This tender beef has become a tasty tradition when I cook for our harvest crews and for neighboring ranchers who come to help us sort our cattle. Those hungry folks have been a good testing ground for recipes. They let me know if a new one I try is a keeper.-Betty Sitzman, Wray, Colorado

1 boneless beef chuck roast (3 pounds)
1 can (14-1/2 ounces) beef broth
1 medium onion, chopped
1 celery rib, chopped
3/4 cup ketchup
1/4 cup packed brown sugar
2 tablespoons white vinegar
1 teaspoon salt
1 teaspoon ground mustard
1 teaspoon Worcestershire sauce
1 garlic clove, minced
1 bay leaf
1/4 teaspoon garlic powder
1/4 teaspoon paprika
3 drops hot pepper sauce
12 to 15 hoagie buns, split

Steps:

  • Place roast in a Dutch oven; add the broth, onion and celery. Bring to a boil. Reduce heat; cover and simmer for 2-1/2 to 3 hours or until the meat is tender. , Remove roast and cool slightly; shred meat with two forks. Strain vegetables and set aside. Skim fat from cooking liquid and reserve 1-1/2 cups. Return the meat, vegetables and reserved cooking liquid to the pan. , Stir in the ketchup, brown sugar, vinegar, salt, mustard, Worcestershire sauce, garlic, bay leaf, garlic powder, paprika and hot pepper sauce. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Discard bay leaf. Serve beef on buns.

Sweet Beef Barbeque for a Crowd image

Make this barbeque for a crowd or make it to freeze! I recently made this recipe for our annual Super Bowl party and got lots of compliments from our friends. It also freezes really well and works great for a quick meal! I often make this the day before a big event, store it in the fridge, and reheat it on the stovetop. Serve on potato rolls with American cheese, if desired.

5 ½ pounds ground beef
1 large onion, chopped
4 stalks celery, chopped
1 green bell pepper, chopped
1 (16 ounce) package dark brown sugar
2 (12 ounce) bottles chili sauce
1 cup ketchup
1 tablespoon mustard
1 teaspoon Worcestershire sauce
salt and ground black pepper to taste

Steps:

  • Combine ground beef, onion, celery, and bell pepper in a very large pot over medium-high heat; cook and stir until beef is browned and crumbly and no longer pink, 5 to 7 minutes. Drain and discard grease.
  • Add brown sugar and stir to combine. Mix in chili sauce, ketchup, mustard, Worcestershire sauce, salt, and pepper. Cook over medium heat until all ingredients are heated through, about 30 minutes.

1 1/4 cups brown sugar, Firmly Packed
1 1/4 cups red wine vinegar
5 tablespoons Worcestershire sauce
5 medium onions, Chopped
salt and pepper

Steps:

  • Dredge strips of beef in flour, salt & pepper, brown in oil.
  • Combine water, catsup, brown sugar, vinegar, worcestershire, and onion.
  • Stir well, heat and pour over beef.
  • Bring to boil, reduce heat and cook covered until beef is tender - about 2 hours.
  • Stir occasionally.
