This is the best-selling summer cocktail at Ralph Lauren's Polo Bar in Manhattan, where it is regarded as "summer in a glass." A critical ingredient is French grapefruit liqueur, or pamplemousse, a relatively new spirit that contributes aroma, a touch of sweetness and a bitter edge, even in a small dose. It marries superbly with rosé wine. Consider adding a splash of it to a glass of rosé Champagne.

1/2 ounce grapefruit liqueur
1/2 ounce Royal Combier or Grand Marnier
3 ounces rosé wine, chilled
2 ounces Champagne, chilled
Strip of pink-grapefruit or orange peel

Steps:

  • In a large wine glass, combine the grapefruit liqueur and Royal Combier. Add the wine and Champagne. Add a few ice cubes and stir.
  • Twist the grapefruit peel over the drink to release oils, then drop it into the cocktail.

2 tablespoons black currant syrup (recommended: Ribena)
Sparkling apple cider or Champagne, if desired, chilled
2 tablespoons fresh black or red currants, some berries picked and some clusters

Steps:

  • Place the currants in the freezer for about 30 minutes prior to making the cocktail. (They will act as mini ice cubes and will keep the cocktail colder longer!)
  • Add the black currant syrup to the bottom of a champagne flute. Top with sparkling apple cider, or Champagne, if using. Drop a couple of currants into the glass and garnish with a small frozen bunch, if desired.
  • Cook's Note: For the ultimate in crowd control, prepare a pitcher of Ruby Royales; just make sure to add the chilled sparkling cider just before serving so everyone will enjoy the bubbly. A pitcher will allow you to mingle with your guests without playing mixologist.

crushed ice
4 cups ice cube
1 oz honey
1 oz fresh grapefruit juice, or orange juice
1 oz dry vermouth
2 oz rosé wine
1 half grapefruit, or orange peel
fresh thyme sprig, for garnish
seltzer, for topping

Steps:

  • Make the crushed ice: Add 2 cups (280 G) of ice to a food processor. Pulse 6-8 times, until the ice is uniformly crushed. Transfer to a large zip-top freezer bag. Repeat with the remaining 2 cups of ice.
  • Store the bag in the freezer and use the ice for cocktails or smoothies. If the ice has clumped together, gently drop it on the counter a few times to break it up.
  • Make the cocktail: In a small glass or measuring cup, use a chopstick or bar spoon to stir together the honey, grapefruit juice, and vermouth until the honey is dissolved. Add the rosé and stir briefly.
  • Pack a large wine glass with crushed ice. Pour in the rosé mixture. Slide in the grapefruit wheel. Place the thyme sprigs on your palm and slap your other hand on top. (This releases the oils in the thyme.) Slide the thyme into the cocktail. Top with seltzer and serve.
  • Enjoy!
