Our vegetarian tray bake packs in plenty of seasonal veg and salty halloumi for a vibrant summer dinner ready in 30 minutes

4 courgettes, cut into small chunks
1 red onion, cut into slim wedges
3 large cloves garlic, skins left on
3 tbsp olive oil
300g cherry tomatoes
250g halloumi, sliced
¼ tsp cumin seeds
a few pinches dried chilli flakes (optional)
flatbreads, to serve
hummus and hot sauce, to serve

Steps:

  • Heat the oven to 200C/fan 180C/gas 6. Toss the courgettes, onion and garlic with the olive oil, and tip into a large, shallow baking dish. Season well and roast for 10 minutes.
  • Stir in the cherry tomatoes and sit the halloumi slices on top. Sprinkle over the cumin seeds and chilli flakes, if using. Cook for another 15 minutes until the tomatoes start to burst and release juice, and the halloumi is turning golden.
  • Squeeze the garlic cloves out of their skins and mash into the oil and juices in the baking dish, stirring it in. Spoon everything onto plates and serve with soft flatbreads and hummus or hot sauce, if you like.

750g baby new potatoes , halved
2 medium red onions , quartered and broken up into large pieces
4 tbsp olive oil
400g can chickpeas , drained
1 large red pepper , sliced into strips
½ romanesco broccoli or cauliflower (about 400g), cut into small florets
250g mixed colour cherry tomatoes
4 garlic cloves , peeled
250g pack reduced fat halloumi , thinly sliced
small bunch basil , leaves torn

Steps:

  • Heat oven to 160C/140C fan/gas 3. Put the potatoes in a large roasting tin with the onion. Pour over 2 tbsp olive oil and roast in the oven for about 30 mins.
  • Add the chickpeas, pepper, romanesco, tomatoes and garlic. Drizzle with 2 tbsp oil, then roast for a further 20-25 mins until everything is cooked and browning nicely. Toss together briefly and put the halloumi slices on top. Put it under the grill for 5-10 mins, or until the cheese is melting and browning (keep an eye on it). Scatter over the basil leaves to serve.

Make this all-in-one, meat-free veg and halloumi dinner when you want something simple but hearty. Bursting with flavour, it's sure to be a crowd-pleaser

2 large Romano peppers, quartered
2 courgettes, cut into 1cm rounds
2 red onions, cut into wedges
1 tbsp rapeseed oil
200g cherry tomatoes on the vine
1 tbsp ras el hanout
2 tsp dried oregano
1 tbsp rose harissa
1 preserved lemon, peel thinly sliced, pith removed
400g can chickpeas, drained
220g block of lighter halloumi
½ small bunch of parsley, finely chopped
fat-free yogurt, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Toss the peppers, courgettes and red onion wedges together in a roasting tin along with the rapeseed oil, and roast for 15 mins. Tip in the cherry tomatoes, ras el hanout, oregano, harissa, preserved lemon and chickpeas, and toss to combine. Cut deep slits into the top of the halloumi, about halfway down, in a criss-cross pattern. Nestle the halloumi among the veg in the tin and roast for a further 15-20 mins until the cheese is lightly golden and the veg is tender.
  • Scatter over the parsley, then drizzle over some yogurt just before serving.

Roasted Vegetables With Chickpeas image

This is delicious served with pasta, couscous or rice. To what was leftover I added more stock and pasta to make some soup. You will need a large baking tray. If you don't have one large tray, use two and put the peppers together with the tomatoes on a separate one. It is difficult to give the right measure of stock, it will depend on the size of vegetables used and personal liking for the thickness of the vegetable mix. When serving it with pasta crumbled feta or grated parmesan goes well with it.

12 ounces eggplants, approx, cubed
1 yellow bell pepper, deseeded and halved
1 red bell pepper, deseeded and halved
6 -8 garlic cloves, peeled left whole
4 ounces green beans, cut in pieces
5 tomatoes, halved
1 onion, cut in chunks
1 teaspoon dried oregano or 1 teaspoon dried thyme
salt and pepper
5 -6 tablespoons olive oil
2 -3 cups vegetable stock
2 cups chickpeas (cooked)
1 cup fresh parsley, chopped

Steps:

  • Preheat oven to 375°F.
  • In a large bowl mix all the cut up vegetables with oregano, salt, pepper and the olive oil.
  • Transfer to the baking tray, peppers and tomatoes cut side down.
  • Roast for 30 to 40 minutes, until darkened at the edges; give them a gentle stir now and then.
  • Remove from the oven, when cool enough to handle, remove the skins from the peppers and tomatoes, and cut them up roughly.
  • Put the vegetables in a pan together with 2 cups of stock and the chickpeas.
  • Bring to a boil and simmer for 20 minutes, stir and gently mash down some of the vegetables with the back of a soup ladle.
  • Check seasoning, stir in the parsley and serve!
