- Heat oven to 375°F.
- Brown meat with garlic and oregano in large saucepan. Stir in pasta sauce; simmer on medium-low heat 5 min., stirring occasionally. Remove from heat; stir in tomatoes.
- Mix egg, cottage cheese and Parmesan until blended. Spread 1/2 cup pasta sauce mixture onto bottom of 13x9-inch baking dish sprayed with cooking spray. Top with layers of 3 noodles, half the cottage cheese mixture, 1/2 cup mozzarella and 1 cup of the remaining pasta sauce mixture; repeat layers. Top with remaining noodles and pasta sauce mixture; cover.
- Bake 30 min. or until heated through. Top with remaining mozzarella; bake, uncovered, 5 min. or until melted. Let stand 5 min. before serving.

- PREHEAT oven to 375°F Brown meat with garlic and oregano in medium saucepan. Stir in spaghetti sauce; simmer 5 min., stirring occasionally. Remove from heat; stir in tomatoes.

CHEESY MEAT LASAGNA
My family loves this lasagna and it's such an easy recipe but it does take some prep time. It's versatile too and you can add or change things to your liking!

- Preheat oven to 350°F
- Boil and cook shells as directed
- Brown ground beef, season, and drain grease (reserve 1 tsp).
- Saute onions (or other vegetables in same pan using approx 1 tsp reserved grease -- add more if needed or use butter or other oil).
- combine ground beef, onions, and pasta sauce in same pan. cover and simmer on low while you prepare the rest of the meal. Stir occasionally.
- Mix cottage cheese, egg, then salt and pepper lightly. Mix well and add 2 cups cheese. Mix again.
- Spray a 13x9 inch baking pan and begin to layer in order -- shells, cottage cheese mix, meat sauce (repeat 3 times) and finish off by topping 1-2 cups mozzarella or Italian blend cheese onto lasagna.
- Bake for 20-30 minutes uncovered or until cheese is melted to your preference. I like to sprinkle an Italian blend seasoning or crushed red pepper on our individual servings. We serve this with garlic bread and a salad.
- Let stand approximately 20 minutes before cutting/serving (to set up or else it is too saucy). I use this time to make the salad and toast the garlic bread. This meal tastes even better the next day!

BEEF AND CHEESE LASAGNA

- For the Lasagna Filling:
- Preheat oven to 350 degrees F.
- Heat the oil in a large stock pot over medium heat. Add onion and garlic and saute 3 minutes, until soft. Add, beef and cook 5 to 7 minutes, until browned all over, breaking up the meat as it cooks. Stir in basil, oregano and red pepper flakes.
- Add diced tomatoes and tomato sauce and bring to a simmer. Reduce heat to low and simmer 10 to 15 minutes. Remove from heat and set aside.
- For the Lasagna:
- Meanwhile, in a large bowl, combine ricotta, half of the mozzarella, egg, and black pepper. Mix well.
- Pour 1 cup of the meat sauce in the bottom of a 13 by 9-inch lasagna pan. Arrange 4 UNCOOKED lasagna noodles on top of sauce, overlapping noodles slightly to cover the bottom. Spoon half of the cheese mixture over noodles. Top with 1 1/2 cups of meat sauce and 4 more noodles. Top second layer of noodles with remaining cheese mixture, 1 1/2 cups of meat sauce and 4 more noodles. Top noodles with 1 1/2 cups of meat sauce and remaining mozzarella cheese. Top with Parmesan cheese.
- Refrigerate or freeze the remaining sauce.
- Cover with foil and bake 45 minutes. Uncover and bake 15 more minutes, until top is golden and bubbly. Let stand 5 minutes before slicing.
EXTRA CHEESY LASAGNA FOR ROY
I don't eat lasagna myself but I do make it on occasion for my family. When we used to live in this little side by side duplex, I swear that my neigbor Roy could smell it through the walls. I still make it every time I go down to see him and his girlfriend. And yes it does say 2 lbs of mozarella. The man loves his lasagna cheesy.

- In a bowl, combine 1 lb mozarella, parmesan and eggs.
- Mix well.

- First, you should boil the noodles in a medium pot. Add a little oil so the noodles don't stick. (Wait until the water is in a full boil before you add noodles!).
- While the noodles are boiling, you need to brown the meat in a saucepan.
- You will add about 1 tablespoon of garlic powder and as much pepper and salt as you desire.
- When the meat is cooked thoroughly, add the cans of tomato sauce. Bring the sauce and meat mixture to a boil.
- By this time the noodles should be soft. Drain them good, and run COLD water on them. (You will be touching the noodles with your hands, so be sure you can handle the temperature of the noodles before you put the lasagna together).
- Now we will layer the noodles and sauce.
- Put some of the sauce in the bottom of the cake pan. So the noodles dont stick to the bottom. You will layer it from bottom to top like this ; sauce, noodles, sauce, yellow cheese, noodles, sauce, white cheese, noodles, sauce, yellow cheese. And repeat to the top of the pan.
- On the top, layer the cheese very thick.
- Now put it in the oven at 375° and leave it in there for about 45-60 minutes. Until the cheese is melted. (You can turn the broiler on to crisp the cheese up some, my family loves it that way!).
- Now you can serve with garlic bread and salad.

CREAMY, CHEESY LASAGNA

- In a dutch oven or very large skillet, brown the meat. Add the onion powder and garlic and cook a couple of minutes more.
- Stir in the tomato sauce, paste, water and seasonings.
- Cover, and simmer, stirring occasionally for 30 minutes.
- With mixer or food processor, mix the cream cheese, ricotta and eggs.
- Preheat oven to 350, and spray a large lasagna pan (11x15) with cooking spray.
- Layer half the noodles in the bottom of the pan, breaking the noodles as needed.
- Add half of the meat sauce, and spread evenly over the noodles.
- Gently spread the cream cheese/ricotta mixture evenly over the sauce.
- Lay the sliced Mozzarella on top of the cream cheese layer, covering completely.
- Lay the remaining lasagna noodles on top of this.
- Top with remaining meat sauce.
- Sprinkle the Parmesan over the entire casserole.
- Bake for 25 minutes. Cool 15 minutes before cutting.
- NOTE: You could divide this into two smaller casseroles and freeze one.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and lay lasagna flat on foil to cool.
- In a medium bowl, combine ricotta, Parmesan, eggs, salt and pepper; mix well.
