No-Bake Cookie Dough Balls image

Who doesn't love to eat raw cookie dough? Now you can indulge in this sweet treat without worrying about food-borne illness, and bonus -- they are way healthier than traditional cookies.

Yield About twenty-five 1-inch cookie dough balls

Number Of Ingredients 9

1 cup old-fashioned oats
1/2 cup semi-sweet or vegan chocolate chips
1/2 cup unsweetened coconut flakes
1/2 cup ground flaxseed
1/2 cup peanut butter or sun butter
1/3 cup honey or agave nectar
1 tablespoon chia or hemp seeds
1 teaspoon pure vanilla extract
Dye-free sprinkles, for rolling

Steps:

  • Place the oats, chocolate chips, coconut flakes, flaxseed, peanut butter, honey, chia seeds and vanilla in a food processor and pulse until thoroughly combined.
  • Scoop the dough with a small ice cream scoop then use your hands to roll the mixture into 1-inch balls. Roll each ball in the sprinkles. Serve or refrigerate in an airtight container.

These are so FAST and simple to put together and somehow, when frozen, they taste a lot like cookie dough. Amazingly, these come together nicely when stirring. You will be able to roll them into balls without chilling the dough first. Bet ya can't eat just one!!!! *I'm editing to reflect reviews: You *do* need to like peanut butter as there's no getting around that flavor in this recipe. So if you're a fan of pb and chocolate mixed, Enjoy!!!

2 cups peanut butter (I prefer crunchy, but creamy is fine)
10 ounces sweetened condensed milk
1/2 cup granulated sugar
2 cups semi-sweet chocolate chips

Steps:

  • In a medium bowl, stir together the peanut butter, condensed milk and sugar.
  • Stir in chocolate chips.
  • Roll into 1 1/2 balls.
  • Layer in a freezer-safe container, separating layers with wax paper.
  • These are best eaten 2-3 minutes after pulling them from the freezer.
  • These "dough" balls are safe and ready to eat immediately, but they're best frozen!

Dough balls with garlic butter image

Serve a platter of warm dough balls with plenty of garlic butter. This easy recipe makes a great sharing-style starter for family and friends

50g butter
300g strong white bread flour
7g sachet dried yeast
1 tbsp caster sugar
oil, for the bowl and baking sheet
100g butter
1 garlic clove, crushed
crudités and cured meat, to serve (optional)

Steps:

  • Warm 175ml water in a saucepan until steaming, then add the butter and set aside to cool until warm but not hot. Mix the flour, yeast, sugar and 1 tsp salt in a large bowl or tabletop mixer. Add the cooled water and mix to make a soft dough. Knead for 10 mins by hand, or for 5 mins in a mixer, until the dough feels bouncy and smooth. Return to a clean, oiled bowl and cover with oiled cling film. Leave somewhere warm to rise for 1½-2 hrs, or until doubled in size.
  • Oil a baking sheet. Knock the air out of the dough and knead again for several mins. Take a small piece of dough (about the size of a walnut) and roll it into a ball. Place the ball on the baking sheet and repeat with the remaining dough, spacing the dough balls about ½ cm apart. Cover and leave to rise for 30 mins. Meanwhile, to make the garlic butter, melt the butter in a pan, then stir in the garlic. Season.
  • Heat oven to 180C/160C fan/gas 4. The dough balls should be almost touching by now. Bake for 25-30 mins until cooked through. Brush with some of the garlic butter and leave to cool for 5 mins. Serve with the remaining garlic butter and a selection of crudités and cured meat, if you like.

½ cup crispy rice cereal
½ cup chopped pecans
⅛ cup semisweet chocolate chips
⅓ cup butterscotch chips
½ cup graham cracker crumbs

Steps:

  • In a small saucepan over medium heat, melt together the peanut butter and honey, stirring frequently until warm and creamy. Remove from heat and set aside to cool.
  • In a large bowl, toss together the granola, rice cereal, pecans, chocolate and butterscotch chips and graham cracker crumbs. Stir in the peanut butter mixture. Shape into balls of desired size and refrigerate until serving.
