GRANDMA'S RUSSIAN TEA
I grew up drinking this tea at my grandmother's house. I now fix it at my house on really cold days, when I am sick (lots of vitamin C!), and at Christmas. It is perfect to let simmer on the stove to make the house smell good and to serve to guests. I have no idea why its called 'Russian' tea; that is just what my grandmother always called it. Use any tea you like. I've used regular black tea, decaf, and cinnamon spice, and it's all great. If using spiced tea, you may want to adjust the amount of cinnamon, cloves, and allspice. This is also great reheated!

Steps:
- Steep tea bags in boiling water until the tea is of desired strength, 4 to 5 minutes. Remove and discard tea bags.
- Combine 1 1/2 quarts water, cloves, and cinnamon together in a large pot; bring to a boil. Stir brewed tea, pineapple juice, sugar, orange juice concentrate, lemonade concentrate, and allspice into the boiling water to dissolve the sugar. Serve immediately or reduce heat to low and keep at a simmer until ready to serve.

RUSSIAN CHERRY TEACAKES
Steps:
- Cream the butter, sugar, and vanilla thoroughly. Sift together the flour and salt, add to the butter, and mix. Fold in the nuts and cherries and chill the dough for 1 hour.
- Preheat the oven to 400 degrees F.
- Roll the dough into 1-inch balls and place on an ungreased cookie sheet (they do not spread as they bake). Bake until set but do not brown, about 10 minutes.
- While still warm but set, roll the cookies in confectioners' sugar and cool. Roll in confectioners' sugar again and bake again for 10 to 12 minutes.
RUSSIAN TEA I

- In a large saucepan, bring 2 cups of water to a boil. Remove from heat, then stir in ground cinnamon, ground ginger, allspice, and ground cloves. Allow mixture to steep for 10 minutes.
- Prepare frozen orange juice concentrate according to the directions on the can.
- Dissolve 1 cup of sugar in 1 cup of water, and stir into spice mixture. Mix in orange juice, lemon juice, and 5 cups water. Heat through. Serve with a garnish of orange zest.

AUNT DOROTHY'S RUSSIAN TEA
When I was growing up I always looked forward to the Russian Tea that my Aunt Dorothy made every Christmas Eve. As soon as the weather turned chilly, I would start longing for a hot, steamy cup. It wasn't unitl I was away at college that I finally thought to ask her for the recipe! I place the whole cloves into a tea ball strainer so they're easy to remove when the tea is ready. - Place cloves and cinnamon stick on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string. Place in a 6-qt. stockpot., Add water; bring to a boil. Remove from heat. Add tea bags; steep, covered, 5 minutes according to taste. Meanwhile, in a small saucepan, combine sugar, orange juice and lemon juice; bring to a boil. Discard spice bag and tea bags. Stir juice mixture into tea. Serve immediately.

We don't like to mess with a good thing, but this creative new take on the Christmas cookie staple offers a genius shortcut (no rolling!) but all the classic flavor!

Steps:
- Heat oven to 350°F. Line 8-inch square pan with foil, leaving foil overhanging at 2 opposite sides of pan; spray foil with cooking spray. In small bowl, mix flour, pecans, baking powder and salt; set aside.
- In large bowl, beat softened butter, granulated sugar and 1/2 cup powdered sugar with electric mixer on medium speed about 1 minute or until fluffy; scrape side of bowl. Beat in egg and vanilla. On low speed, gradually beat flour mixture into butter mixture until well blended. Spread in pan.
- Bake 32 to 37 minutes or until light brown on top and edges. Immediately sprinkle 2 tablespoons of the powdered sugar over top. Cool completely, about 1 1/2 hours.
- Remove bars from pan by lifting foil; peel foil away. Cut into 8 rows by 8 rows. Sprinkle remaining 2 tablespoons powdered sugar over top of bars before serving. Store in airtight container at room temperature.

RUSSIAN TEA WITH FRUIT
This tea uses preserved fruit to give it added sweetness and taste. The lemon helps balance out the sweet. You can substitute strawberry or raspberry preserves if you prefer. - Put tea in a container that will preserve heat and pour 1 cup boiling water over it. Let it steep for 3 minutes.

REAL CITRUS SPICED RUSSIAN TEA (VIDEO)

- In a pot, combine the water, oranges, lemons, cinnamon, cloves, nutmeg and sugar and bring to a boil. Boil for about 5 minutes and remove from heat.
- Add the tea bags into the mixture and allow to steep covered for about 5 minutes. Remove the fruit, spices and tea bags (without squeezing out the bitter tannins out of the bag).
- Taste and adjust sugar to taste. Serve immediately, reheat if necessary.
