EVERYBODY LOVES PILAF
A simple and delicious rice pilaf recipe that is sure to please even the pickiest eaters. It complements almost any dish.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spread pine nuts on a baking sheet.
- Toast in the preheated oven until golden brown, about 12 minutes.
- Melt butter in a saucepan over medium-low heat. Increase heat to medium and stir in spaghetti; cook until coated with melted butter and lightly browned, 3 to 5 minutes. Add onion and garlic; cook until tender, about 2 minutes. Stir in rice; cook for 5 minutes.
- Pour broth into the saucepan. Bring to a boil; cover and cook until rice is tender until liquid has been absorbed, about 20 minutes. Season with salt and pepper.
- Mix toasted pine nuts and parsley into the rice mixture.

RICE PILAF

- Melt the butter over medium heat in a large skillet with a tight-fitting lid. Add the spaghetti and toast until deep golden in color and very nutty-smelling. Add the rice and stir for a minute. Season with some salt and pepper, add 3 1/2 cups of the stock and bring to a low boil. Reduce the heat to low, cover and cook until the rice is just tender, about 18 minutes; add extra stock as necessary if the pan gets too dry. Fluff the pilaf with a fork. Mix in the currants, pignoli, chives and parsley.
RICE PILAF

- Heat olive oil in a medium saucepan and saute onion and garlic until the onion begins to turn translucent. Add rice and stir to coat with oil, onions and garlic, and let rice "toast" lightly. Stir in chicken stock and poultry seasoning and bring to a boil. Then reduce heat and simmer covered until all liquid is absorbed, about 20 minutes. Remove from heat and flake rice.
RICE PILAF
Steps:
- Preheat the oven to 350.
- Melt the butter in a 3-quart saucier over medium heat.
- Stir in the onion, bell pepper and 2 pinches of salt.
- Decrease the heat to low and sweat until the onion is translucent and aromatic but not browned, 3 to 4 minutes. Increase the heat to medium and add the rice. Cook, stirring frequently, until you smell nuts, another 3 to 4 minutes.
- Add the saffron and its water, the broth, orange zest, bay leaves and the remaining 1 1/2 teaspoons salt. Increase the heat and bring to a boil.
- OK, now the weird part: Thoroughly wet a clean towel, kill the heat, scatter the peas on top of the rice, then place the towel across the top of the saucier. Top with the lid, then fold the towel corners up over the lid.
- Transfer the saucier (towel and all) to the oven and bake 15 minutes.
- Remove and rest at room temperature for 15 more minutes without opening the lid.
- Fish out the orange zest and bay leaves. Turn the pilaf out onto a platter, fluff with a large fork and garnish with the raisins and pistachios. Serve family-style, right in the middle of the table.

- In a large saucepan, heat the oil and cook the red onion, ground coriander and garlic over a low heat for 5 minutes, or until the onion has softened.
- Stir in the rice and 2 cups of water (17 fl oz). Cover the pan and bring to the boil.
- Reduce the heat and simmer gently for approx 10 minutes, or until all the liquid has been absorbed.
- Remove the pan from the heat, fluff the rice with a fork amd leave covered for another 10 minutes.
- Meanwhile, make the dressing. In a glass jar with a lid, combine all of the dressing ingredients and shake vigorously to mix.
- Add the rinsed and drained lentils to the rice along with the chopped spring onions and herbs. Pour over the dressing and mix well.

- Bring chicken broth to boil in a saucepan over medium-high heat; continue simmering while preparing remaining ingredients.

RICE COOKER RICE PILAF
My husband loves this rice pilaf. Everytime I make rice he requests it. Hopefull you'll like it too! It takes a little extra preparation than a rice mix, but I think it's well worth it. You can also use wild rice, instead of white rice, but you'll need to add more liquid and it will take longer to cook.

- In a small frying pan over medium heat, sautee the onion and garlic until onion is translucent. The garlic will cause the onion to scorch a bit, don't worry, it gives it flavor.
- Add the rice, sauted onion and garlic, almonds, mushrooms, and chicken broth to a 4 cup capacity or larger rice cooker.
- Stir briefly to distribute ingredients.
- Set to cook. When done, let sit for 10 minutes.
- Stir and enjoy!
- Depending on your rice cooker, the bottom may get brown. I like it, it gives it some extra zip!
