QUINOA-STUFFED ROASTED SQUASH
This delicious, quinoa-stuffed squash will end your search for a truly tasty, vegan dinner! It's also super-easy to make.

Steps:
- Heat oven to 375°F. Spray 15x10x1-inch baking pan with cooking spray. Cut each squash lengthwise in half; remove seeds and fibers. Cut 1/8-inch slice from bottom of each half so squash will sit flat in step 4. Place squash, cut sides down, in pan; bake 30 minutes.
- Meanwhile, in 1-quart saucepan, heat quinoa and broth to boiling; reduce heat to low. Cover and simmer 15 minutes or until all liquid is absorbed.
- In 10-inch skillet, heat oil over medium heat. Cook onions, garlic and sage in oil about 5 minutes, stirring occasionally, until onions are crisp-tender; remove from heat. Add cranberries; stir until coated. Stir in cooked quinoa and all remaining ingredients except parsley until blended.
- Remove squash from oven; turn squash, cut sides up. Divide quinoa mixture evenly among squash halves, pressing down on filling to form slight mound over cavity. Cover loosely with foil. Bake 30 minutes longer or until squash is tender and filling is thoroughly heated. Sprinkle with parsley.

SAUSAGE-STUFFED BUTTERNUT SQUASH

- Preheat the oven to 375 degrees F (190 degrees C). Place squash halves in a shallow pan and cover with water.
- Roast in the preheated oven until tender, 35 to 45 minutes. Remove from the oven and cool partially, about 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C).
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; do not drain fat. Add onion and garlic to sausage and cook and stir over medium-high heat until onion has softened, about 5 minutes.
- Remove flesh from squash, leaving 1/3-inch flesh in the shell to keep it sturdy. Mix squash flesh, sausage mixture, Parmesan cheese, bread crumbs, parsley, oregano, and cayenne together in a bowl. Stuff squash shells with mixture.
- Bake in the preheated oven for 25 minutes.

SAUSAGE AND QUINOA STUFFED SQUASH
I had been planning this recipe out in my head for a while and finally decided to prepare it. I had not used Quinoa before and it sure is a great little grain! My family loved the dish. The spicy sausage and the creole seasoning was a good match to the mild taste of the grain and the squash. My son even asked me to write down the recipe so he could share it with his girl friend.

- Preheat oven to 350 degrees.
- Prepare Quinoa: Combine Quinoa and broth in 2 quart pan. Bring to boil over high heat, reduce to low, cover and cook for 10 minutes. Remove from heat and let stand covered for 5 minutes. Fluff with fork. Make 2 cups cooked quinoa.
- Brown sausage: Whle the Quinoa cooks you can brown the sausage in a frying pan until well done and crumbled. Drain off grease. Remove sausage temporarily to a different container. Save the pan to cook the veggies.
- Prepare squash: For the squash, I chose Calabaza, abt 7" long. w/ a good width for scooping out. Slice each squash in half length-wise. Using a melon baller (or a spoon), scoop out the seeds and pulp from along the center and made a hole/channel to pile the stuffing into. Save about 1/2 cup of the scoops of squash pulp to go in the stuffing. Sprinkle the squash halves very lightly with the sea salt and set aside.
- Prepare stuffing: Cut the tomato, onions and celery and the 1/2 cup of scooped squash into small pieces. Saute veggies over medium-low heat in the same pan that you browned the sausage with a tiny bit of the grease that you drained off. Season with the Tony Cachere's and black pepper. When veggies are tender, add in the cooked Quinoa and browned spicy sausage. Mix and warm it over low heat. Add the shredded cheese and fold in until melted. Remove from heat.
- Stuff the squash: Fill the squash halves with spoonfuls of stuffing, trying to evenly divide amonst the squash. Press and shape to have a little dome of stuffing on each.
- Bake: Arrange squash in a baking dish that can accomodate. Sprinkle a little Tony Cachere's across the squash. Fill bottom of dish with 1/4 inch water. Cover dish with foil. Bake covered for 30 minutes. Remove foil and fork test the squash, a fork should go into thick part of squash easily. Switch oven to broil setting and place uncovered under the broiler for about 5 minutes.
- Serve.

- Cut clean butternut squash in half and remove any seeds. Poke a few holes in the top of the squash with a fork, brush with olive oil or butter and place them cut side up in a sheet pan in the oven. Roast for 50 minutes or until the squash are well cooked and tender.
- While butternut squash are cooking, cook quinoa and set aside. Brown sausage and drain excess fat. Add 2 tbsp maple syrup, 1 tsp cumin, cannellini beans and cooked quinoa to the sausage and heat through, mixing gently. Salt and pepper to taste.
- When squash are finished cooking, score the tops of the squash in a cross hatch pattern, careful not to push your knife through the skin on the bottom of the squash and leaving the outside edges uncut to create a bowl. Run a knife or spoon from the hollow part of the squash up through the neck of the squash and it will pop out the squash that is in the neck in rough cubes. (Don't stress! This doesn't have to be perfect. But cubes are prettier than squished squash.)
