Prosciutto Pasta with Peas and Parmesan Cheese - simple and quick recipe, only 30 minutes from start to finish. This easy, delicious, and very Italian pasta makes a perfect weeknight dinner!

8 oz pasta (penne)
1 cup green peas (frozen)
3 oz prosciutto
4 tablespoons butter
1/2 teaspoon black pepper (ground or freshly cracked)
1 cup Parmesan (shredded)
1/8 teaspoon salt (to taste)

Steps:

  • Cook pasta in boiling water until al dente. During the last 5-7 minutes of cooking, add frozen peas and continue boiling both the pasta and frozen peas for 5-7 more minutes. Drain. Reserve 1/2 cup pasta water.
  • Tear prosciutto into smaller pieces.
  • In a large skillet, heat 2 tablespoons butter on medium heat. Add the torn prosciutto and stir to coat it with butter, for about 1 minute. Add black pepper. Add another 2 tablespoons of butter and stir until melted.
  • To the skillet with butter and prosciutto add drained cooked pasta with peas. Sprinkle 3/4 cup shredded Parmesan cheese evenly over pasta. Stir everything together on medium heat until the cheese melts. If needed, add a small amount of pasta water (about 1/4 cup) - but you might not need to.
  • Season with salt, if needed. Serve immediately, topped with the remaining 1/4 cup shredded Parmesan cheese

1 (1-pound) bag frozen peas, thawed

Steps:

  • Heat the oil in a heavy large skillet over medium-low heat. Add the shallots, garlic, salt, and pepper, and saute until tender, about 1 minute. Add the peas and saute until heated through, about 5 minutes. Stir in the prosciutto and cook for 1 to 2 minutes. Add the parsley and remove from the heat. Season, to taste, with salt and pepper, and serve.

12 green onions, sliced
1 shallot, finely chopped
1/2 cup white wine or reduced-sodium chicken broth
1/2 cup reduced-sodium chicken broth

1/8 teaspoon pepper
1 head Boston lettuce, cut into 3/4-inch slices
2 cups fresh or frozen peas
1 cup grated Parmesan cheese
4 ounces thinly sliced prosciutto or deli ham, cut into 1/2-inch strips
Additional Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions for al dente., Meanwhile, in a large skillet, heat butter and 2 tablespoons oil over medium-high heat. Add green onions and shallot; cook and stir until tender. Stir in wine. Bring to a boil; cook and stir 6-8 minutes or until liquid is almost evaporated., Add broth, salt and pepper. Bring to a boil. Reduce heat; stir in lettuce and peas. Cook and stir until lettuce is wilted. Drain pasta; add to pan. Stir in cheese and prosciutto; drizzle with remaining oil. If desired, top with additional Parmesan cheese.

1 pound thin-skinned potatoes
16 ounces whole onion or 14 ounces chopped, ready-cut onion (3 1/3 cups)
2 teaspoons olive oil
Few sprigs fresh sage to yield 1 tablespoon chopped
2 ounces thinly sliced prosciutto
2 cups frozen peas
1/2 cup no-salt-added beef stock
1/4 teaspoon salt
Freshly ground black pepper

Steps:

  • Scrub potatoes; do not peel. Slice about 1/4-inch thick, and cover with water. Cover pot, bring to a boil and cook about 10 minutes, until potatoes are tender.
  • Chop whole onion.
  • Heat a nonstick pan until it is very hot; reduce heat to medium high, and add oil. Stir in onions, and sauté until they soften.
  • Wash, dry and chop sage and add to onions when they begin to soften.
  • Slice prosciutto into thin strips, and add to the onion with the peas and stock; cover, and cook over low heat for a couple of minutes, until peas are tender.
  • Meanwhile, drain potatoes; cut into chunks, and stir into the pan as peas cook. Season with salt and pepper.

This is nice twist on the common creamed peas and potatoes. It is lighter and fresher, but there are a few key ingredients. To me using these ingredients really makes this dish. First, I like to use red potatoes, they hold together better than russet or yukon gold; frozen baby peas (nothing canned); proscuitto right from your grocers deli (boiled or baked ham just doesn't the same taste); fresh parsley to give it that fresh taste; olive oil (not butter); and good parm (no green can). And by buying the proscuitto right from your grocers deli vs pre-packaged you are buying only what you need which saves money. Garnish with good olive oil, parmesan, and fresh ground black pepper makes this a great side dish. My favorite is to serve this with grilled steak, but it is a nice compliment to any recipe.

4 cups red potatoes, peeled and diced (approximately 1/2-3/4-inch cubes)
2 cups frozen baby peas, thawed
1/4 cup prosciutto, diced fine
2 scallions, diced fine
4 -5 cups chicken broth, enough to cover the potatoes
1 tablespoon fresh parsley, fine chopped
2 teaspoons olive oil, add more if necessary (extra virgin if possible)

Steps:

  • Potatoes -- I like to cook the potatoes in a medium sauce pan vs a pot. I think that cook quicker and more evenly. Heat up the broth and potatoes on medium heat and cook the potatoes until almost tender. I can't give you an exact time as it will depend on the size of your diced potatoes and also the size of your pan. They should take around 10 minutes.You don't want them to fall apart - almost tender.
  • Peas -- Add the peas to the potatoes, right at the end of cooking before you drain them; they take just a few seconds to warm up.
  • Finish -- Drain the potatoes and peas well and return to the pan, but make sure the heat is turned off. Add the scallions, proscuitto, parsley, salt (go easy - the proscuitto and parmesan are both salty), plenty of ground black pepper, and the olive oil and lightly toss. The heat of the pan and the potatoes is enough to warm up the scallions and proscuitto.
  • Serve -- Transfer to a serving bowl and garnish with grated parmesan cheese and a drizzle of olive oil. ENJOY!

freshly grated Parmesan to taste

Steps:

  • In a large kettle of boiling salted water cook the potatoes, cut crosswise into 1/4-inch-thick slices or into 1/4-inch dice, for 5 to 7 minutes, or until they are tender, and transfer them with a slotted spoon to a bowl, reserving the water for cooking the fettuccine. In a large heavy skillet cook the garlic, the onion, the red pepper flakes, and the rosemary in the oil over moderately low heat, stirring, until the onion is soft and add the broth, the wine, and the peas. Simmer the mixture for 3 minutes, or until the peas are tender, and stir in the prosciutto, the potatoes, the parsley, and salt and pepper to taste. Bring the reserved water in the kettle to a boil and in it cook the fettuccine until it is al dente. Drain the pasta and in a large bowl toss it with the potato mixture and the Parmesan.

1/2 cup heavy cream
4 tablespoons unsalted butter
Salt and pepper
Freshly grated nutmeg
1 1/2 cups shelled peas, or snow peas
Fresh egg noodles (see recipe)
4 slices prosciutto (about 2 ounces), cut into 1/4-inch ribbons
1 tablespoon finely cut chives
Grated Parmesan cheese, for serving

Steps:

  • Bring a large pot of well-salted water to a boil. Put crème fraîche, cream and butter in a wide, deep skillet over medium heat. Turn off heat as soon as mixture is hot, and stir to incorporate. Season with salt and pepper and a little nutmeg.
  • Plunge peas in boiling water and let cook for 1 minute. Remove with a mesh spider or slotted spoon and add to cream mixture.
  • Drop noodles in boiling water and cook until they rise to the surface, about 1 minute. Taste a noodle to see if it is sufficiently cooked. It should be firm-tender, just past al dente.
  • Drain pasta and add to skillet. Sprinkle with prosciutto and chives, then toss gently to coat with sauce. Divide among warmed bowls and serve immediately. Pass grated Parmesan at table.
