SHRIMP TACOS

1 jalapeno, sliced
1/2 head green cabbage, thinly sliced
1/2 head purple cabbage, thinly sliced
1/2 cup whole milk
1/2 cup mayonnaise
1 tablespoon sugar
1 teaspoon white vinegar
1/4 teaspoon cayenne pepper
1/4 teaspoon kosher salt
1/2 bunch fresh cilantro, roughly chopped
2 tablespoons vegetable oil
1 1/2 pounds peeled and deveined shrimp, tails removed
One 6-ounce can Mexican tomato sauce or enchilada sauce
1/2 teaspoon ground cumin
1 tablespoon butter
16 corn tortillas, warmed according to the package instructions
Pico de gallo
Avocado slices
Sour cream
Grated pepper jack cheese
Lime wedges

Steps:

  • For the slaw: Combine the sliced jalapeno and shredded green and purple cabbage in a large bowl. In a separate bowl, mix the milk, mayonnaise, sugar, vinegar, cayenne and salt. Pour the milk mixture over the cabbage and jalapeno and toss to combine. (Cover and refrigerate for a couple of hours if you have the time.) Before serving, toss in the cilantro.
  • For the shrimp: Heat the oil in a heavy skillet over high heat. Throw in the shrimp and cook, tossing it around, until opaque, 2 to 3 minutes. Reduce the heat to low and pour in the tomato or enchilada sauce, stirring to combine. Stir in the cumin and cook for another 1 to 2 minutes. Add the butter, then remove from the heat.
  • Serve the warm tortillas with the shrimp, slaw, pico de gallo, avocado slices, sour cream and pepper jack cheese, then let everyone build their own tacos. Be sure to squeeze the lime wedges over the top at the end!

3/4 cup shredded Mexican cheese blend (3 oz)
3/4 cup shredded lettuce
1/4 cup Old El Paso™ taco sauce

Steps:

  • In 10-inch nonstick skillet, heat salsa and bell pepper over medium-high heat, stirring frequently, until warm.
  • Stir in shrimp. Cook 3 to 4 minutes, turning shrimp occasionally, until shrimp are pink.
  • Fill each taco shell with about 1/4 cup shrimp mixture. Top with cheese, lettuce and taco sauce.

1/4 cup minced fresh cilantro
3 tablespoons lemon juice

4 fresh green chilies, such as Hatch or Anaheim, seed and chopped

1/2 lb shrimp, peeled & uncooked, chopped up (31/50's are perfect)
2 limes
1/2 tablespoon Old Bay Seasoning
corn or flour tortilla
purple cabbage, shredded
1/2 cup sour cream
1 chipotle chile in adobo, finely minced

Steps:

  • Mix well sour cream, chipotle and juice from 1/2 a lime in small bowl - set aside.
  • Heat pan well then add oil.
  • Add shrimp and stir fry quickly - the shrimp will cook fast.
  • When almost cooked, sprinkle with Old Bay then squeeze juice from half a lime on top.
  • Give 'em a quick mix and you're done.
  • That's it. I like to put everything out and let people make their own. Put some of the chipotle sour cream on a tortilla, add a little cabbage, add the shrimp and squeeze a little more fresh lime juice over the top.

Adjust amounts to suit your taste — I tend to keep the mangoes at least half of the total volume, usually about two-thirds. If the mixture can sit for a few hours (or even a day or two), it’s even better.
  • Use creme fraiche if you can get it (crema in Mexico is very similar). You could substitute sour cream or mayonnaise if necessary, but they’re not as good. Mix in a little hot sauce (I used Pick-a-Peppa from Jamaica, but choose your own favorite) or a bit of chili powder.
  • Sami used corn tortillas, which add a nice flavor (and they’re healthier than flour tortillas, which can be used). The ones that are about 6″ in diameter are considered “taco size” but you can make larger tacos if that’s all you have. Toast them briefly — Sami did them under her broiler; I do them in a dry HOT skillet for just a few seconds on each side. Don’t get them too crunchy or they’ll break when you eat them!Put them aside until you're ready to assemble.
