CRUSTY BROILED TOMATOES

With a crispy, cheesy breadcrumb crust, these Broiled Tomatoes are a beautiful way to show off seasonal tomatoes.With only a few added ingredients, this recipe lets the fresh tomatoes shine as the main component of the dish, their natural flavors complemented by a brush of Dijon mustard and a crust of cheese and breadcrumbs. The tomatoes are broiled just enough to brown the crust, while still maintaining their solid form and juicy bite. To enhance this simple crust and add an extra pop of flavor, feel free to toss the breadcrumb mixture with finely chopped basil or your favorite seasonal herbs. - Preheat broiler with oven rack 5 1/2 inches from heat. Cut tomatoes in half. Spread cut sides with mustard; sprinkle with salt, black pepper, and red pepper.
- Place tomato halves on baking sheet. Combine butter, breadcrumbs, and cheese. Spoon crumb mixture on top of each tomato half.
- Broil 2 minutes or until crumbs are golden brown and tomatoes are thoroughly heated.
GARLIC AND HERB BROILED TOMATOES

- Preheat broiler to medium high.
- Cut plum tomatoes in 1/2 lengthwise. Squeeze or scoop out most of the pulp and seeds. Place the tomatoes flesh side up in a heat safe dish and season them with salt and pepper. In a bowl combine the bread crumbs, Parmigiano, thyme, garlic and olive oil. Season mixture with pepper and sprinkle over the tomatoes. Place tomatoes under the broiler for 5 minutes or until golden brown

BROILED STUFFED TOMATOES

- Preheat the broiler to high, with the rack about 6 inches from the heat source.
- Cut away and discard the core of each tomato. Cut the tomatoes crosswise through the center. Discard the seeds. Sprinkle with salt and pepper.
- Combine the bread crumbs, garlic, parsley and olive oil. Blend well.
- Top each tomato half with an equal portion of the crumb mixture, pressing down with your fingers to distribute the topping evenly. Place the tomatoes under the broiler, and broil for about 5 minutes or until lightly browned and hot.

BROILED TOMATOES
I had these once when I was in the hospital and been making my version of them ever since. Best part is they are not fattening.

Steps:
- Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
- Remove the cores of the tomatoes then cut them in half (horizontally).
- Place cut side up: then rub Olive oil over cut side (use fingertip).
- Sprinkle bread crumbs on next.
- Sprinkle Herb seasonings on and salt/pepper.
- Then place 1/4 teaspoon of unsalted butter on each half.
- Broil until tomato is hot completely.
- ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.
BROILED TOMATOES
Steps:
- Preheat the broiler to high, 500 degrees.
- Cut the tomatoes in half and arrange, cut side up, in a baking dish. Insert 2 garlic slivers in each half.
- Sprinkle with salt, pepper and olive oil. Sprinkle with the cheese.
- Place under the broiler for about 5 minutes until bubbling and the garlic tips start to brown. Remove garlic, sprinkle with basil and serve.
