SAUTEED SPINACH WITH TOMATOES
Sauteed Spinach with Tomatoes is a simple and easy dish that's ready in minutes! This recipe makes a wonderful side dish that will compliment any meat, poultry and seafood, and will soon become a new favorite!

Steps:
- In a medium-size skillet, heat olive oil and add the garlic. Simmer on low heat for a few minutes, stirring until the garlic is translucent, about 2 minutes.
- Add in the diced tomato and saute for a few minutes, until it softens. Season with a little salt and pepper, to taste.
- Toss in the baby spinach, and cover with a lid. Simmer for a few minutes. Remove cover and stir the spinach to infuse all the flavors together. Spinach will be done as soon as it wilts.
- Taste, and season with salt and pepper to taste. Turn off heat and transfer to a serving plate and serve.

Steps:
- Heat ghee in a large skillet over medium-high heat. Add scallions, chiles, garlic, and mustard seeds. Cook, stirring often, until garlic begins to brown and mustard seeds pop, about 1 minute. Add spinach to skillet by the handful, allowing it to wilt between additions. Cook, tossing often, until spinach is tender, 5-8 minutes. Season with salt and pepper.

- Heat oil in large skillet on medium heat.Add tomatoes; cook and stir 1 minute. Add spinach; cook and stir 2 minutes or until spinach is slightly wilted.

SPINACH AND TOMATO RISOTTO
Steps:
- Bring veggie broth, water, and reserved tomato juice to a simmer in a sauce pan. Heat oil over medium heat in a very large skillet or paella pan. Add onion and garlic and saute for 3-4 minutes or until softened. Add rice. Cook for 2 minutes, until grains are well coated with oil. Add wine. Stir almost constantly until wine is mostly evaporated. Add about a 1/2 cup of the simmering broth. Stir until almost evaporated. Keep adding 1/2 cup of broth at a time and stirring until evaporated each time before adding more broth. Continue this for about 30-40 minutes, adjusting the heat on the risotto to keep it lightly bubbling and on the broth to keep it lightly simmering (keep an eye on the amount of broth, and throw in some more water or broth if you start to run low). When the rice is a few minutes past al dente, add the tomatoes and cook for 3 minutes. Add the spinach in batches, stirring to mix in and cook down. Turn off the heat and stir in the cheese. Salt and pepper to taste.
SARASOTA'S SPICY SPINACH AND TOMATO SAUTE
This is such a quick easy dish. Sauteed in one pan and tossed all together, this dish gets a little kick from red pepper flakes. Toss some crumbled feta in, and this is a wonderful dish. I have also added in black olives many times for even another taste. I love to use the yellow pear tomatoes in this, but I know in many places they are difficult to find. Local farmers markets and Whole Foods or a similar grocery store often carries them.

Steps:
- Onions and Garlic -- In a large saute pan, add the olive oil and bring to medium heat. Add in the garlic and onions and cook 2-3 minutes just soften them up.
- Tomatoes -- Add in the tomatoes and cook until they become soft and they are just starting to pop. Don't let them get too over done.
- Spinach -- Add in the spinach and stir until slightly wilted (just a minute or two), then add in the balsamic vinegar, salt and pepper. Toss to combine.
- Serve -- Just add to your serving bowl and add the feta cheese just to combine and enjoy!
