Steps:

  • For the sauce - Lightly drain the sardines and anchovy fillets and tip them into a food processor. Add the whole tomatoes, capers, chilli, basil leaves and 8 table spoons of olive oil. Blend on high for about 30 seconds or until the mixture is smooth.
  • Heat 1 table spoon of olive oil in a frying pan and lightly fry chopped onions and frozen peas. You are really only softening the onion and heating the peas so this will only take 6 or 7 minutes.
  • Meanwhile, cook pasta according to instructions on the packet.
  • Transfer all the ingredients to a large bowl and using tongs or 2 forks or 2 spoons, gently combine everything until the pasta is generously coated in the sardine sauce and the onions and peas are evently distributed. Sprinkle with grated parmesan and serve immediately

Pasta de Sardine image

A great pasta dish for those who like seafood with their pasta. This dish is not only fast and easy to prepare, it is delicious and it is of regional Spanish-Italian authenticity. Red wine or beer is the beverage of choice.

Provided by SONNYCHIBA

Categories     World Cuisine Recipes     European     Italian

Time 25m

Yield 4

Number Of Ingredients 8

8 ounces dry fettuccine pasta
2 tablespoons olive oil
1 medium yellow onion, chopped
3 cloves garlic, crushed
1 lemon, juiced
1 (3.75 ounce) can sardines in tomato sauce
1 pinch red pepper flakes, or to taste
¼ cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for about 8 minutes, or until almost tender.
  • While the pasta is cooking, heat olive oil in a skillet over medium heat. Add the onion, and cook for a few minutes until soft, then add the garlic, and cook until fragrant. Stir in the sardines with their sauce. When the sardines heat through, reduce heat to low, and simmer until the pasta is ready.
  • When the pasta is almost done, drain, and add it to the sardine sauce. Stir, cover, and turn the heat off. Let stand for a few minutes to absorb the flavors of the sauce. Squeeze juice from the lemon over the pasta. Divide onto serving plates, and top with red pepper flakes and grated Parmesan cheese.

PASTA WITH SARDINE SAUCE

Pasta With Sardine Sauce image

Pasta con le Sarde This is a classic Sicilian dish from Palermo, created when the Saracens ruled Sicily. Sicilians would use the fennel that grows wild in the lava-rich soil which is a more intense taste than the cultivated. This recipe from www.inmamaskitchen.com

Provided by Phil Franco

Categories     European

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 11

2 lbs fresh sardines
1 1/2 lbs fennel bulbs, thickly sliced
1/2 cup olive oil
2 onions, finely sliced
4 anchovy fillets
1/2 cup pine nuts
1/2 cup golden raisin
1 dash saffron
salt and pepper
1 lb bucatini pasta
1 cup breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Remove heads and tails from half the sardines. Cut in 1 inch pieces. Leave second half intact.
  • Wash and trim fennel. Put into pan with about 8 cups cold, salted water. Bring to a boil and cook until tender, about 5- 8 minutes. Remove with slotted spoon, drain in colander, then gently squeeze out water. Chop roughly. Reserve cooking water.
  • Heat 1/4 cup oil in frying pan. Sauté onions over medium heat until golden. Add chopped sardines and anchovies. As they cook, crush sardines with back of spoon to make a thick paste. Add pine nuts, raisins, saffron, salt and pepper.
  • In a separate pan, heat remaining oil and lightly sauté the fennel, removing to a separate bowl. Sauté the remaining whole sardines. Cook until tender, about 10 minutes, turning once gently to not break sardines.
  • Using fennel water, boil pasta until al dente, about 10 -= 12 minutes. Drain. Put in bowl and dress with half the sardine sauce.
  • Put a layer of dressed pasta in an ovenproof casserole. On top of that, put a layer of fennel, then a a layer of whole sardines with additional sauce. Continue until ingredients are used up, ending with a layer of bucatini. Cover with breadcrumbs. Sprinkle breadcrumbs over top. Cover and bake in preheated 350°F oven 15 - 20 minutes.
  • Pasta may be served hot or cold.

PASTA WITH SARDINES AND FENNEL

Pasta With Sardines and Fennel image

This traditional Sicilian dish makes a festive main course, especially when served from a giant platter. Sweet and savory flavors mingle beautifully here, with currants, raisins, saffron and pine nuts. Aromatic wild fennel fronds and fresh sardines are preferred, but even if made with cultivated fennel and canned sardines, this is a magnificent dish.

Provided by David Tanis

Categories     pastas, main course

Time 1h

Yield 6 servings

Number Of Ingredients 21

1 cup coarse dry bread crumbs
Extra-virgin olive oil
Salt and pepper
Pinch of sugar
2 ounces fresh bushy fennel fronds, wild or cultivated, about 1 large handful
1/2 cup golden raisins
1/2 cup currants
1/2 cup white wine
1/2 teaspoon crumbled saffron
1 large onion, diced (about 2 cups)
2 small fennel bulbs, diced
4 anchovy fillets, roughly chopped
1/2 teaspoon fennel seeds, ground
1/2 teaspoon coriander seeds, ground
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
6 very fresh sardines (about 1 pound), cleaned and filleted (you will have about 6 ounces fillets; see note), or substitute large best-quality canned sardines, drained
1 pound bucatini or thick spaghetti
1/4 cup lightly toasted pine nuts
2 tablespoons chopped parsley
Lemon wedges, for garnish

Steps:

  • In a small skillet, toast bread crumbs in 2 tablespoons olive oil until golden. Season with salt and pepper and a pinch of sugar. Set aside.
  • Simmer the fennel fronds in a large pot of salted water until tender, about 10 minutes. Remove and spread out on a platter to cool. Do not discard cooking water. When fronds are cool, chop finely with a large knife (or pulse in a food processor with a little of the cooking water).
  • Put raisins and currants in a bowl and cover with the white wine and 1/2 cup hot fennel-cooking water. Add crumbled saffron and let ingredients steep together for 10 minutes.
  • In a large skillet, stew the onions and diced fennel in 6 tablespoons olive oil over medium heat until softened, about 10 minutes. Season generously with salt and pepper. Add anchovies, ground fennel and coriander seeds, garlic and red pepper flakes and cook for 2 minutes more. Stir in reserved fennel fronds. Add the raisin mixture and its liquid and bring to a simmer.
  • Season the fresh sardine fillets with salt and pepper and lay them on top of the onion mixture. Put a lid on the pan and turn off the heat for about 5 minutes, so sardines cook through and are just done. Stir to distribute chunks of fish throughout mixture. (If using canned sardines, skip this step and simply stir them in.)
  • Boil the bucatini in the fennel cooking water (add more water to the pot if necessary). Cook until noodles are on the firm side of al dente, then drain, reserving 1 cup of pasta water. Add pasta to pan with onion-sardine mixture, sprinkle pasta lightly with salt and gently toss together, adding a little pasta water to keep everything well moistened. Taste and correct seasoning; it should be well seasoned.
  • Transfer to a large platter or wide pasta bowl. Sprinkle with bread crumbs, pine nuts and parsley. Garnish with lemon wedges. Add a drizzle of olive oil, if desired.

  • Grilled Sardines with Aioli. Sardines can be a hard sell—but not when paired with this aioli. View Recipe.
  • Easy Homemade Caesar Dressing. Embrace the anchovy. Not only are anchovies essential for a classic Caesar, they provide a tangy, salty, rich flavor that this dressing couldn’t get otherwise.
  • Carrot Salad with Feta and Anchovies. The marinated white anchovies make this carrot salad stand out by adding a nice vinegary bite (if you opt for regular anchovies, season with less salt), and those little fishes are good for you, too!
  • Charred Asparagus with Citrus Bagna Cauda. The one-two punch of citrus zest and juice balances all that anchovy richness in our new favorite dressing for spring veg.
  • Toast with Tomato Jam, Boquerones, and Lemon Oil. Even so-so tomatoes will become sweet and deliciously concentrated after this treatment. View Recipe.
  • Anchovy Pasta with Garlic Breadcrumbs. Memorize how to make the addictively crunchy breadcrumbs in this dish; use them to top all your pasta recipes forevermore.
  • Caesar-Style Puntarelle. Puntarelle is a crisp, spiky Italian green related to chicory. If you can get it, you’re in luck. If not, escarole is a great substitute.
  • Spaghetti with Tomatoes and Anchovy Butter. A very simple pasta, made complex thanks to the anchovies. View Recipe.
  • Spicy Marinated Vegetables and Sardines on Toast. Don’t let the veggies hang out in the vinegar for too long. You want them to stay crunchy! View Recipe.

CAN I SUBSTITUTE SARDINES FOR ANCHOVIES IN A RECIPE?
2021-10-11 Sardines are a type of fish that have been substituted for anchovies in many recipes. This is because they taste similar and can be used as an alternative to anchovies. There is no noticeable “fishy” taste when the anchovies are cooked in the sauce. It leaves a delicious taste that conceals the fishiness. Sardines aren’t a great replacement.
