RUSSIAN PLUM CAKE - SLIVOVYI PIROG
Found this while scouting recipes for the Food Friends and Fun Culinary Quest on Yuku. It comes together quickly and takes advantage of seasonal fresh plums which I love but you can also use other fresh fruits.

Steps:
- Heat oven to 350F/180C degrees. Lightly coat a 9-inch pan with butter and sprinkle with cake or bread crumbs.
- In a large bowl or stand mixer, cream together butter and sugar until light and fluffy. Add the lemon zest and mix well. Beat in the eggs one at a time along with the vinegar and vanilla until well incorporated.
- In a separate bowl, whisk together the flours and baking powder. Add to the butter mixture and combine at low speed until thoroughly mixed. Transfer to the prepared pan, smoothing down the top.
- Arrange the plums, cut side down, in a decorative pattern on the surface of the batter. Pushing down lightly on the plums. Bake 35 minutes or until a toothpick tests clean. Remove to a wire rack and let cool 20 minutes. Unmold and serve dusted with confectioners' sugar, if desired.

MOMAPHET'S CILANTRO LIME CORNBREAD
This recipe was developed for the Southern USA Cornbread Challenge of the Food Friends and Fun 2014 Culinary Quest on Yuko.com. I added to a basic buttermilk cornbread one of my favorite flavor combinations lime, cilantro & garlic. The cilantro and lime really pair well together and are the dominant flavors. I haven't tried the chipotle addition but it's another flavor I like with these so I thought I would suggest it. The smaller amounts will give you fairly subtle flavors add more for greater umph.

- Pre heat oven to 400 degrees, butter well one 10" cast iron skillet, or an 8" square pan. If using the pan, you can also use non-stick cooking spray.
- Whisk or beat well together with a fork: buttermilk, egg, & oil; set aside.
- Stir or whisk together all the dry ingredients, add in lime zest, onions and cilantro stir well.
- Gently stir the wet ingredients into the dry mixing just until everything is incorporated, don't over mix.
- Pour batter into prepared pan, sprinkle with shredded cheese and bake 18-25 minutes. If using the skillet check at 18 minutes and should be done by 22. Using the square pan check at 20, with either test by inserting a thin knife or toothpick it should comes out clean (don't mistake melted cheese for uncooked batter). Serve warm.
RUSTIC PLUM CAKE
Recipe from Cook's Illustrated. Italian plums work the best. Bought a lot of Italian plums at the farmer's market, so I had to make a few cakes and then freeze most of them. Freezing the cakes didn't seem to hurt the flavor at all. Now all I have to do is pop one out of the freezer when I'm in the mood for a delicious plum cake!

- Cook jam and brandy in 10-inch nonstick skillet over medium heat until reduced to thick syrup, 2 to 3 minutes. Remove skillet from heat and place plums cut-side down in syrup. Return skillet to medium heat and cook until plums shed their juices and thick syrup is again formed, about 5 minutes, shaking pan to prevent plums from sticking. Cool plums in pan, about 20 minutes.
- Adjust oven rack to middle position and heat oven to 350°F Grease and flour 9-inch springform pan. Process sugar and almonds in food processor until nuts are finely ground, about 1 minute. Add flour, baking powder, and salt; pulse to combine. Add butter and pulse until mixture resembles coarse sand, about ten 1-second pulses. Add eggs, vanilla, and almond extract (if using) and process until smooth, about 5 seconds, scraping bowl once if needed (batter will be very thick and heavy).
- Transfer batter to prepared pan; using spatula, spread batter evenly to pan edges and smooth surface. Stir plums to coat with syrup. Arrange plum halves, skin-side down, evenly over surface of batter. Bake until cake is golden brown and wooden skewer inserted into center comes out with few crumbs attached, 40 to 50 minutes. Run paring knife around sides of cake to loosen. Cool in pan on wire rack until just warm or to room temperature, at least 30 minutes. Remove cake from pan and dust with confectioners' sugar. Cut into wedges and serve.
- Note:This recipe works best with Italian plums, which are also called prune plums. If substituting regular red or black plums, use an equal weight of plums, cut them into eighths, and stir them a few times while cooking. Arrange slices, slightly overlapped, in two rings over surface of cake. Do not use canned Italian plums. Blanched whole almonds can be used but must be processed 30 seconds longer until finely ground. The brandy can be omitted, but then you will need to melt the jam with 1 tablespoon water before adding the plums. Don't add the leftover plum cooking liquid to the cake before baking; reserve it and serve with the finished cake or over ice cream. The cake can be served with lightly sweetened whipped cream.

- Preheat the oven to 400°F. Grease a 13-by-9-inch pan or line it with parchment paper, leaving a bit of overhang so you can use it to lift out from the pan after baking. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter and sugar until soft and fluffy. Beat in 2 of the eggs, one at a time, until thoroughly combined. And the vanilla and mix again. Then add the dry ingredients a little at a time, and continue mixing until combined. It will be stiff, and have the consistency of cookie dough.
- Press about half of the dough into the bottom of the greased pan. Stir the apricot jam to soften its texture and spread it evenly over the dough almost up to the edges, leaving about ¼ inch up to the edges uncovered. Then take the remaining dough and roll pieces of it into ropes about ½-inch thick. Arrange the ropes diagonally in opposite directions alternating rows (for example: think of the pan as a map. Arrange ropes from southwest to northeast, skipping rows in between. Then arrange ropes from northwest to southeast, skipping rows in between. Then go back and fill in the skipped rows from southwest to northeast and so on. This will create an alternating lattice-type look). Finally, use a long rope of dough (or several longer ropes) to create a border around the entire pan.
