SANGRIA SOUP
Sangria is traditionally made with robust red table wine; for this chilled dessert soup, use a light, fruity red, such as a Beaujolais or a Valpolicella.

Steps:
- Place 2 cups of watermelon chunks in a medium bowl. Add wine, cranberry juice, lime juice, sugar, and honey; let stand 15 minutes.
- Cut remaining watermelon chunks into 1/2-inch pieces; set aside.
- Transfer watermelon-and-wine mixture to a food processor, and pulse until almost smooth, about 30 seconds. Return to bowl; add honeydew, cantaloupe, reserved watermelon, and mint leaves. Stir well, chill, and serve cold.
SANGRIA

- Place the fruit, sugar, and brandy in a 2 to 3 quart pitcher and stir to combine. Set in the refrigerator for 6 to 8 hours. Add the wine and stir to combine. Serve over ice.
SANGRITA

- Combine into a pitcher the tomato juice, orange juice, tequila, lime juice, agave, hot sauce, Worcestershire sauce, onion, chile, and pepper. Stir to combine, cover and refrigerate. In a shallow bowl or plate, combine the smoked paprika and salt. Moisten the rim of the glass with a lime wedge, and dip into the paprika-salt mixture. Put ice into a glass, and pour the mixture over and garnish with a lime slice.;
- Heat 1 tablespoon canola oil in a medium saute pan over medium heat, then add the onion and cook, stirring occasionally, until golden brown and caramelized, about 25 minutes. Let cool before adding to the drink.;
SANGRIA (RED)
Like most of my recipes this is a combination of several others because I couldn't find one that was exactly what I wanted. This has been a big hit every time I've served it.

Steps:
- Stir rum and sugar together in a large pitcher to dissolve the sugar; add apple slices, orange slices, lemon slices, and lime slices.
- Crush fruit slightly against the bottom of the pitcher to squeeze some juice into the rum mixture. Pour wine and orange juice into the pitcher; stir. Add lemon-lime soda and stir just before serving.

SANGRIA
Sangria originated in Spain, and it takes its name from the word "sangre," which means "blood." It should be served as cold as possible. Avoid highly acidic fruits such as pineapple, because they detract from the flavor rather than enhancing it.

- Macerate the fruit: Soak peach, apricot, strawberries, and orange in brandy, Grand Marnier, or Cointreau and a pinch of sugar for up to one hour. In a pitcher with some ice, combine the macerated fruit and liqueur with the remaining ingredients. Mix well, and serve.
SPANISH SANGRIA
This was a recipe I learned while living in Spain in the late 1970s. It's still one of my favorites.

- Mix wine with sugar in a bowl to dissolve. Add vodka, gin, rum, and tequila.
- Cut orange and lemon in half, then into slices. Stir into sangria. Refrigerate for 8 hours, or overnight.
- Add ginger ale. Serve over a lot of ice.

- Put the chopped fruit in a bowl and sprinkle over the sugar and cinnamon, then stir to coat. Cover and leave to macerate in the fridge for at least 1 hr, or ideally overnight.
- Fill a large jug with ice. Stir the macerated fruit mixture to ensure the sugar is dissolved, then tip into the jug with the wine and brandy. Stir, then top up with the sparkling water and serve.
