1 tablespoon oil
4 (6 ounce) bone-in, skin on chicken thighs
salt and pepper to taste
1 onion, diced
20 cloves garlic, peeled
2 teaspoons fresh thyme, chopped (or 1 teaspoon dry thyme)
2 tablespoons flour
1 cups chicken broth
1/2 cup asiago cheese (or parmesan), grated
salt and pepper to taste

Steps:

  • Heat the oil in a large sauce pan over medium-high heat, add the chicken (seasoned with salt and pepper) and brown, abut 3-5 minutes per side, before setting aside. Add the onion and garlic and saute until the onions are tender and the everything is lightly browned, about 3-5 minutes. Sprinkle in the thyme and flour and cook for a minute. Add the broth and deglaze the pan by scraping the brown bits off of the bottom of the pan with a spoon while the broth is sizzling when added. Mix the asiago into the sauce and season with salt and pepper to taste. Add the chicken, cover (with a lid or foil) and roast in a preheated 400F/200C oven for 15 minutes OR turn the heat down to medium-low and simmer on the stove top for 15 minutes.

1 cup chicken broth
1/2 cup asiago cheese (or parmesan), grated

Steps:

2 tablespoons extra-virgin olive oil
4 skin-on, boneless chicken breasts (about 11/2 pounds)
Kosher salt and freshly ground pepper
2 heads garlic
4 sprigs fresh rosemary
4 slices sourdough bread, grilled or toasted
2 tablespoons white wine vinegar

Steps:

  • Preheat the oven to 425 degrees F. Heat the olive oil in a large ovenproof skillet over medium-high heat. Season the chicken with salt and pepper and cook, skin-side down, until browned, about 5 minutes.
  • Separate the heads of garlic into cloves but do not peel. Flip the chicken; add the garlic and rosemary to the skillet and transfer to the oven. Roast until the chicken is cooked through but still moist, 15 to 20 more minutes.
  • Place the bread on a platter and top each slice with a chicken breast. Add the vinegar to the skillet and scrape up any browned bits with a wooden spoon. Add 3 tablespoons water and simmer until the sauce thickens slightly, about 2 minutes. Pour the sauce and garlic over the chicken and bread.
  • Tip: You can squeeze the garlic out of its skin and spread on the chicken or bread.

1 head garlic (medium-to-large-sized)
6 tablespoons whole wheat pastry flour
1 tablespoon olive oil
1 tablespoon canola oil
2 cups water or 2 cups vegetable broth
4 -6 teaspoons soy sauce
1 teaspoon dried thyme leaves, crumbled
1 teaspoon dried marjoram

Steps:

  • In a small oven-safe dish, place the garlic and pour on about 1 cm. of water. Put it in the oven or a toaster oven at 350 until the outside is brown and the innermost cloves are soft,25-30 minute Check after 20 minutes to see if you need to add a little more water- it dries up easily!
  • Allow the roasted garlic to cool. Ten slice off the top and squeeze the soft cloves from the skin into a small bowl. Mash the garlic with a fork and set aside.
  • Toast the flour in a medium-sized pot, over medium heat, stirring constantly, until fragrant but NOT browned. Vigorously stir in the oil, then the garlic, with a wire whisk and cook for a couple of minutes on low heat, stirring often.
  • Stir or whisk in the liquid, soy sauce and herbs, stirring till fairly smooth (There'll probably still be chunks of garlic!) Simmer the gravy for 20 minutes, stirring occasionally. Serve hot.

This chicken is my quickly becoming a regular in my DH's and my Sunday dinner rotation. We take turns each week making Roast dinners of some kind, and while this gravy couldn't ever replace Bisto, is sure is close! *Note: A roasting rack that fits your pan it VERY important for this recipe

1 chicken, 5 to 6 pound
1/2 teaspoon fresh ground black pepper
1/2 teaspoon salt
1 teaspoon paprika
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 cup butter
2 tablespoons extra virgin olive oil
1 medium head of garlic
1 (14 ounce) can chicken broth
1 tablespoon cornstarch
3/4 cup water
1/2 tablespoon lemon juice
salt and pepper

Steps:

  • For the Chicken---.
  • Preheat oven to 400°F.
  • Mix the spices in a small bowl.
  • In a separate bowl, melt butter and blend with the olive oil.
  • Clean out the chicken and rinse completely. Put the wings up and back so that the tips of the wings are behind the neck cavity, as if the chicken is scratching it's back. Pat the chicken dry and place on a roasting pan, elevated on a roasting rack in the pan.
  • Cut the top off the head of garlic and remove the excess skin. Place inside the chicken.
  • Pour the oil and butter mixture over the chicken, coating well. Pour the rest in the roasting pan under the chicken on the rack.
  • Rub the Spice mixture all over the chicken, inside and out. It's okay if there is a little spice left over, you don't have to over do it. These spices will blend with the drippings and flavor your gravy too!
  • Place in oven.
  • Baste the chicken completely every 25 minutes until chicken is done. I like to use the pop up timers but if you prefer, the internal temperature should reach 170°F at the thickest point in the thigh, not touching the bone.
  • After the chicken is done, drain it out into the pan, let as much of the juices flow out as possible.
  • Place the roasting pan on a burner on your stovetop and bring the juice to a simmer, scraping all the little brown bits off the bottom with a spatula.
  • Pour in the 3/4 cup of water and bring back to a simmer, continue to stir and scrape the bits up.
  • Meanwhile, blend your cornstarch, lemon juice and broth, making sure there aren't any lumps.
  • Whisk the Cornstarch mixture into the drippings and water, continuing to simmer. Gravy will start to thicken if kept over medium to low heat, be sure you whisk constantly to prevent clumps and to keep the gravy blended. Feel free to add more or less cornstarch until the desired consistency is reached.
  • When the thickness of the gravy meets your satisfaction, pour it into a bowl and season with salt and pepper to taste. You can strain the gravy if you'd like, but I prefer it with the little pieces of chicken.

1/2 teaspoon dried rubbed sage

Steps:

  • Preheat oven to 375°F. Stir 2 tablespoons butter, 2 tablespoons flour and 3 teaspoons chili powder in small bowl to blend. Rub butter mixture all over chicken; sprinkle with salt and pepper. Place chicken in small roasting pan; scatter garlic around chicken in pan.
  • Roast chicken 40 minutes. Transfer garlic cloves to small plate. Return chicken to oven and roast until juices run clear when thigh is pierced with small knife, basting occasionally, about 25 minutes.
  • Meanwhile, peel garlic and mash. Stir remaining 2 tablespoons butter and 2 tablespoons flour in heavy medium saucepan over medium heat 1 minute. Gradually whisk in broth and wine. Add sage, garlic and remaining 1 1/4 teaspoons chili powder. Boil until reduced to 1 cup, whisking occasionally, about 8 minutes. Season gravy to taste with salt and pepper.
  • Transfer chicken to platter. Serve chicken with gravy.
