Easy and elegant dessert. Also, fairly low calorie for a dessert. For a special touch, add a tablespoon of Kahlua, Baileys Irish Cream or other coffee liqueur to the coffee.

1 cup low-fat ricotta cheese
3/4 cup light cream cheese
1 tablespoon rum or 1 tablespoon cognac
1/4 cup superfine sugar
1 1/2 cups very strong espresso or 1 1/2 cups good quality coffee, cooled
16 ladyfingers
2 tablespoons unsweetened cocoa, for dusting

Steps:

  • Beat the cheeses, rum and sugar with electric beaters until light and creamy and set aside.
  • Pour the coffee into a large shallow dish.
  • Quickly dip 1 side of half the ladyfingers into the coffee and lay closely together with the dipped side down over the base of a large flat-based serving dish or large cafe au lait cups.
  • Spread half of the cheese mixture evenly over the ladyfingers.
  • Dust with half the cocoa then repeat layers with coffee-dipped biscuits and cheese.
  • Cover with plastic wrap and refrigerate for at least 6 hours or overnight.
  • Dust with remaining cocoa just before serving.

1 large store-bought angel food cake
1 cup white grape juice
1 box sugar-free peach flavored gelatin dessert
1 (16-ounce) bag frozen peaches, drained
1 (15-ounce) low-fat ricotta cheese
1 (12-ounce) non-dairy whipped topping
2 tablespoons rum extract
5 slices peaches (from bag of frozen peaches), for garnish

Steps:

  • Invert cake onto serving plate. Cut 1-inch off across the top of cake. Set aside. With a serrated knife, hollow out center of cake leaving a 1-inch border. In the meantime, warm the grape juice in the microwave for 1 minute. Pour over gelatin mix and combine with juice as you would water. Mix thoroughly and add in peaches and ricotta cheese. Chill in refrigerator for about 30 minutes. In a separate bowl, combine non-dairy topping with rum extract and whisk thoroughly. Fill the center of cake with peach ricotta gelatin mix. Return top of cake. Frost cake on top and sides with non-dairy topping and rum extract mixture, completely coating cake. Chill for 1 hour before serving. Garnish with peach slices.

1 (400 g) package italian savoiardi ladyfingers (approx. 35 cookies)
2 (106 g) packages instant vanilla pudding (regular and not low fat)
2 cups cold milk
2 cups whipping cream
2 cups espresso coffee, cooled
1/4 cup rum
1 tablespoon margarine
1 tablespoon cocoa
4 tablespoons sugar
4 tablespoons water
1 tablespoon rum
1 egg yolk, beaten

Steps:

  • In a large bowl, combine the pudding mixes,milk and whipping cream, and beat at high speed until very thick and beaks form when beaters are lifted. Set aside.
  • In a small pan, prepare the chocolate sauce. Combine all of the ingredients together except for the egg yolk, and cook over a low heat just until melted. Once melted, slowly whisk in the beaten egg yolk. Let the chocolate sauce cool until lukewarm.
  • Mix the cooled espresso coffee and rum together Completely submerge the lady fingers, one a a time, but do not let sit, then layer in the bottom of a 10 inch springform pan. Cut the cookies if necessary to fill in all of the spaces.
  • Spread half of the pudding mixture over the layer of cookies. Repeat the dipped lady fingers, then spread the remaining pudding over the lady fingers and smooth as evenly as possible.
  • Pour the sauce over the cake (sauce will be runny), and refrigerate overnight. Remove from the springform pan just before serving.
  • Note: If the egg yolk cooks while being whisked into the chocolate sauce, simply strain it before pouring over the cake.

5 eggs, separated
¾ cup white sugar, divided
1 cup all-purpose flour
1 teaspoon vanilla extract
¾ cup confectioners' sugar for dusting
1 cup white sugar
1 cup boiling water
½ cup strong brewed coffee
¼ cup rum
1 (8 ounce) container mascarpone cheese
2 cups confectioners' sugar
¼ cup dark rum
1 teaspoon vanilla extract
2 cups heavy cream
2 (1 ounce) squares semisweet chocolate, grated
⅛ cup confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • In a medium bowl, whip egg yolks and 1/4 cup of sugar with an electric mixer until thick and pale. In a separate bowl, whip egg whites (with clean beaters) to soft peaks. Gradually sprinkle in the remaining 1/2 cup sugar while whipping to medium stiff peaks. Fold the egg yolk mixture into the egg whites. Gently fold in the flour and 1 teaspoon vanilla. The batter should be thick and pale yellow.
  • Trace two 9 inch circles onto the parchment paper using a cake pan as a guide. Spread or pipe batter to completely fill inside the lines of the circles. Batter should be about 1/2 inch tall.
  • Load the remaining batter into a pastry bag fitted with a half inch tip or hole. Draw parallel lines onto another piece of parchment that are 3 inches apart. Pipe the batter back and forth just between the lines in a compressed S motion, until you run out of batter. This is the part that wraps around the outside of the cake. (It helps to have it in one piece, but you can pipe individual fingers using the guidelines drawn on the paper, if you prefer.) There may be extra.
  • Bake in preheated oven 10 to 15 minutes, until firm but not browned. Remove from the oven and dust generously with confectioners' sugar. Set aside to cool.
  • To make the syrup, stir together 1 cup sugar, boiling water, coffee and 1/4 cup rum until sugar is dissolved. Set aside.
  • To make the filling, combine mascarpone, 2 cups confectioners' sugar, dark rum and 1 teaspoon vanilla in a large bowl. Whisk together until completely smooth, scraping the bottom of the bowl to remove any lumps. Gradually whisk in the heavy cream. Whip with an electric mixer until soft peaks form. Stop whipping when the mixture shows the first sign of graininess.
  • To assemble, line the sides of a 9-inch springform pan with parchment or waxed paper. Place one of the ladyfinger rounds in the bottom of the pan. Brush generously, but do not soak completely, with syrup. Place the 3-inch high ladyfinger strips around the inside edge of the pan, so that the sides are completely covered. Brush generously with syrup.
  • Spread half of the filling mixture over the first ladyfinger round in the pan. Place the remaining ladyfinger round on top of the filling. Soak the second ladyfinger round with syrup until it cannot take any more. Spread the remaining filling over that and smooth the top. Sprinkle with grated chocolate. Refrigerate at least 4 hours.
  • To serve, remove the sides of the pan and carefully remove the parchment or waxed paper from the outside of the cake. Dust with confectioners' sugar just before serving.

  • Beat cream and 3 tablespoons sugar together in a bowl using an electric mixer until stiff peaks form. Refrigerate until ready to use.
  • Beat ricotta cheese, sour cream, and sugar together in a bowl. Fold in the whipped cream gently; add rum.
  • Pour coffee into a bowl. Dip the ends of half of the ladyfingers in the coffee. Arrange ladyfingers dipped side-down into a single layer in a 2- to 2 1/2-inch deep rectangular serving dish. Spread half of the ricotta-cream mixture on top. Repeat dipping and arranging the remaining half of the ladyfingers; spread the remaining ricotta-cream mixture on top. 2 large egg yolks
1 cup confectioners' sugar, divided
2 cups heavy whipping cream, divided
1 carton (8 ounces) mascarpone cheese
2 large navel oranges
1/2 cup coconut rum or orange juice plus 1/2 teaspoon coconut extract
1/2 cup orange liqueur or orange juice
1 teaspoon vanilla extract
1 package (7 ounces) crisp ladyfinger cookies
2 medium ripe mangoes, peeled and thinly sliced

Steps:

  • In top of a double boiler or a metal bowl over simmering water, combine egg yolks, 1/2 cup confectioners' sugar and 1/2 cup cream. Whisking constantly, heat mixture until thick and a thermometer reads 160°. Remove from heat; whisk in mascarpone cheese until almost smooth. In another bowl, beat remaining 1-1/2 cups cream until it begins to thicken. Add remaining 1/2 cup confectioners' sugar; beat until soft peaks form. Fold whipped cream into mascarpone mixture. , Cut oranges crosswise in half; squeeze juice from oranges into a shallow bowl. Stir in rum, orange liqueur and vanilla., Quickly dip half of the ladyfingers into rum mixture and place in the bottom of a 9-in. springform pan. Top with half of the mascarpone mixture and half of the mango slices. Repeat layers. Refrigerate, covered, at least 8 hours or overnight. To serve, loosen and remove rim.
