SAUERKRAUT CASSEROLE
This recipe has been in my family as far back as I can remember. I was eating it in my grandmothers kitchen when I was young, my mom made it all my life growing up and I still make it at least once a month to this day. My grown son is now making it for his family as well. It's simple, it's cheap to make, and it's delicious. As a side note for those of you who know someone who doesn't like sauerkraut, trust me when I tell you, I have made this recipe for MANY who claim not to like it and they end up loving this casserole. Even if you yourself don't like it but someone in your family does, go ahead and give it a try. I promise, it just down right good eaten.

- Preheat oven to 350°F. Brown ground beef or turkey with chopped onion and season with garlic powder, salt and pepper until done. Prepare egg noodles according to package. Make sure you don't over cook them. You want them slightly al dente. Drain sour kraut and pour into the bottom of a greased 9x13 pan. (or you can use a casserole dish or roasting pan if you'd like) Sprinkle with brown sugar. Pour drained (but not rinsed) egg noodles over sour kraut and brown sugar. Pour hamburger or turkey over egg noodles. Mix 1 can of warm water with the 2 cans of tomato soup. Make sure you have all the lumps out of the soup and it is mixed well and smooth. Pour over hamburger or turkey evenly. Use a fork as you are pouring the soup along the sides of the pan to pull the mixture away from the edges to allow some of the soup to seep down the sides slightly. Top with cheese. Bake at 350° for 30-45 min until cheese is brown and edges are bubbling. Let stand 5 minutes before serving. Don't forget the garlic bread and/or a nice lettuce salad to accompany this great casserole. Enjoy! ****This recipe is great and easy to make ahead of time. Just assemble and throw it in the fridge then pull it out when you get home from work and pop it in the oven. If you do this though, you may need to adjust your baking time to closer to 60 min.****

- Slice sausage into one inch pieces
- Chop the onion into 1/2 inch.pieces Cook sausage and onion until done drain. When the sausage and onion are cooking. Peel and core the apples slice into quarters
- stir in the apples, Sauerkraut, (do not drain the sauerkraut.),water, brown sugar and seeds
- transfer to a 2 1/2 quart baking dish cover and bake for 1 hour at 350°F.

- Preheat oven to 350 degrees.
- Butter a 9x13 inch pan or casserole dish.
- Spread 1/2 of the mashed potatoes on the bottom, then half of the sauerkraut.

- Preheat oven to 350 degrees F (175 degrees C). Grease a metal colander.
- Whisk together the flour and salt in a bowl. Mix the eggs and water, and pour into the flour mixture. Stir to form a dough.
- Bring a pot of water to a boil. Place the spaetzle dough into the oiled colander, and set the colander over the pot of water. Use a flexible spatula to push the dough into the boiling water through the holes in the colander. Stir the spaetzle as they boil. When they have floated to the top, they are done (about 5 minutes). Scoop the spaetzle out of the boiling water, and place into an ungreased 9x9-inch baking dish.
- Place the bacon in a skillet over medium heat, and cook, stirring often, until the bacon is crisp, about 8 minutes. Remove bacon, leaving drippings in pan, and set aside. Cook the onion in the same pan as the bacon until browned, about 10 minutes.
- In a large skillet, melt the butter over medium heat until foamy, and stir in the apple and brown sugar. Cook and stir until the apple is soft, about 5 minutes. Transfer the cooked bacon, onions, and sauerkraut into the skillet, and cook, stirring often, until the flavors have blended, about 5 minutes. Pour the sauerkraut mixture into the 9x9-inch baking dish on top of the spaetzle.
- Place the kielbasa pieces into a microwave-safe dish, and cook on full power in a microwave oven until the sausage is hot and has lost its pink color, 2 or 3 minutes. Transfer the sausage to the baking dish.
- Bake in the preheated oven until bubbling, about 15 minutes.
