Steps:
- Combine all ingredients except cod in a large resealable plastic bag and mix. Add cod. Seal and marinate in refrigerator for 20 minutes. Remove fish from bag: discard marinade. Place fish on a broiler pan or grill pan coated with cooking spray. Broil or grill for 4 minutes on each side or until fish flakes easily when tested with a fork.

- Preheat oven to 350°F.
- Season filets with salt & pepper & place in baking dish. Sprinkle with lemon juice, white wine, and 1 1/2 t olive oil.
- In small bowl, combine breadcrumbs, zest, & 1 T parsley. Sprinkle cod with mixture and drizzle crumbs with 1 1/2 t olive oil.
- Place cod in oven & bake until fish is cooked through (12-15 minutes). Remove from oven and turn on broiler.
- Place fish under broiler to brown breadcrumbs. Remove & serve.

SALT-CRUSTED LEMON-DILL COD FILLETS
A mild, white fish is baked inside a fragrantly thick lemon-dill-infused salt crust to quickly maximize flavor while locking in moisture.

- Preheat oven to 400 degrees F (200 degrees C).
- Pour the containers of Diamond Crystal® Kosher Salt into a large mixing bowl. Add egg whites. Mix well with your hands or by blending with two spoons until the texture resembles moist sand.
- Layer half of the prepared salt on the bottom of a glass 9x13-inch baking dish; pat down firmly. Salt should be about 1/2-inch thick.
- Place the lemon slices edge to edge on top of the salt. You don't want the fish to actually touch the salt or it will absorb too much; the lemon slices will serve as a barrier and a flavor infuser. Save extra lemon slices for serving and garnish.
- Rub the fish fillets with olive oil on both sides, and season well with Diamond Crystal® Kosher Salt and pepper.
- Arrange the fish fillets on top of the lemon slices, making sure no edges touch the salt base.
- Arrange the dill on top so that it covers the fish completely, reserving a few sprigs to chop for garnish. Again, this will serve as a barrier against the salt crust since there is no skin to protect it from absorbing too much salt during baking, as well as give it a bold, tangy flavor.
- Pour the rest of the salt mixture evenly onto the dill, smoothing carefully. Make sure all corners are covered; pat firmly to ensure a proper seal with no cracks.
- Place in middle rack of oven and bake for 15 minutes.
- Let fish rest for 5 minutes, then crack sides of salt crust with a strong knife before prying open.
- Cut each fillet in half. Serve with remaining lemon slices and fresh, chopped dill.

PISTACHIO CRUSTED BLACK COD FILLETS IN A SICILIAN SAUCE
This recipe has been adapted from FoodNetworks Halibut in Sicilian Sauce. I guess any firm white fleshy fish can be used, but I used Black Cod, also known as Sablefish or Butterfish. I always prefer to buy a whole fish and fillet it myself, as I feel that it is fresher and has a better flavor. Then I can make stock out of the bones and freeze away for later use. The sauce is a savory, salty, sweet combination that combines unlikely ingredients creating a lovely marrying of flavors and could probably be prepared a day ahead. As you prepare the sauce, add salt sparingly, since you are adding salty ingredients toward the end of the preparation. I have served this over risotto before, but it is still excellent without starch-stacking.

- Plump sultanas in 1/2 cup of white wine.
- Dip fish fillets in egg white, then coat with nuts and refrigerate while preparing the sauce.
- Begin preparing the sauce by heating olive oil in a large skillet. Add diced onion and fennel and saute until softened and onions have begun to caramelize just slightly. Then add mushrooms, garlic paste, and thyme. Salt lightly to draw out the juices and add pepper to taste. Once mushrooms have cooked down, add remainder of wine, orange juice, orange zest, olives, capers, pine nuts and sultanas including the wine in which they had been soaking. Continue to simmer to allow all the flavors to marry.
- In another skillet, heat about 1 inch of oil until hot enough for frying and gently slide in the fillets. Cook a few minutes on one side, then gently turn and cook a few minutes more. Remove and drain on a paper towel.
- For plating, spoon a generous amount of sauce onto a plate and top with the fillet.

- Preheat oven to 450°. Using a vegetable peeler, remove zest (yellow part only) from lemon in strips. Slice lemon crosswise into thin rounds and set aside.
- Pulse lemon zest, salt, 1/2 cup chopped dill, and coriander seeds in a food processor until well combined. Add egg whites; pulse to blend, occasionally scraping down sides of bowl, until salt is uniformly moist and pale green.
- Line a rimmed baking sheet with parchment paper. Spread one-quarter of salt mixture in center of parchment until 1 inch wider than fish (about 15x6 inches). Place reserved lemon slices and dill sprigs in cavity of fish and lay fish on top of salt bed. Pack remaining salt mixture all around fish, sealing any cracks. (Surface of salt should be smooth and even.)
- Roast fish until a paring knife inserted through crust into the center meets with little resistance and is warm to the touch, 22-25 minutes. Let fish stand for 5 minutes.
