HOT CORN DIP

Cooking spray or butter, to grease
Two 11-ounce cans Mexican corn, drained
Two 4.5-ounce cans chopped green chiles, drained
2 cups grated Monterey Jack cheese (about 8 ounces)
2/3 cup grated Parmesan
1 cup mayonnaise
Corn chips, for dipping

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- 13- by 2-inch casserole dish. In a medium bowl, mix the corn, chiles, cheeses and mayonnaise until fully combined. Spread the mixture in the prepared casserole dish and bake, uncovered, until bubbly around the edges, 30 to 40 minutes. Serve the dip warm from the oven with corn chips.

It's impossible to resist the smoky, spicy allure of the corn dish sold by street vendors throughout Mexico and parts of Central America often referred to as simply, "elotes." It commonly consists of roasted corn slathered with mayonnaise and topped with cheese, chile powder and lime. The addition of cream cheese and sour cream turns that winning flavor combo into a delicious dip. Salty, crumbly feta stands in for the more traditional Cotija.

1 tablespoon canola oil
5 ears fresh sweet corn, shucked
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 cup crumbled feta cheese
1 jalapeño, seeded and finely chopped
1 scallion, chopped
1 teaspoon ground cumin
1/2 teaspoon chili powder, plus more for garnish
1/2 cup cilantro leaves, finely chopped, plus whole leaves for garnish
Kosher salt and freshly ground black pepper
Blue corn tortilla chips, for serving

Steps:

  • Heat the oil in a large cast-iron skillet over medium-high heat. Add the corn and cook, turning occasionally, until bright yellow all over and charred in spots. Alternatively, you can cook the corn on the grill. When the corn is cool enough to handle, cut the kernels off the cobs and let them cool completely.
  • Meanwhile, combine the cream cheese with the sour cream, mayonnaise, 3/4 cup of the feta, the jalapeño, scallion, cumin, the 1/2 teaspoon chili powder and chopped cilantro in a large bowl. Fold the corn kernels into the dip. Season with salt and pepper. Garnish with the remaining feta, cilantro leaves and chili powder. Serve with blue corn tortilla chips.

1 (4 pound) lean raw corned beef brisket
3 tablespoons pickling spice
2 stalks celery, cut into halves
1 pound carrots, cut into 4-inch pieces
1 ¼ pounds red potatoes, quartered
1 onion, sliced
1 head Savoy cabbage, cut into 6 wedges
1 (12 fluid ounce) can or bottle Irish stout beer
hot water, as needed
⅓ cup grated horseradish, drained
⅓ cup sour cream

Steps:

  • Place the corned beef into the bottom of a large slow cooker.
  • Scatter the pickling spice over the brisket.
  • Layer the celery, carrots, potatoes, and onion atop the brisket, respectively.
  • Pour the stout beer into the slow cooker. Add enough hot water to the slow cooker to cover the brisket by at least 1 inch.
  • Cook on High until the brisket reaches the desired consistency, 7 to 8 hours.
  • Remove the brisket and vegetables from the slow cooker to a large bowl; cover with aluminum foil to keep warm.
  • Remove 1 cup of the liquid in the slow cooker; pour into a small pot over medium heat. Cook the liquid until the volume is reduced by about half, about 10 minutes. Transfer the reduced liquid to a small bowl; stir the horseradish and sour cream into the liquid to make a sauce.
  • Submerge the cabbage wedges in the liquid remaining in the slow cooker; cook until the cabbage softens yet retains some crispiness, 20 to 30 minutes. Remove the cabbage to a platter. Ladle remaining liquid from the slow cooker into a bowl.
  • Slice the brisket across the grain. Serve with the vegetable mixture, cabbage, horseradish sauce, and liquid from the slow cooker.

2 large red bell peppers
2 tablespoons tomato paste
2 tablespoons mayonnaise
1 tablespoon sour cream
2 teaspoons vinegar
1 clove garlic
⅛ teaspoon cayenne pepper
salt to taste

Steps:

  • Preheat oven to broil.
  • Place the bell peppers on a baking sheet and broil on the top rack of the oven, using tongs to turn them as each side blackens. Place the blackened peppers in a plastic bag, tied loosely with some air inside, for 15 minutes. Remove the stems and peel the peppers. Discard the cores and seeds. Cut peppers into wide strips.
  • Add the peppers, tomato paste, mayonnaise, sour cream, vinegar, garlic, and cayenne pepper in the bowl of a food processor. Pulse until almost smooth, 7 or 8 times. Salt to taste, if needed.
  • Refrigerate until ready to serve.

If you make this dip for a party, you will be the star of the show. Every time I've made this, it's gone within minutes. This will blow your mind and it's super easy!

1 (1 7/8 ounce) package knorr's leek soup mix
2 cups sour cream
1 cup mayonnaise
1 (300 g) package frozen chopped spinach, thawed and squeezed of any water
1 (10 ounce) can water chestnuts, chopped
3 green onions, chopped
fresh pepper
1 large sourdough loaf (round)
your favorite bread, for dipping

Steps:

  • Combine all the ingredients in a large bowl, and refrigerate at least 3 hours. Don't be impatient--it will taste better.
  • Hollow out the sourdough bread using the removed chunks for part of the dippers and transfer the dip from the bowl to the bread bowl.
  • Watch it get gobbled up!

2 (11 ounce) cans Mexican-style corn, drained
1 canned diced green chiles, not drained (2 oz)
1 (2 ounce) can chopped jalapeno peppers, partially drained
1 cup mayonnaise
1 cup sour cream
2 cups shredded cheddar cheese

Steps:

  • Mix all ingredients together and let chill to blend flavors about 2 hours. (If you like it spicier, don't drain the jalapeno's at all).
  • Serve with Frito's scoops. Makes a lot so invite friends!
  • Cook time = chill time.
