Pork Chops in Creamy Champagne Sauce with Rustic Garlic Mashed Potatoes image

4 medium red potatoes, unpeeled and quartered
4 peeled garlic cloves
1/2 cup sour cream
2 tablespoons freshly chopped parsley leaves
Salt and freshly ground black pepper
1 tablespoon olive oil
6 pork loin chops (about 5 ounces each)
1/4 cup chopped shallots
2 teaspoons dried thyme
1 teaspoon dried tarragon
1 cup sparkling wine or dry Champagne
1 tablespoon all-purpose flour
1 cup milk

Steps:

  • Place potatoes and garlic in a medium saucepan and pour over enough water to cover. Set pan over high heat and bring to a boil. Cook 8 minutes, until potatoes are fork-tender. Drain and return potatoes and garlic to pan. Add sour cream and mash until almost smooth (or lumpy if desired). Stir in parsley and season, to taste, with salt and black pepper.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Season pork with salt and black pepper and add to hot pan. Cook 2 minutes per side, until golden brown. Remove pork from pan and set aside. To the same pan, add shallots and cook 2 minutes, until soft. Add thyme and tarragon and cook 1 minute, until fragrant. Add sparkling wine and cook 1 minute. Whisk flour into milk and add to pan. Return pork to pan and simmer 3 to 5 minutes, until pork is cooked through and sauce thickens. Serve 4 pork chops with all of the sauce and mashed potatoes. Reserve remaining pork for rice.

3 1/2 pounds russet potatoes
2 tablespoons kosher salt
16 fluid ounces (2 cups) half-and-half
6 cloves garlic, crushed
6 ounces grated Parmesan

Steps:

  • Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan, add the salt, and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.
  • Heat the half-and-half and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside.
  • Remove the potatoes from the heat and drain off the water. Mash and add the garlic-cream mixture and Parmesan; stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.

6 lbs russet potatoes, unpeeled
1 cup heavy whipping cream
4 tablespoons unsalted butter
5 garlic cloves, crushed
1 shallot, minced
salt & freshly ground black pepper
thyme or rosemary

Steps:

  • Scrub potatoes under running water. Cut into fourths, cover with cold, salted water. Bring potatoes to a boil and simmer until tender, but not falling apart, about 30 minutes. Drain thoroughly.
  • Meanwhile, warm cream, garlic and herb leaves together in small saucepan. Mash warm potatoes together with scallions by hand, using a hand masher. Don't try to get potatoes perfectly smooth, they rustic! Strain warm cream and add to potatoes a little at a time, while continuing to mash. Stir in warm, melted butter. Season to taste with salt and pepper.
  • These work perfectly when made ahead and kept warm on LOW in a GREASED crockpot.

10 large potatoes, peeled and cut into 1 inch cubes
6 garlic cloves (or equivalent)
8 tablespoons butter
2/3 cup whipping cream or 2/3 cup heavy cream
3 ounces cream cheese
2 eggs
1/2 cup minced chives
1 1/2 tablespoons salt
1/2 teaspoon white pepper

Steps:

  • Using a large pot, cover potato cubes and garlic with water.
  • Bring to a boil over medium heat, reduce to low, then simmer until tender and easily pierced by sharp knife (about 30 min).
  • Press potatoes and garlic through a ricer.
  • Stir in the rest of ingredients using a wire whisk.
  • Serve immediately or store in an ovenproof casserole dish.
  • This can be prepared up to a week ahead and frozen.
  • If defrosted warm potatoes at 350°F for 30 minutes.
  • If frozen warm at 350°F for 75 minutes.
  • (Optional Instructions- Bring a large pot of water to a boil. Boil potatoes for about 20 minutes until tender as above. Put potatoes through ricer and combine with all other ingredients including garlic which could have been minced garlic in a jar from supermarket).

2 14 ounce can seasoned chicken broth with roasted garlic
1 cup whole milk
1/4 cup butter
1 teaspoon salt
Freshly ground black pepper
Bay leaves (optional)

Steps:

  • 1. In a 3-1/2- or 4-quart slow cooker, combine potatoes, garlic, and bay leaf. Pour broth over potato mixture. 2. Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours. 3. Drain potatoes in a colander over a bowl to catch the cooking liquid. Remove and discard bay leaf. Return potatoes to slow cooker. Mash potatoes with a potato masher. 4. In a small saucepan, heat milk and butter until steaming and butter almost melts. Add milk mixture, salt, and enough of the reserved cooking liquid to mashed potatoes to reach desired consistency.* 5. To serve, transfer potatoes to a serving bowl. Sprinkle with freshly ground black pepper. If desired, garnish with bay leaves. Makes 12 side-dish servings. 2 heads garlic, separated into cloves and peeled
1 tablespoon olive oil
4 pounds potatoes, peeled and cut into chunks
½ cup half-and-half
4 tablespoons butter, melted
½ (8 ounce) package cream cheese, softened
¼ cup sour cream
salt and ground white pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place garlic cloves in aluminum foil and drizzle with olive oil.
  • Roast in the preheated oven until very soft, about 25 minutes.
  • Meanwhile, place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Mix potatoes, half-and-half, and melted butter until well combined. Add cream cheese, sour cream, and roasted garlic; mix with a hand mixer until well blended. Season with salt and pepper.
