SALISBURY STEAK WITH GEMELLI

- In a large bowl, combine the egg, bread crumbs, Italian seasoning, pepper and garlic. Crumble beef over mixture and mix well. Shape into four patties. , In a large skillet, cook patties in oil over medium-high heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Remove and keep warm. , Drain drippings, reserving 2 tablespoons in the pan. Saute mushrooms in drippings until tender. Stir in flour until blended. Gradually stir in the broth, ketchup and Worcestershire sauce. Bring to a boil; cook and stir for 2 minutes or until thickened. , Return patties to the skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until heated through. Serve with gemelli.

SALISBURY STEAK WITH BROWN GRAVY
Steps:
- Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onion and saute until soft, about 6 minutes. Put 1/2 of the onion in a large bowl and the remainder in another bowl. In the large bowl add the beef, bread crumbs, grill seasoning, Worcestershire sauce and the egg. Mix to combine everything well and form the mixture into 5 oval patties. Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Cook the patties until they are well browned, about 4 to 5 minutes per side. Remove the steaks and pour off all but 2 tablespoons the fat. (The patties will not be cooked through and will finish cooking in the gravy.)
- Put the pan back on the heat, add the mushrooms, and cook for 5 minutes. Add the remaining onions, sprinkle in the flour, and cook for 2 minutes. Add the beef broth and bring it to a boil. Return the patties to the pan, reduce the heat to a simmer and cook until the sauce has thickened and the steaks are cooked through, about 10 minutes. - Mix beef, bread crumbs, salt, pepper and egg. Shape into 4 oval patties, each about 3/4 inch thick.
- Cook patties in 10-inch skillet over medium heat about 10 minutes, turning occasionally, until brown; drain. Add onion, broth and mushrooms. Heat to boiling; reduce heat. Cover and simmer about 10 minutes or until beef is done.
- Remove patties; keep warm. Heat onion mixture to boiling. Mix water and cornstarch; stir into onion mixture. Boil and stir 1 minute. Serve over patties.

- Mix stuffing mix, meat, onion, egg and 1 cup water. Shape into 6 patties.
- Heat oil in large skillet on medium-high heat. Add patties; cook 5 minutes on each side or until heated through and golden brown on both sides. Drain.
- Pour gravy over patties. Bring to boil. Reduce heat to low; cover and cook an additional 5 minutes.

SALISBURY STEAKS
This is one of the best Salisbury Steak recipes I've ever had. It has just enough Zing to tantalize your tastebuds. I always double the sauce part of the recipe so there is plenty of gravy to go around, but you can decide for yourself. Sliced onions can be added on top of the steaks while simmering in the gravy. Serve over rice or mashed potatoes. These also freeze well.

Steps:
- IN A BOWL BLEND: cream of mushroom soup, prepared mustard, Worcestershire Sauce, prepared horseradish.
- IN ANOTHER BOWL MIX: egg, bread crumbs, onion, salt, pepper, 1/4 cup soup mixture from above, and ground meat and mix well.
- Form into 6 patties.
- Brown patties on both sides (turning only once) on top of stove in lightly oiled pan.
- Mix remaining soup mixture with 1/2 cup of water.
- Add to pan.
- Cover and simmer 10-15 minutes or until beef is fully cooked.
