RICE BUBBLE CAKES
This was a recipe i loved since second grade. Recently i found my cookbook gain so i would like to share it with all of you, especially with the ones who have kids.

Steps:
- Boil the butter, sugar and honey for 5 minutes.
- Add the rice bubbles and stir until all the rice bubbles are moistened (which takes about 1 minute).
- Spoon the mixture into small paper cases (If you don't have them you may roll them into balls).
- Set it in the refrigerator and serve when cool!
RICE BUBBLE CAKE
One of the things my mum used to make when I was little and now I make it for my kids (and me too) It is really quick and easy and tastes great. I am not sure but I think that what kiwis (new zealanders) call rice bubbles (it's a breakfast cereal), Americans call rice crispies. So I think this may be a variation of rice crispie squares. There is no marshmallow in it.

Steps:
- Melt butter, sugar and honey in a large pot.
- Bring to the boil.
- Boil for 1 to 2 minutes stirring constantly to prevent burning. The longer you cook your toffee for, the crunchier your cakes will be.
- Remove from the heat and working quickly, add rice bubbles and press into a greased tin.
- Mark into squares while still warm.
RICE CAKE

- Preheat the oven to 400 degrees F.
- Cook the rice until the 'al dente' stage as it will finish cooking in the oven. Allow to cool. Heat up 2 tablespoons olive oil in a saucepan. Add the pancetta, salami, and onions. Cook until golden and crispy.
- Cook the peas in a pot of salted water for approximately 2 minutes, or until soft. Add to the pan mixture and toss the ingredients together. Transfer the rice to a large bowl. Add an egg, Pecorino cheese, grated Parmigiano, diced Parmigiano, scamorza, salt, pepper, and the pancetta mixture with all its juices to the rice and thoroughly mix.
- Grease a baking dish with the remaining 2 tablespoons olive oil and sprinkle half the bread crumbs to the base of the pan. Spread the mixture onto the baking pan, packing the mixture so it serves as a solid bed. Sprinkle the remaining bread crumbs on top. Bake for 20 minutes or until the rice cake is golden.
RICE CAKE

- Preheat oven to 170C/fan 150C
- Grease and line a loaf tin with baking paper.
- Cream butter and sugar together until pale and creamy. Beat in the eggs, then fold in all the dry ingredients followed by the milk.
- Place into the loaf tin and bake in the centre of the oven for 1 hour or until a skewer inserted into the centre of the cake comes out clean.
- Leave to cool in the tin for 10 minutes then carefully tip out onto a wire rack to cool completely.
EASY RICE-COOKER FLUFFY CHEESE CAKE RECIPE BY TASTY

- In a medium bowl, combine cream cheese, egg yolk, and pancake mix, whisk using a hand mixer until fully combined.
- Add heavy cream in two parts, whisking well in between.
- In a separate bowl, whisk egg whites until firm peaks form, then add granulated sugar in three parts, whisking well in between.
- Gently fold egg whites into pancake mixture in three parts and stir until fully incorporated.
- Grease rice cooker bowl with melted butter and add cheese cake mixture. Cook for 70 minutes.
- Once cooked turn the cake out onto a plate, splinkle with powder suger.
- Enjoy!

BIBA'S RICE CAKE
This classic Bolognese dessert, brought to us by chef Biba Caggiano, is made from a batter of slow-cooked Arborio rice and crumbled Amaretti di Saronno cookies.

- In a medium saucepan, combine the milk with 1/2 cup granulated sugar and the lemon zest over medium heat, and bring to a boil. Add the rice, reduce heat to medium low, and simmer, uncovered, stirring, until rice is tender and milk has been absorbed, about 40 minutes. During the last few minutes of cooking, stir rice constantly. The rice should have the consistency of a thick porridge. Transfer rice to a large bowl, and cool to room temperature.
- Preheat the oven to 375 degrees. Butter an 8- or 9-inch round baking pan. Sprinkle the breadcrumbs over the bottom and sides of the pan, then turn the pan upside down and shake out excess crumbs.
- Place the amaretti and almonds in the bowl of a food processor, and finely chop, but do not pulverize. Add to cooled rice. In a large separate bowl, beat eggs until thick and pale yellow. Add amaretto; mix well. Add to cooled rice mixture; stir to combine.
- In a medium bowl, beat the egg whites with the remaining 2 1/2 tablespoons sugar until stiff. Fold the egg whites into the rice mixture. Pour the batter into prepared pan, and shake pan lightly to distribute batter evenly.
- Place pan on the middle rack of the oven, and bake until top of cake is golden brown and a thin knife inserted in the center comes out clean, 30 to 35 minutes. Let cool on a rack to room temperature. (The cake can be prepared up to a day ahead. Let cool, cover, and refrigerate. Bring to room temperature before serving.)
- Remove cake from pan, and place on a round serving plate. Sprinkle with confectioners' sugar, and serve.

Crispy rice has a revered place in many cultures. - In a large bowl, gently mix everything except the butter. Over medium-high heat, heat the butter in a large frying pan until it is foaming. (A nonstick pan is good for this purpose but cast iron can work well, too.)
- Working in batches if necessary, and adding more butter as needed, use a large spoon or measuring cup to place a scoop of the rice mixture in the pan. Press down with the back of a spatula to form a patty. Cook 3 to 4 minutes, or until golden and crisp on the bottom. Gently flip patty and cook another 3 minutes or until golden. Keep warm on a paper-towel-covered plate or pan in a warm oven.
