MEXICAN MEATLOAF
This jelly-roll approach to making meatloaf is really easy and tasty, especially when filled with your favorite cheese and sauces. This Mexican variety includes refried beans and tortillas to make it somewhat of a meatloaf burrito!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix thoroughly the ground beef and taco seasoning; set aside. In a medium saucepan, heat the refried beans over medium low heat until they are completely heated through.
- Place the ground beef mixture on a large piece of foil. Press the mixture into an approximately 1 inch thick square shape. Spread the refried beans evenly over the top of the flattened beef. Layer the flour tortillas on top of the refried beans, trimming the edges to fit the square. Layer tortillas with salsa and Cheddar cheese, staying 1/2 to 1 inch away from edges of the square.
- Gently roll the layered beef into a Swiss roll shape, pressing and compacting the loaf as you go. Pinch and seal the edges. Wrap in the foil and seal.
- Bake in preheated oven 40 to 45 minutes, or until no longer pink in the center. Cut loaf in half to test for doneness, if necessary.

AUTHENTIC SALSA VERDE
This authentic salsa verde is way better than store bought tomatillo salsa. It's so easy to make and very versatile. It tastes just like the salsa verde you get in Mexico! Serve it with tacos, enchiladas, quesadillas, spooned over huevos rancheros, or anything else you want to taste great.

- Preheat your oven to 450 degrees. Wash and cut all veggies. Lay them on a baking tray and drizzle with olive oil and sprinkle with the salt. Roast the veggies for 20 mins or until they are browned.
- Add the roasted veggies to a blender then add the cilantro and lime juice. Blend to your desired level of chunkiness. Give it a taste and add salt as needed.
- Pour into a mason jar or a weck jar for storing in the fridge.

- Place tomatoes and jalapenos in a pot, and cover with water. Bring to a boil, and cook until the tomatoes and jalapenos turn light green, about 15 minutes. Drain well, and place in a blender with the onion, lime juice, salt, pepper, and cilantro. Puree to desired consistency and chill.

- Add the olive oil, parsley, capers, anchovies, garlic and lemon juice to a food processor and blend until smooth. Can be kept refrigerated in a covered container for up to 3 days.

- In a blender, combine onion, garlic, scallions and water. Puree for 2 minutes and slowly add the cilantro and epazote. Slowly add 1/3 cup olive oil. Season with salt and pepper.
BEEF TACOS WITH SALSA VERDE

- Heat the vegetable oil in a large skillet over medium-high heat. Season the beef with the cumin, 1 teaspoon salt and 1/4 teaspoon pepper. Add to the skillet and cook until golden brown, about 3 minutes per side.
- Transfer the meat to a 6-quart slow cooker, then add the salsa, onion and garlic. Cover and cook on high, 6 hours.
- Remove the meat to a cutting board and shred with 2 forks, discarding the excess fat. Return the meat to the slow cooker and stir in the cilantro.
- Serve the meat in tortillas and top as desired. Serve with lime wedges.
SALSA VERDE MEXICAN MEATLOAF
A yummy alternative to traditional meatloaf. I serve this with refried beans and Mexican rice. It's like having a burrito but less messy. You can top with sour cream or guacamole if desired.

- Preheat oven to 350.
- Combine Ground Beef with eggs and a good amount of the Salsa. Start at about ½ a cup and add more as desired. Add green chiles & olives. Add about a teaspoon each of spices or more if desired. Add enough bread crumbs until meat mixture sticks together. Crumble in cheese as desired.
- Grease pan as desired, form loaf in pan. Bake at 350 for 45 mins, and then check for doneness. Depending on your oven and how you shape the loaf this could take another 15-20 minutes.

- Preheat your oven to 190C degrees.
- Spread the meat with the mustard, then roll in the pepper and mustard seeds.
- Heat the oil in a frying pan, and add the beef, turning to brown on all sides.
- Place the beef in a baking dish, and cook for 35-40 minutes or until cooked to your liking.
- SALSA VERDE: Place the parsley, capers, garlic, anchovies, lemon juice and bread in a food processor or blender and work until finely chopped.
- With the motor running, slowly add the oil and continue processing to make a thick paste.
- To serve, slice the beef and serve with Salsa Verde.
LIGHTER MEXICAN MEATLOAF
This is a great combination of Mexican flavors with light ingredients. This is a great make-ahead meal. The meatloaf can be assembled the night before and topped with half of the enchilada sauce, then covered and refrigerated overnight. Throw it in the oven the next day for a quick and easy meal.

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- In a large bowl, mix together the ground turkey, ground chicken, black beans, corn, green chiles, salsa, taco seasoning, bread crumbs, and egg whites until thoroughly combined.
- Form the mixture into a loaf shape and place into the prepared baking dish.
- Pour half the enchilada sauce over the meatloaf.
- Bake in the preheated oven for 45 minutes.
- Remove from oven and pour the remaining sauce over the loaf. Return to oven and cook until the meatloaf is no longer pink inside and the juices run clear, another 10 to 15 minutes.
