EASY SALMON PIE



Easy Salmon Pie image

4 (6-ounce) center cut salmon fillets, skin removed
1 lemon, zested and juiced
Kosher salt and freshly ground black pepper
4 tablespoons canola oil, divided
1 medium Vidalia onion, chopped
2 cloves garlic, minced
1 cup chopped shiitake mushrooms, stems discarded
2 teaspoons chopped fresh thyme leaves
4 cups washed, dried, and loosely packed fresh baby spinach
1/4 cup sour cream
2 frozen puff pastry sheets, defrosted
Chopped fresh parsley leaves, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Brush both sides of the salmon with 1 teaspoon lemon juice and sprinkle with salt and pepper, to taste. Set aside.
  • Warm 2 tablespoons oil in 2 separate skillets over medium-high heat. Add half of the onion and half the garlic to each pan. Season with salt and pepper, to taste, and saute until tender, about 5 minutes. Stir in the mushrooms and thyme into 1 pan and the spinach, lemon zest and remain lemon juice in the other pan. Stir the spinach until it wilts, then transfer it to a bowl and set aside. Saute the mushrooms until they are reduced and tender, about 5 minutes. Turn off the heat and stir in the sour cream. Set aside.
  • Trim the thinner ends of the salmon fillet so you have 4 pieces of even thickness. Unroll a pastry sheet on a lightly floured surface. Pass a rolling pin lightly over 2 or 3 times to seal the seams and lengthen slightly. Cut the pastry sheet into 3 equal strips, using the natural seams as a guide. Roll out the second puff pastry sheet to get 1 more strip. Save remaining puff pastry for another use. Lightly prick the 4 strips with a fork. Put 1 heaping spoonful of mushroom mixture on 1 half of each pastry, top with salmon, then layer with a heaping spoonful of spinach mixture. Wet the edges of the pastry with water and fold over the other half, pressing lightly and folding to seal the edges. Repeat with remaining pastry and filling. Cut 2 vents on the top of each pastry packet and arrange them on a parchment-lined baking sheet.
  • Bake until the pastry is golden and fish is just opaque in the center, about 25 to 30 minutes.
  • Transfer the pies from the oven to serving dishes and garnish with chopped parsley.

1 tablespoon canola oil
1 bulb fennel, cut into 1/4-inch slices
2 small Yukon gold potatoes, peeled and sliced 1/8 inch thick
Four 5-ounce skinless salmon fillets
1/4 cup white wine
2 tablespoons butter, separated into 4 pats
1 tablespoon minced fresh tarragon
1/4 shallot, finely minced
1 cup pitted manzanilla olives, rinsed, drained and finely chopped
1 tablespoon capers in brine, rinsed, drained and finely chopped
1 anchovy, minced
1 clove garlic, minced
1/4 cup olive oil
2 teaspoons lemon juice
1 teaspoon honey
1 tablespoon minced fresh parsley

Steps:

  • For the salmon: Preheat the oven to 300 degrees F. Bring a pot of water to a boil and season with salt.
  • Put the canola oil in a pan set over medium-high heat. Season the fennel with salt and pepper. Once the oil is hot, add the fennel and cook on one side until golden brown, 2 to 3 minutes. Set aside.
  • Meanwhile, cook the potato slices in the boiling water for 3 minutes, then drain and set aside.
  • Cut 4 pieces of parchment paper into large heart shapes, then fold in half. Lift one side of each parchment heart, put some fennel in the center of the bottom half of each, then shingle the potatoes on top and follow with a piece of salmon. Top each salmon piece with a quarter of the white wine, butter, tarragon and shallots. Season with salt and pepper.
  • Begin to close the parchment pieces by crimping the edges in small folds, continuing to fold over part of the previous fold, until the packets are completely closed. Place the packets on a baking sheet and bake for 15 to 18 minutes, depending on your desired doneness.
  • For the tapenade: While the salmon is in the oven, combine the olives, capers, anchovy and garlic in a bowl. Add the olive oil, lemon juice and honey and mix until combined. Finish with the minced parsley.
  • Open the packets at the table and top each with a spoonful of the tapenade.

1 egg
¼ cup chopped onion
½ cup seasoned dry bread crumbs
1 tablespoon olive oil

Steps:

  • Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
  • Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
  • In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

In Quebec, this recipe is called Pate au Saumon- thus the french name. In English: Salmon Pie. The first time I tried a recipe similar to this, made by my mother-in-law, I didn't like it! Now, with my version, I can't get enough!

4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening or 1/2 cup pure lard
1 cup water
1 cup flour (to roll out dough)
1 (213 g) can salmon, drained and de-boned
8 -10 small potatoes (boiled or steamed)
1/4-1/2 cup butter or 1/4-1/2 cup margarine
1 cup evaporated milk or 1 cup water
1/4 cup fresh chives, finely chopped
2 teaspoons dried basil
salt and pepper

Steps:

  • Crust: mix 4 cups flour, baking soda, baking powder, and salt together in a medium to large mixing bowl.
  • Cut in the 1/2 cup of shortening with pastry cutter, two knives or a fork- until the mixture resembles coarse meal.
  • Add water to the mixture a little at a time, you can use a fork or you hands to mix the flour and water- until all is mixed and is slightly sticky.
  • Roll the dough out on a floured surface and knead until smooth.
  • Cut the dough in half and chill the 2 balls of dough until needed.
  • Filling:.
  • While boiling (40 mins) or steaming (30-40 mins) the potatoes, drain and de-bone the salmon.
  • I personally don't like any bones, no matter how soft they are in my pie!
  • Once potatoes are done and you can insert a fork into them without resistance, drain water (if boiled) and with a hand mixer start to cream the potatoes.
  • Add the butter to the potatoes--as much or as little as you want--and cream together until the butter is melted and evenly distributed.
  • Add the milk a 1/2 cup at a time until the potatoes are smooth and creamy, but not too thin nor too thick.
  • Add the salmon chives, basil, salt and pepper and mix with the mixer or by hand.
  • Add enough salt that you can taste it through the potatoes sufficiently.
  • Roll out the first ball of dough large enough for the bottom and sides of a 13x9x2-inch pan.
  • Line the pan with dough and add mashed potato mixture evenly into the pan.
  • Roll out second ball of dough and place it on top of the filling; cut off excess dough and seal the edges of the pie.
  • Make incisions in the dough like this:/// or like this:+.
  • Bake for 40 minutes at 400°F or until browned on top and on bottom on the middle rack in the oven.
  • Serve right away--we like it with butter melted on top and salt and pepper.

1 1/2 pounds skinless salmon, totally free of bones and cut into two-inch cubes
1 egg
2 cups heavy cream
Salt to taste, if desired
Freshly ground pepper to taste
1/8 teaspoon cayenne pepper
1/3 cup finely chopped chives, optional
1/2 pound shrimp, peeled and deveined
1/2 pound bay or sea scallops
2 tablespoons finely chopped shallots
1 1/2 teaspoons butter
4 thin skinless, boneless fillets of sole, about three-quarter pound
Sauce fines herbes (see recipe)

Steps:

  • Preheat oven to 400 degrees.
  • Put the cubed salmon into the container of a food processor or electric blender. Blend and add the egg. Continue blending while gradually adding the cream, salt, pepper and cayenne. Spoon and scrape the mixture into a mixing bowl. Add the chives, if used, and blend.
  • Cut the shrimp into one-half-inch cubes. If bay scallops are used, leave them whole. If sea scallops are used, cut them into halfinch cubes.
  • Put the scallops, shrimp and shallots in a dry skillet and cook, stirring, briefly until the seafood gives up its liquid. Add the mixture to the salmon mixture and blend.
  • Butter the inside of a loaf pan that measures nine by five by two and three-quarter inches.
  • Split each fillet of sole in half lengthwise.
  • Make a layer of salmon mixture on the bottom of the loaf pan, using one-fifth of the mixture. Top, lengthwise, with two sole fillet halves, placed parallel over the salmon layer. Continue making layers of salmon and sole fillet halves, ending with the salmon mixture. Smooth it over.
  • Cover the loaf pan closely with aluminum foil. Place the loaf pan in a basin of water and bring it to the boil on top of the stove.
  • Place the pans in the oven and bake one hour and 15 minutes. Remove from the oven and let cool. Chill thoroughly before unmolding and slicing. Serve, if desired, with sauce fines herbes.

1 1/2 pounds skinless, boneless fillets of salmon, preferably the tail end, cut into 4 pieces of equal size
4 carrots, about 3/4 pound
1/2 pound fresh mushrooms
2 tablespoons butter
Juice of 1/2 lemon
1/2 cup trimmed scallions cut into 2-inch lengths
Salt to taste, if desired
1 tablespoon finely chopped tarragon
6 tablespoons melted butter or oil for greasing paper or foil rounds
8 teaspoons finely chopped shallots
4 teaspoons dry white wine
Freshly ground pepper to taste

Steps:

  • Preheat the oven to 525 degrees, or the hottest temperature possible. Place a baking sheet in the oven and let heat at least five minutes.
  • Holding the knife at an angle, cut the salmon into very thin slices as if you were slicing smoked salmon.
  • Lay out a length of heavy-duty aluminum foil or nonstick kitchen parchment on a flat surface. Invert a 12-inch round baking dish, such as a cake pan, on the aluminum foil and trace around the pan with a sharp knife to cut away one round. Continue until you have four foil rounds.
  • Scrape and trim the carrots and cut them crosswise into 1-inch lengths. Cut each length into thin slices. Stack the slices and cut them into very thin matchlike strips. There should be about 3 cups.
  • Cut off and discard the bottom of each mushroom. Cut the caps crosswise into thin slices. There should be about 2 cups.
  • Heat two tablespoons of butter in a saucepan and add the mushrooms. Sprinkle with lemon juice. Cook, shaking the skillet and stirring, about 1 minute. Add the carrots, scallions and salt. Cover. Cook 7 to 8 minutes. Add the tarragon and stir. Cover and set aside.
  • Place each round of paper or foil on a flat surface and brush all over with butter. Spoon an equal portion of the carrot mixture slightly off center on each round, leaving an ample margin for folding over.
  • Cover the vegetable mixture with slices of raw salmon, leaving them slightly overlapping but making a compact row that just covers the vegetables. Sprinkle each serving with 2 teaspoons of finely chopped shallots and one teaspoon of wine. Sprinkle with salt and pepper.
  • Fold over each round of foil or paper to completely enclose the filling. Fold and pleat the margins of each round over and over to seal the filling as tightly as possible.
  • Arrange the packages neatly in one layer on the preheated baking sheet. Place in the oven and bake 7 minutes.

2 cups coarse sea salt or kosher salt
1 (1 1/4-pound) center-cut piece salmon fillet

Steps:

  • Spread salt evenly in a dry 10-inch heavy skillet (preferably cast-iron) and heat over moderately high heat until salt is hot to the touch and just beginning to smoke, about 4 minutes.
  • Pat salmon dry and season flesh with salt and pepper, then put, skin side down, on salt. Cook salmon, covered, without turning, until almost cooked through, 8 to 12 minutes. Remove from heat and let stand, covered, until salmon is just cooked through, 1 to 2 minutes.
  • Slide a spatula between salmon skin and flesh and transfer salmon to a platter (salmon skin will be too salty to eat).

4 (5 ounce) salmon fillets
salt and freshly ground black pepper to taste
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 sprigs fresh dill, stemmed
4 slices lemon
½ (8 ounce) container creme fraiche
1 lemon, juiced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut a large sheet of aluminum foil into four 8-inch square pieces. Place 1 salmon fillet on each piece of foil; season with salt and pepper. Drizzle olive oil and balsamic vinegar over fillets. Sprinkle dill fronds on top. Place 1 lemon slice over each fillet.
  • Lift up ends of aluminum foil and fold together to create packets around salmon fillets. Transfer packets to a baking sheet.
  • Bake in the preheated oven until salmon flakes easily with a fork, about 20 minutes.
  • Combine creme fraiche, lemon juice, salt, and pepper in a small saucepan over low heat. Stir until sauce is heated through, 3 to 5 minutes.
  • Open foil packets carefully. Pour sauce over salmon.
