With little effort and just one skillet, you'll get big applause for 15-minute pork chops. This recipe comes to us from Lisa Saffian of Burbank, California.

4 boneless pork loin chops (6 ounces each)
Coarse salt and ground pepper
1 tablespoon olive oil
1 tablespoon butter
1 medium shallot, minced
1 teaspoon chopped fresh sage or 1/4 teaspoon dried
1/4 teaspoon dried thyme leaves
1/2 cup dry white wine

Steps:

  • Season pork generously with salt and pepper. In a large skillet, heat oil and butter over medium; add pork. Cook until browned and opaque throughout, 3 to 4 minutes per side. Transfer to a plate, and cover loosely with aluminum foil to keep warm.
  • Make sauce: Add shallot to skillet; cook over medium, stirring until softened, 1 to 2 minutes. Add sage, thyme, and wine. Simmer until sauce is reduced to about 1/3 cup, 2 to 3 minutes; stir in any accumulated juices from plate with meat. Transfer chops to plates, drizzle with sauce, and serve with Parmesan Rice.

These chops are so easy to make, but they taste like you've slaved over them for hours! Serve with roasted red potatoes and vegetables, if desired.

2 teaspoons salt
1 teaspoon dried sage
1 teaspoon ground black pepper
6 center cut bone-in pork chops
2 tablespoons butter
1 cup water
2 cubes beef bouillon

Steps:

  • Combine the salt, sage and black pepper in a small bowl and rub on both sides of the chops. Melt the butter or margarine in a large skillet over medium high heat and saute the chops for 5 minutes per side, or until well browned.
  • Meanwhile, in a separate small saucepan over high heat, combine the water and the bouillon and stir until bouillon dissolves. Add this to the chops, reduce heat to low, cover and simmer chops for 45 minutes.

KALE-SMOTHERED PORK CHOPS

2 teaspoons olive oil
2 medium onions, peeled and chopped
6 medium carrots, peeled and cut into 1/4-inch cubes
4 heads kale, stemmed and coarsely chopped (about 8 cups)
4 cloves garlic, peeled and minced
2 1/2 teaspoons caraway seeds, crushed
3 teaspoons kosher salt
Freshly ground pepper to taste
2 cups chicken broth, homemade or low-sodium canned
4 pork chops, 3/4 inch thick

Steps:

  • Heat 1 teaspoon of olive oil in a large skillet, preferably cast iron, over medium heat. Add the onions and cook for 5 minutes. Add the carrots and cook for 5 minutes longer. Mix in the kale, 2 cloves of garlic, 2 teaspoons of caraway seeds, 2 teaspoons of salt and pepper to taste. Stir in the chicken broth, cover and simmer on medium-low heat for 30 minutes.
  • Meanwhile, season the pork chops on both sides with the remaining garlic, caraway seeds, salt and pepper. Heat the remaining olive oil in a large, heavy skillet over medium heat. Add the pork chops and sear until browned, about 2 minutes per side. Place the pork chops on top of the kale mixture. Cover and cook for 20 minutes. Divide the pork chops among 4 plates and spoon the kale mixture over them. Serve immediately.

1/2 cup all-purpose flour
3 eggs
2 tablespoons Worcestershire sauce
4 -6 fresh sage leaves
1 1/2 cups dry breadcrumbs (seasoned or plain)
1/2 cup grated parmesan cheese
4 pork chops
salt and pepper
2 -4 tablespoons vegetable oil
4 cups kale, to taste
2 tablespoons butter
2 slices bacon, chopped
6 -8 green onions, thinly sliced
4 large russet potatoes, peeled and cubed
1/2 cup butter, cut into cubes

Steps:

  • Put the flour on a flat plate. Whisk together the eggs and Worcestershire sauce in a bowl and, in a separate bowl, combine the sage, breadcrumbs and Parmesan.
  • Season chops lightly with salt and pepper. Press a pork chop into the flour, coating the meat evenly, then dip it in the egg mixture, then press firmly to coat in the crumb mix. Repeat this process with all 4 pork chops. Transfer them to a plate and refrigerate until needed.
  • To make the colcannon, cook the kale in a large saucepan of boiling water for 5 minutes. Drain well, chop finely and set aside.
  • Put the 2 tablespoons of butter in a frying pan over medium heat. Add the bacon and cook for 5 minutes, stirring occasionally until the bacon turns golden. Add the green onions and cook for another 2 minutes. Stir in the well drained kale and remove the pan from the heat.
  • Put the potatoes in a large saucepan and cover with cold water. Bring to the boil and cook for 20 minutes, until soft when pierced with a skewer but not breaking apart. Drain the potatoes well and return then to the pan. Add the cubed butter and mash. Stir the kale mixture into the potatoes, adjust seasonings with salt and pepper, cover and keep warm while cooking the pork.
  • Heat the vegetable oil in a large frying pan over medium heat. When hot, add the pork chops and cook for 6-7 minutes, so they gently sizzle in the oil and a golden crust forms. Turn over the pork chops and cook for 5 minutes on the other side. Serve with a generous portion of the kale colcannon.

Another in the New York Times' "Recipes for Health Series" by Martha Rose Shulman. This Irish dish is traditionally eaten around Halloween. This version used kale rather than the more common cabbage.

2 lbs russet potatoes, scrubbed and peeled
salt
1 lb kale, about 1 large bunch, with the ribs removed and the leaves washed
1 1/4 cups low-fat milk
2 tablespoons chopped scallions (about 3 scallions)
fresh ground pepper
2 tablespoons unsalted butter or 2 tablespoons extra virgin olive oil

Steps:

  • Cover the potatoes with water in a saucepan, add about 1/2 teaspoon of salt and bring to a boil. Reduce the heat to medium, cover partially and cook until tender all the way through when pierced with a knife, about 30 to 45 minutes. Drain off the water, return the potatoes to the pan, cover tightly and let steam over very low heat for another 2 to 3 minutes. Remove from the heat and mash with a potato masher or a fork, through a food mill or in a standing mixer fitted with the paddle, while still hot.
  • While the potatoes are cooking bring a large pot of generously salted water to a boil and add the kale. Fill a bowl with ice and water. Cook the kale for 4 to 6 minutes (after the water returns to the boil), until the leaves are tender but still bright green. Transfer to the ice water, allow to cool for a couple of minutes, then drain and squeeze out excess water. Chop fine (you can use a food processor).
  • Towards the end of the potato cooking time, combine the milk and the scallions in a saucepan and bring to a simmer. Remove from the heat and let steep for a few minutes. Stir the chopped kale into the hot mashed potatoes and beat in the milk and butter or olive oil. The mixture should be fluffy (you can do this in an electric mixer fitted with the paddle). Add salt to taste and freshly ground pepper. Serve hot, right away. (Or to keep warm in a double boiler: set the bowl in a saucepan filled one third of the way with water. Make sure the water doesn't touch the bottom of the bowl. Bring the water to a simmer. Stir the potato and kale mixture from time to time. ).

4 teaspoons olive oil
1 garlic clove, thinly sliced
1 small bunch kale (about 7 ounces), leaves torn into bite-size pieces
Coarse salt and ground pepper
1/4 teaspoon dried sage
1 bone-in rib pork chop (6 to 8 ounces)
1 tablespoon fresh lemon juice, plus a wedge for serving

Steps:

  • In a medium skillet, heat 2 teaspoons olive oil over low heat. Add garlic; cook, stirring often, until very tender but not browned, about 10 minutes.
  • Add kale, and season with salt and pepper. Add 3 tablespoons water. Cover; cook, tossing occasionally, until kale is wilted and tender, 10 to 15 minutes.
  • Rub 1/4 teaspoon each coarse salt, ground pepper, and dried sage on both sides of pork chop.
  • Heat 1 teaspoon olive oil in a small nonstick skillet over medium heat. Add pork chop; cook until browned but still juicy, about 3 minutes per side. Transfer to a serving plate.
  • Add lemon juice and remaining teaspoon oil to skillet; bring to a boil. Pour over pork. Serve with kale and a lemon wedge.
