUILLE AND PEPPER JELLY



Louisiana Grilled Shrimp with Cheddar Cheese Poblano Grit Cakes, Rouille and Pepper Jelly image

2 poblano peppers
1 pound Cheddar cheese, grated
6 cups grits, cooked to package directions
Flour
Egg wash
Fresh bread crumbs for breading cakes
2 red bell peppers, diced very finely
1 tablespoon peanut oil, plus oil for frying cakes
4 tablespoons Grand Marnier
2 cups Karo, light corn syrup
2 to 4 anchovy fillets, to taste
1 tablespoon capers
1/4 teaspoon harissa or Chinese red pepper sauce
1 tablespoon chopped garlic
1 large lemon, juiced
1 cup homemade mayonnaise (commercial can be substituted, but use reduced sugar type to avoid too much sweetness)
12 U-12 shrimp (jumbo, the bigger the better)
3 tablespoons sliced scallion tops

Steps:

  • For the Grit Cakes: Roast one poblano pepper over open flame on gas stove until completely charred, then cool and dice. Add pepper and cheese to grits. Stir to incorporate and spread in pan approximately 2- to 3-inches thick. Let sit and refrigerate until it is cold. Remove from refrigerator and cut with biscuit cutter to create cakes. Bread the cakes in flour, egg wash and bread crumbs. Keep in refrigerator until you are ready to cook the dish.
  • For the Pepper Jelly: Saute diced red peppers and remaining 1 poblano in 1 tablespoon peanut oil for 1 minute. Deglaze with Grand Marnier and add Karo syrup. Cook at moderate heat approximately 20 minutes, liquid should reduce by 2/3. Remove from heat and cool slightly.
  • For the Rouille: Combine anchovies, capers, pepper sauce, garlic and lemon juice in a blender until smooth. Fold in mayonnaise and refrigerate.
  • For plating: Deep fry the cakes. Place pepper jelly on the bottom of the plate. Grill shrimp only until firm and pink. Do not overcook. Briefly place fried cake on grill to score and flavor, being careful not to burn breading. Place cake on pepper jelly and top with 2 shrimp per person. Drizzle rouille on top and sprinkle with scallions.

Roasted poblanos and melted cheese are the foundation of the chile relleno. This recipe combines elements of that classic dish with the ease of a grilled cheese sandwich.

1 large or 2 small poblano chiles
2 portobello mushroom caps, thinly sliced, gills removed, optional
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
Eight 1/3- to 1/2-inch-thick slices Cuban sandwich bread, sliced on the diagonal
8 slices Monterey Jack cheese (about 6 ounces)
1 tablespoon chipotle in adobo puree
6 tablespoons unsalted butter, softened

Steps:

  • Roast the poblano over an open flame or under the broiler until charred all over, turning as necessary, about 8 minutes. Place in a bowl and cover with plastic wrap to steam and loosen the skin, about 5 minutes. When cooled, peel off the blackened outer skin. Slice into thin strips, and then into 1-inch pieces.
  • Cook the mushrooms in a medium skillet over medium-high heat with the olive oil. When almost softened, about 3 minutes, season with salt and pepper. Reserve.
  • Lay out 4 slices of the bread on a work surface. Layer each with 1 slice of cheese, about 1 tablespoon of the chopped poblanos, 1 tablespoon of the mushrooms and another slice of cheese. Brush a thin layer of chipotle in adobo sauce on the underside of the remaining bread and close the sandwiches. Thinly and evenly spread the butter on both sides of the bread using about 1 1/2 tablespoons of the butter for each sandwich.
  • Place 2 sandwiches into a medium skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches.

2 tablespoons olive oil

Roasted Poblano Sauce, recipe follows
3 large yellow peppers
4 tablespoons olive oil
1 tablespoon unsalted butter
1 large Spanish onion, finely chopped
3 cloves garlic, finely chopped
1 tablespoon chipotle puree
2 (16 ounce) cans hominy, drained
1 cup heavy cream
1/2 cup grated white Cheddar
3 poblano peppers, roasted, peeled, seeded and chopped
1/4 cup red wine vinegar
3 tablespoons chopped cilantro
2 tablespoons honey
Salt and freshly ground pepper
1/2 cup olive oil

Steps:

  • Brush bass with olive oil on both sides and season with salt and pepper. Heat saute pan or grill pan over high heat until smoking. Grill, skin side down, for 3 to 4 minutes or until golden brown. Turn over and continue cooking for 2 to 3 minutes for medium-well doneness. Place a heaping mound of Yellow Pepper Grits onto 4 dinner plates. Place a fillet on top of each and drizzle with the Poblano Sauce.
  • Preheat oven to 400 degrees F.
  • Rub the pepper with 2 tablespoons of the oil and place on a baking sheet. Roast in the oven until soft and skin is blackened. Add the onions, season with salt and pepper, and cook until soft. Add the garlic and cook for an additional 2 minutes. Add the hominy, yellow pepper puree, and heavy cream. Season with salt, pepper, and chipotle puree. Cook for 10 minutes and fold in the diced yellow peppers and cheddar.
  • Place peppers, vinegar, cilantro and honey in a blender and season with salt and pepper. Blend until smooth. With the motor running, slowly add the olive oil until emulsified.
