- Prep broiler. Prep filets by drying them with a paper towel & rubbing 1/2 tablespoon butter per steak over the top & bottom. Salt & pepper the filet as desired. Before preheating the oven, put 4 oven safe ceramic serving plates on the bottom rack in the oven. Move another rack up to the top so when you put the filets in they will be about 5 to 6 inches from the heat. Make sure your broiler is on high, and the heat is good and hot. Oven/broiler should be preheated for at least 30 minutes. Check the filets periodically to ensure they have not flamed up. Cook meat in a broiler pan, turning halfway through cooking, based on desired cooking: Rare: 4-6 minutes/side Medium rare: 5-7 minutes/side Medium: 6-8 minutes/side If you like your meat cooked longer than that....log off this page now. You don't deserve to be reading this recipe. When meat is done, remove ceramic plates from the oven. On each, place 1 tablespoon of butter, which will sizzle. When butter melts, place steak in center of plate. Sprinkle pinch of parsley on top of meat, and another pinch around it onto the butter. Serve dishes sizzling hot.

Love their steaks, and I love their version of this classic side dish to a thick, juicy steak. Sometimes I cheat and use 2 10 ounce packages of frozen, chopped spinach which I thaw and drain.

Steps:
- Melt 4 tablespoons butter in heavy medium saucepan over medium heat.
- Add flour and stir until light golden, about 7 minutes.
- Stir in onion, bay leaf and clove.
- Gradually whisk in milk.
- Whisk until mixture boils and thickens, about 10 minutes.
- Reduce heat to low and simmer 5 minutes longer, whisking frequently (sauce will be very thick).
- Remove bay leaf and whole clove.
- Cook spinach in large pot of boiling water just until wilted and tender, about 2 minutes.
- Drain.
- Transfer spinach to bowl filled with ice water to cool.
- Drain well.
- Roll up spinach in kitchen towl and squeeze out as much liquid as possible.
- Transfer spinach to processor and finely chop.
- Add spinach to warm sauce, simmer over low heat until spinach is heated through, stirring often, about 5 minutes.
- Stir in remaining 2 tablespoons of butter.
- Season to taste with salt and pepper and serve.

- Mix all ingredients together VERY well. Cover and refrigerate. Prepare steak as normal, but cut cooking short on 2nd side by 2-3 minutes. Pack blue cheese mixture on less cooked side of meat and put under preheated broiler (about 3-4 inches away) and cook 2-3 minutes or until blue cheese topping starts to brown up and bubble. Remove steak from oven, tent with foil and let rest 5 minutes.

- In medium mixing bowl, combine cheese, bread crumbs and heavy cream. Mix well with a spatula until all ingredients are fully incorporated, cover and refrigerate. Remove the mixture from refrigerator 30 minutes prior to use. Spread two tablespoons of the mixture on top of your favorite cooked steak (or other meats). Place under broiler for approximately 1 ½ minutes, or until the crust is golden brown. (NOTE - The mixture can be kept for about four days in the refrigerator. It makes enough to coat 6 pieces of meat)
