- Take the steaks out of the fridge 30 mins before cooking them. Pat them dry and season.
- Heat a non-stick heavy-based frying pan over a very high heat. Drizzle in the oil, then add the butter, garlic and steaks, nestling the herbs around them. With a pair of tongs, turn the steaks every 30 secs to 1 min so they get a nice brown crust. As a rough guide, each steak will take 3 mins in total for rare, 4-5 mins in total for medium and 7-8 mins for well done. If you have a digital cooking thermometer, the middle of the steak should be 50C for rare, 60C for medium and 70C for well done. If your steak has a thick layer of fat running down the side, hold the steak on its side with a pair of tongs and push the fat into the pan for 2 mins or until golden brown.
- Transfer the steak to a plate. Cover in foil and leave to rest for 5 mins before serving.

- Grind Sichuan pepper with chilli, salt and sugar and heavily season rump steaks. Mix the honey, soy, Worchester sauce and hoisin with a pastry brush and set aside for later. Peel the potatoes, wash them and cut into large chips. Place in a pan of salted water and bring to the boil slowly. Finely cut the white cabbage, onion, carrot and apple and spread out on a tray. Lightly season with sea salt and pepper. When potatoes start to blister in the water, remove them carefully with a slotted spoon and place on kitchen towel to dry and cool. Mix the crème fraîche, mustard and mayonnaise together, pat off excess moisture from the sliced vegetables and add mixture to bind. Add the chopped parsley. In a hot pan, grill the rump and brush with the soy glaze. Turn and repeat the process 2 or 3 times until the steaks are blackened and sticky. Allow to rest. In a deep pot, preheat oil to 180ºC and cook the chips until golden and crisp. - Heat the oil in a pan. Season the steaks, then fry for 2-3 mins each side for medium rare, or cook more to your liking. Remove from the pan, then set aside to rest.
- Add the mushrooms and thyme leaves to the pan, then cook for a couple of mins until softened and golden. Pour in the wine and bubble until syrupy, then turn off the heat and stir in the butter. Season.
- Serve the steaks with the mushroom sauce poured over, along with creamy mash and some crunchy spring greens.

- Heat the oven to 220C/200C fan/gas 7. Bring a large pan of salted water to the boil, add the potatoes and cook for 5 mins. Drain and leave to steam-dry in the colander for a few minutes. Toss the potatoes with the Cajun seasoning, half the oil and a good pinch of salt. Tip onto a baking tray and roast for 25-30 mins or until golden and crisp, tossing halfway through.
- To make the slaw, combine the cabbage, onion, mayonnaise, soured cream and chipotle paste in a bowl until the cabbage and onion are well coated. Set aside.
- Rub the steak with the remaining oil and season both sides. Heat a griddle pan or non-stick frying pan over a high heat until very hot. Add the steak to the pan, cook for 2 mins on one side, then 3 mins on the other. Remove, put on a chopping board, cover with foil and leave to rest for 5 mins. Slice into strips.
- Serve the steak with the potatoes scattered with the coriander and a pile of the spicy slaw.

- First make the butter: mash all the ingredients together with lots of cracked black pepper. Pat the butter flat between cling film (it'll chill quicker when thinner) and put in the fridge or freezer to harden.
- Cut the potatoes into neat chips, rinse under hot water, then dry on a tea towel. Place the chips in a deep saucepan (they should only come up a third of the way) and just cover with cold oil. Place the pan on a medium heat, bring the oil to a simmer and give the chips a stir with a wooden spoon. Increase the heat so the oil bubbles really quickly and fry the chips, stirring occasionally so they don't stick, until crisp and golden - the whole process will take 15-20 mins. When they are done, scoop out with a slotted spoon onto a plate lined with kitchen paper and set aside.
- Meanwhile, heat the griddle pan until smoking hot. Season the steaks with salt and pepper and rub with a little oil - how you cook your steak will depend on the cut you have chosen and its thickness. For a steak that's 2cm thick, cook it for 2 mins on each side for rare, adding 1 min more for every increasing degree of doneness. Just before lifting the steaks off the griddle, place half the butter on top of each. Serve the steaks with the chips, some mixed leaves and a tangy dressing.

- Remove steaks from the fridge 1 hour before cooking. Preheat the oven to 200°C (fan) (450°F).
- Leave the skins on the potatoes and slice into chips, around half a cm thick. Place the chips into a bowl and toss in olive oil, salt and pepper. Transfer to a baking tray and bake for 30 minutes or until golden and crisp. Turn half way through.
- Start to prepare the rump steaks when there is 15 minutes left on the timer for the chips. Place a large griddle pan or frying pan on a high heat. Prep the steak by drizzling both sides with olive oil and salt. Then use your fingers to rub the oil and salt into the meat.
- Once the pan is hot place the rump steaks in the pan, they should sizzle immediately. Leave to cook on the first side for 3-4 minutes.
