Rolo Cookie Bars are a delicious dessert for any occasion. This recipe is both delicious and super easy to make!

1 cup butter (softened)
1 1/4 cup packed brown sugar
2 eggs
2 tbsp milk
1 3/4 cup all-purpose flour
2 tsp vanilla
1 tsp baking soda
1/2 tsp salt
2 1/2 cups old fashioned oats
1 cup semi-sweet chocolate chips
1 cup Rolo Bites candy (already unwrapped)
Optional: 1 cup chopped pecans

Steps:

  • Preheat oven to 375ºF.
  • Prepare a 9x13 baking dish by lining it with parchment paper. If necessary, foil can be used, but it must be sprayed with cooking spray.
  • Mix together (using a stand mixer or by hand) the butter, brown sugar, and eggs.
  • Mix in the milk, vanilla, flour, baking soda, salt, and oats.
  • Stir in the chocolate chips, Rolos, and pecans.
  • Spread the dough in the prepared baking dish.
  • Bake for approximately 20-25 minutes.
  • The edges should be set and golden brown, and the tops of the bars should look mostly "dry."
  • Allow to cool for at least 10 minutes before cutting.

You will love these delicious chocolate chip cookie bars loaded with a rolo center.

Number Of Ingredients 11

1 cup butter (softened to room temp)
1 1/2 cups brown sugar
1/2 cup sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 (12 ounce) package milk chocolate chips
77 Rolo candies (roughly eighteen ounces)

Steps:

  • Heat oven to 350 degrees F.
  • Cream together softened butter, brown sugar, and sugar until light and fluffy.
  • Beat in eggs and vanilla.
  • Mix in flour, baking soda, baking powder and salt until well blended.
  • Add in chocolate chips.
  • Chill dough for about 20 minutes.
  • Grease a 9 x 13 inch pan (I used a glass pan)
  • Spread half of the dough to cover the bottom of the pan. I just spread it around with my fingertips. You may need to use just a little more than half of the dough to get coverage.
  • Then lay the unwrapped Rolo candies all over the dough with right side up. I place them 7 rolos across and 11 Rolos down in the 9 x 13 inch pan.
  • Then flatten small portions of the remaining cookie dough and place all over the Rolos to cover them up. I used my fingers to mold the dough around a little for better coverage. It's ok if you can see a little bit of Rolos because the dough will expand upon cooking.
  • Bake at 350 for 22 - 25 minutes. These will be golden brown. You want them to be set in the center and when a toothpick is inserted it will come out clean.
  • Cool for about 30-45 minutes to set up before slicing.

1 (18 3/4 ounce) yellow cake mix, dry mix only
1/3 cup butter, softened
2/3 cup evaporated milk
36 pieces Rolo chocolates, unwrapped and halved
3/4 cup pecans, chopped

Steps:

  • In bowl, combine dry cake mix, butter and milk. This will be thick.
  • Spread 1/2 of the cake mixture into a prepared 9 x 13 pyrex casserole dish.
  • Sprinkle candies on top of cake mixture.
  • Top candies with remaining cake mixture. This is thick and you may need to use your hands.
  • Sprinkle chopped pecans on top of 2nd layer of cake mixture.
  • Bake for 20-25 minutes at 350°.
  • Cut while warm and allow to cool in the pan.
  • Enjoy!

  • In a large mixing bowl, cream butter and sugar for 3-4 minutes with an electric beater or until pale and creamy. Add vanilla, egg and egg yolk and beat again until combined. Sift in flour, baking soda and beat until a soft dough forms. Finally, add the chocolate chips.
  • Divide the dough into two and press half of the cookie dough into the bottom of your pan to form one even layer. Scatter Rolo chocolate all over the cookie dough.
  • Grab the other half of your cookie dough and break it up into pieces and place on top of Rolo chocolates. Gently spread it out using your fingers so most of the Rolo is covered – it’s fine if some of the chocolate are showing.
