1 tablespoon butter
1 cup Corn Salad reserved from Corn Salad recipe
2 large eggs
1/2 cup milk
1 teaspoon sugar
1/2 teaspoon vanilla extract
Kosher salt
1/4 cup grated Cheddar

Steps:

  • Preheat the oven to 350 degrees F. Butter 4 (8-ounce) ramekins. Have a baking pan large enough to fit the ramekins ready.
  • Divide the Corn Salad evenly among the ramekins. In a bowl, whisk together the eggs, milk, sugar, vanilla, and salt, to taste. Pour the egg mixture evenly among the ramekins and top each with a tablespoon of cheese.
  • Arrange the ramekins in the baking pan and put the pan in the oven. Pour in enough hot tap water to come halfway up the ramekins. Bake until set, about 30 to 35 minutes. Remove from the oven and serve hot.

1/3 cup rice vinegar
1 tablespoon olive oil
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 to 1/2 teaspoon hot pepper sauce
1/4 teaspoon pepper
Dash cayenne pepper
2/3 cup minced fresh cilantro

Steps:

Some ate it separately most though added it to their burrito and/or fajita mixin's...As usual, I rarely measure, so these measurements are appproximate and by memory...sorry! Number Of Ingredients 9

4 ears fresh corn, husks and silks removed
2 tablespoons unsalted butter, melted
5 ripe tomatoes, seeded and cut into 1/4-inch dice
1/2 small red onion, peeled and finely chopped
1 small jalapeno pepper, seeds and ribs removed, finely chopped
1 small clove garlic, peeled and finely chopped
1/2 cup coarsely chopped fresh cilantro leaves
3 tablespoons freshly squeezed lime juice, plus more to taste
Coarse salt and freshly ground pepper

Steps:

  • Heat a grill or broiler to medium hot. Brush corn with melted butter, and place on grill or under broiler, turning often, until about half the kernels are brown, 15 to 20 minutes. Remove corn from heat, and let cool. Using a sharp knife, cut kernels from cobs.
  • Combine corn kernels, tomatoes, onion, jalapeno, garlic, and cilantro in a medium bowl. Season to taste with lime juice, salt, and pepper. Serve.
