Bears Brat image

Provided by Jeff Mauro, host of Sandwich King

Time 35m

Yield 4 servings

Number Of Ingredients 14

3 medium Granny Smith apples, peeled and thinly sliced
1 yellow onion, thinly sliced
2 cans lager beer, such as Pabst Blue Ribbon
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
8 fresh bratwursts
8 fresh hot dog buns, toasted
Beer Cheese Sauce, recipe follows
2 cups sauerkraut, drained
Dijon mustard, for topping
1 to 2 tablespoons pickled jalapenos, chopped
12 ounces pasteurized cheese product, cubed, such as Velveeta
1 tablespoon Dijon mustard
1/2 cup reserved beer braising liquid, plus more as needed

Steps:

  • Preheat a grill or grill pan to medium-high heat.
  • Add the apples, onions, beer salt and pepper in a medium pot or Dutch oven. Simmer until the apples and onions soften, a few minutes. Add in the brats and simmer until cooked through, about 10 minutes, turning once. Remove the brats from the liquid and reserve the beer braising liquid.
  • Brown the brats on the grill, covering with a metal bowl if using a grill pan, until you get nice grill marks on all sides, 5 to 6 minutes.
  • Place the brats on the buns and drizzle with some of the Beer Cheese Sauce. Top with the sauerkraut, some mustard and the jalapenos.
  • Add the cheese and mustard to a medium saucepan over medium heat. Stir until melted and smooth. Add the beer braising liquid and stir to combine. Add more braising liquid if the sauce is too thick; the sauce should be velvety.

SHEBOYGAN BEER AND BRAT STEW

Sheboygan Beer and Brat Stew image

Since I'm a native of Sheboygan, WI, where beer, brats and cheese are the traditional fare, I felt that I needed to create a dish that reminds me of home.

Provided by Annie Michelle

Categories     Stew

Time 3h10m

Yield 6 serving(s)

Number Of Ingredients 8

6 johnsonville stadium bratwursts
16 ounces beer (I use Budweiser.)
8 baby red potatoes
1 beef bouillon cube (or use packet from a package of beef ramon noodles)
water
10 1/2 ounces cream of onion soup
8 ounces shredded sharp cheddar cheese
pepper

Steps:

  • Slice brats into bite-size pieces and place in a kettle.
  • Pour beer over brats and place in refrigerator to marinate for at least 3 hours.
  • Cut potatoes into bite-size pieces and place inside slow cooker.
  • Add just enough water to cover potatoes.
  • Stir in beef seasoning packet.
  • Stir in Cream of Onion soup.
  • Cook until potatoes are tender. (This will take around 3 hours at the low setting.) Be sure to stir occasionally.
  • When potatoes are tender, heat brats in beer to a rolling boil.
  • Boil for 3 minutes while stirring.
  • Pour about 3/4 cup of boiled beer into potato mixture. (This doesn't need to be measured nor exact. Add to gain the consistency that you desire.).
  • Drain remaining beer from kettle and brown bratwurst pieces.
  • Add cheese to potato mixture.
  • Add browned brats to potato mixture.
  • Add pepper to taste.
  • Stir well and serve.

MIDWESTERN-STYLE BEER BRATS

Midwestern-Style Beer Brats image

A recipe I found on FoodNetwork.com after watching Paula Deen's Home Cooking - Tailgate Time episode.

Provided by lauralie41

Categories     Lunch/Snacks

Time 40m

Yield 6 serving(s)

Number Of Ingredients 9

6 bratwursts
6 cups lager beer
2 large onions, sliced, divided
1 tablespoon olive oil
1 green pepper, cored and sliced
1 red pepper, cored and sliced
salt & freshly ground black pepper
6 hoagie rolls, split lengthwise
mustard, to taste

Steps:

  • Begin by pricking the brats all over with a fork. Using a medium pot add the bratwurst, beer, and half the onions. Bring this to a simmer over a medium high heat for 15 minutes or until brats are firm and cooked through. Place brats on a plate and save some of the cooking liquid.
  • In a large skillet heat oil over medium high heat. Add the rest of the onion and bell peppers and cook for about 15 minutes or until vegetables are soft, tossing pan occasionally. During the last 5 minutes of cooking add brats and lightly brown. If the vegetables are getting to dark add a few tablespoons of the bratwurst cooking liquid. Season to taste with salt and pepper.
  • To serve place brat in bun spread with mustard and top with sauteed peppers and onions.

BRATS IN A BLANKET WITH BEER MUSTARD

Brats in a Blanket with Beer Mustard image

Brats in a blanket take the classic pigs in a blanket appetizer to the next level for dinner! I used fully cooked brats to make this super easy, but fresh brats are delicious if you have time to cook them ahead. Go crazy with your favorite flavors--I used jalapeño-Cheddar brats here!

Provided by Gabriela Rodiles

Categories     main-dish

Time 35m

Yield 8 servings

Number Of Ingredients 10

Nonstick cooking spray, for the baking sheet
One 8-ounce tube refrigerated crescent rolls
8 fully cooked brats, such as jalapeño-Cheddar-flavored
1 large egg
1/2 teaspoon poppy seeds
1/4 teaspoon sesame seeds
1/2 cup IPA beer
2 tablespoons brown sugar
1/2 cup yellow mustard
2 tablespoons coarse-ground Dijon mustard

Steps:

  • Preheat the oven to 350 degrees F. Spray a rimmed baking sheet with nonstick cooking spray.
  • Carefully unroll and separate 8 of the perforated triangles of crescent dough. Starting with the smaller end of each dough triangle, wrap it around a brat and pinch the seams together to totally seal. Place the wrapped brats on the prepared baking sheet.
  • Beat the egg in a small bowl. Brush the brats with the egg and sprinkle the poppy and sesame seeds on top. Bake until the dough is golden brown, 20 to 25 minutes.
  • To make the beer mustard, add the beer to a small saucepan. Bring to a simmer; simmer over medium heat until reduced by half, about 10 minutes. Add the brown sugar and stir until dissolved, about 1 minute. Add the yellow mustard and Dijon mustard to a small heatproof bowl. Pour in the reduced beer and stir to combine.
  • Serve the brats in a blanket with the beer mustard on the side for dipping.
