  • Combine flour, cornstarch, instant potatoes, and club soda in a bowl stir well and let sit for about ten minuets.

1 large egg

2 large white onions (about 2 pounds), sliced crosswise 1/2 inch thick and separated into rings

Steps:

  • Combine flour, cumin, cayenne, and 1 teaspoon salt in a medium bowl. Slowly whisk in buttermilk, beer, and egg until smooth. Let batter stand 15 minutes.
  • In a large saucepan, heat oil over medium-high heat until a deep-fry thermometer registers 375 degrees. Working in batches, dip onion slices in batter, turning to coat. 2 cups buttermilk
1/4 teaspoon hot sauce
1 egg, beaten
1 cup all-purpose flour
1 cup cornmeal

Steps:

  • Preheat vegetable oil in a deep-fryer to 375 degrees F.
  • Slice the onions into 3/4-inch rings and separate. Add the buttermilk, hot sauce, and egg to a large casserole dish and whisk to combine. Stir in the onion slices and allow to soak for 3 to 5 minutes. Put the flour and cornmeal in a large brown paper bag and season with the season salt and cayenne. 1 teaspoon baking powder

1 quart oil for frying, or as needed

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Steps:

  • Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
  • Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
  • Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.

12 ounces beer, medium body
3 tablespoons grated Parmesan

Steps:

  • In a Dutch oven heat oil to 350 degrees F.
  • In a food processor combine sour cream, mayonnaise, sun-dried tomatoes, red bell peppers, lime juice, 1/2 teaspoon pepper, 1 teaspoon salt, white wine and minced garlic, cover and refrigerate for 1 hour.
  • Cut onions 1/2-inch thick, remove dark exterior of onions, separate into rings and soak in buttermilk for 1 hour.
  • Combine 1 cup of flour, remaining salt, pepper, and garlic, mix thoroughly. In a medium bowl combine beer and 1 cup of flour, mix thoroughly.
  • Remove onion rings from buttermilk, shake off excess, dredge in flour, shake off excess, then dip in beer batter. Drop some onion rings in oil and continue process, being sure not to crowd rings as they will stick together. When golden, remove and let drain on paper towels.
  • Garnish with Parmesan.

140g plain flour

150ml lager

  • Put the onions in a large bowl, pour over the buttermilk and cover with cling film. Leave to soak at room temperature for 30 mins to 1 hr.
  • Put 100g of the plain flour on a large plate and stir in the cayenne with a little seasoning. Drain the onion rings, then coat in the seasoned flour.
  • Half-fill a large saucepan with the oil and heat until it reaches 180C on a probe thermometer (or until a piece of bread crisps in 20-30 secs) or heat a deep fat fryer to 180C.
