2 pounds cooked salmon, chilled
1 cup small-diced celery (3 stalks)
1/2 cup small-diced red onion (1 small onion)
2 tablespoons minced fresh dill
2 tablespoons capers, drained
2 tablespoons raspberry vinegar
2 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Break the salmon into very large flakes, removing any skin and bones, and place the salmon in a bowl. Add the celery, red onion, dill, capers, raspberry vinegar, olive oil, salt, and pepper. Season, to taste. Mix well and serve cold or at room temperature.

1 salmon fillet (1 pound)
1/2 teaspoon salt
1/2 teaspoon plus 1/8 teaspoon coarsely ground pepper, divided
2 tablespoons lemon juice, divided
4 fresh dill sprigs
1 cup chopped peeled cucumber
1/2 cup reduced-fat sour cream
1/4 cup finely chopped sweet red pepper
1/4 cup snipped fresh dill
3 tablespoons capers, drained
8 cups torn Bibb lettuce
1 medium peach, peeled and sliced
1/4 cup chopped hazelnuts
1/4 cup fresh blueberries
4 thin slices red onion, separated into rings

Steps:

  • Place salmon on a greased baking sheet; sprinkle with salt and 1/2 teaspoon pepper. Drizzle with 1 tablespoon lemon juice; top with dill sprigs., Bake, uncovered, at 425° for 15-18 minutes or until fish flakes easily with a fork. Flake salmon into large pieces., In a small bowl, combine the cucumber, sour cream, red pepper, snipped fresh dill, capers and remaining pepper and lemon juice., Divide lettuce among 4 plates. Top with peach, hazelnuts, blueberries, onion and salmon. Serve with dressing.

This is actually a modification of my parents' tuna salad recipe. I made it yesterday and enjoyed it so much that I just had to share it. You can eat this salmon salad plain, put it in a sandwich (with or without some romaine lettuce), put it on crackers for a party appetizer, serve it over mixed greens as a salad entrée, or put it on a slice of toast with some good Cheddar cheese and stick it in the toaster oven to make a salmon melt. Enjoy!

1 medium pear - peeled, cored, and diced
1 large hard-boiled egg, chopped

36 ounces salmon fillets
1 lb small red potato, halved
8 ounces fresh green beans, trimmed
1 1/2 cups cherry tomatoes, halved
6 cups mixed baby greens
1/2 cup pitted kalamata olive, halved
2 tablespoons white wine vinegar
2 tablespoons course-grain vinegar
1/4 cup olive oil
1/2 teaspoon dried herbes de provence
sea salt, to taste
fresh ground pepper, to taste

Steps:

  • Prepare grill.
  • Place potatoes in enough salted water to cover. Bring to boil over high heat. Cook until tender (approx 10-12 mins). Add beans during last 3-4 minutes. Drain. Rinse with cold water to cool. Set aside.
  • In bowl, whisk together vinegar, mustard, herbes de Provence, salt and pepper, whisk in oil until combined. Brush skinless side of salmon with 2 Tbs. dressing. Grill over direct heat, skin side up, until just cooked (approx 2-3 mins per side).
  • Place greens on serving platter, arrange potatoes, beans, tomatoes, olives and salmon over greens. Drizzle with remaining dressing.
