1 cup butter
6 tbsp soy sauce
4 tbsp catsup
2 tbsp Worcestershire sauce
2 tbsp mustard powder
2 clove garlic, crushed

Steps:

  • 1. Add butter, soy sauce, ketchup, Worcestershire sauce, dry mustard and garlic to a small saucepan. Simmer and stir. 2. Keep warm until dinner. Serve with beef.

World Famous Horseshoe Sandwich image

"Horseshoes" are a Springfield, Illinois original, first created by the chef at the "The Red Coach" for his luncheon clientèle. The story goes that he had a lot of extra cheese sauce left over one day and decided to throw it over the "chopped steak" and gravy sandwiches the patrons were always ordering. He added some shoestring potatoes on top, and a sensation was born! This recipe is a update of the original (which called for a whole cup of flour!) and your family will positively beg for more. Don't skimp on the cheese sauce. If your appetite is smaller, cut this in half. Then you have what we call around here, a "pony shoe"!

1 1/2 lbs ground beef
1 (28 ounce) package frozen french fries (or homemade)
6 pieces Texas toast thick bread or 6 pieces other thick bread
1/4 cup butter
1/2 cup flour
4 cups milk
2 lbs Velveeta cheese or 1 1/2 lbs sharp cheddar cheese
1 (12 ounce) can evaporated milk
2 -3 teaspoons Worcestershire sauce
2 -3 dashes hot sauce
salt and pepper (taste before adding)

Steps:

  • SANDWICH PART: Form 6 hamburgers and season to taste.
  • Cook them, trying to keep them as evenly flat as you can.
  • Keep warm.
  • Begin to fry french fries.
  • Keep warm.
  • Toast bread until crisp.
  • SAUCE: Melt the butter in a heavy saucepan.
  • Stir in the flour.
  • Cook, stirring, 5 minutes.
  • Gradually stir in the 4 cups milk.
  • Stir and cook until thick.
  • Transfer to a large microwave-safe bowl.
  • Whisk in the evaporated milk until smooth.
  • Add the cut up Velveeta (OR Cheddar).
  • Microwave for 6 minutes.
  • Take out and stir.
  • Add the Worcestershire and hot pepper sauce.
  • Microwave for another 3 minutes or so, or until the sauce is smooth and hot.
  • Take out and taste for Worcestershire and hot sauce.
  • Place spoon you were stirring with on a clean plate, away from the stove.
  • If mixture seems to harden too fast upon cooling, add a bit more milk.
  • Note: I know this seems like a lot of cheese sauce and you may cut it down if you wish, but the cheese sauce is the main attraction here.
  • It is hard to have "too much"!
  • Assembly is in this order: toast, hamburger, lots of cheese sauce and french fries.
  • I promise, you'll have no leftovers.

Every time we visit Springfield, Illinois we have to eat one of their famous horseshoes. The cheese sauce is a little different depending on where you stop to eat, seems everyone has their own way of making it. But we love them all. If you only use one slice of bread and one hamburger patty it is called a ponyshoe. This recipe can also be made with chicken tenders in place of the hamburger patties.

1 (9 ounce) bag frozen french fries
1 pound ground beef
4 slices bread, toasted
½ cup butter
¼ cup all-purpose flour
2 cups half-and-half
2 cups shredded Cheddar cheese
salt and ground black pepper to taste
hot sauce to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spread french fries out on a baking sheet. Bake for 20 minutes in the preheated oven, or until golden brown.
  • Meanwhile, divide the ground beef into four equal parts and form into patties. Fry the patties in a large skillet over medium-high heat until well done, about 4 minutes per side.
  • Melt the butter in a saucepan over medium heat and whisk in the flour. Cook while stirring constantly for 4 minutes to cook out the flavor of raw flour. Gradually whisk in the half-and-half so that no lumps form. Bring to a simmer then remove from the heat and add the cheese; stir until melted. Season with salt, pepper, and hot sauce to taste.
  • Place 2 slices of toasted bread onto 2 dinner plates and top each slice with a hamburger patty. Top each patty with cooked french fries. Pour the cheese sauce on top of everything and serve immediately.

1 habanero chile, seeded and thinly sliced
¼ teaspoon kosher salt
½ cup mayonnaise
1 tablespoon extra-hot prepared horseradish
2 teaspoons lemon juice
1 tablespoon apple cider vinegar, or to taste
¼ teaspoon ground white pepper
⅛ teaspoon garlic powder
2 (6 ounce) swordfish steaks
2 teaspoons olive oil
salt to taste
1 tablespoon sliced green onions

Steps:

  • Crush the habanero and kosher salt into a fine paste with a mortar and pestle before whisking in mayonnaise, horseradish, lemon juice, vinegar, white pepper, and garlic powder.
  • Strain sauce through a fine mesh strainer before using to remove the pepper skins and particles of horseradish. Set aside until needed.
  • Preheat a charcoal grill until coals are very hot.
  • Coat filets on both sides with olive oil and season with salt.
  • Place filets on the preheated grill, flipping as needed, until they spring back lightly to the touch. Remove from heat.
  • Plate fish as desired and top with white hot sauce and green onions.

Steps:

  • Melt butter, add flour and stir until smooth and bubbly whisk in milk. Add rest of ingredients except beer. Stir constantly until sauce is smooth and cheese is melted. Whisk in beer just before serving.
  • To Prepare shoe: toast a piece of Texas toast, top with meat (burger, bacon, turkey, whatever), put french fries on top of meat then ladle cheese sauce over top of sandwich.

  • Run Sauce Through a Blender Start with your grandma's homemade tomato sauce recipe or buy a jar of Marinara Sauce. My favorite brand is Barilla® Spicy Marina. Run the tomato sauce through a blender to a smoothie-like consistency. Blending any chunks of tomatoes or other vegetables in the sauce thickens the sauce so it will make better leather. You will add back more dehydrated vegetables to these recipes later. Not too Cheesy! A little olive oil in the ingredients won't cause early spoilage, but avoid drying cheesy sauces like Vodka Sauce or Three-Cheese Sauce. The cheese adds fat which may shorten the shelf life of the leather. Cheesy sauces can be dried for short term use. The end product will feel greasier and more crumbly than cheese-less dried marinara sauce. A safer bet is to add cheddar cheese powder or parmesan cheese to the meal rather than to the leather. Spread Thinly Spread the sauce thinly on dehydrator trays covered with non-stick Paraflexx® sheets, parchment paper, or the fruit-roll sheets that came with your dehydrator. Don't use wax paper because the wax melts. I pour about eight fluid ounces onto each Excalibur Dehydrator tray and spread uniformly to the edges. Dry It Dehydrate at 135° for six to eight hours or you may dry at 125° for eight to ten hours with equally good results. Dehydrating times may vary depending on dehydrator model and humidity. Flip It After about five hours, the sauce should be solidified enough for you to peel it off the trays and flip it over for the duration on the drying time. Remove the non-stick sheets during the latter drying stage so both sides of the leather are exposed to the hot air. If you start the drying process before going to bed or work, the leather will turn out fine if you don't flip it. It just may take a little longer to dry and you can always flip and dry it for an hour or so to finish the job when you get to it. The finished product will be leathery and dry to the touch, not sticky. Pack It Allow the leather to cool and then tear it into pieces. Store leather in a jar with a tight fitting lid until you are ready to pack it in plastic bags for a backpacking trip. I have packed sauce leather in mail drops for month-long hikes and it retained its full flavor and quality, although my daily rations were vacuum sealed. Leather which I have stored at home in jars in a cupboard was still in great shape when I ate it after six months. The color turns a little darker over time. When combined with an equal part of hot water, leather will turn back into tomato sauce. Salsa Leather Blend and dry salsa the same way as tomato sauce. Create a tasty Mexican-style meal with rice, chicken and/or black beans, vegetables such as bell peppers and corn, and salsa leather.
