This Thanksgiving stuffing is fantastic! It is very flavorful and fresh-tasting. This recipe will stuff a 10-pound turkey (which serves six) plus extra. I replaced the usual pork sausage with much healthier turkey sausage. Other dried fruits may also be used in place of cranberries.

1 ½ cups cubed whole wheat bread
3 ¾ cups cubed white bread
1 pound ground turkey sausage
1 cup chopped onion
¾ cup chopped celery
2 ½ teaspoons dried sage
1 ½ teaspoons dried rosemary
½ teaspoon dried thyme
1 Golden Delicious apple, cored and chopped
¾ cup dried cranberries
⅓ cup minced fresh parsley
1 cooked turkey liver, finely chopped
¾ cup turkey stock
4 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 350 degree F (175 degree C). Spread the white and whole wheat bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted. Transfer toasted bread cubes to a large bowl.
  • In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.
  • Pour sausage mixture over bread in bowl. Mix in chopped apple, dried cranberries, parsley, and liver. Drizzle with turkey stock and melted butter, and mix lightly. Allow stuffing to cool completely before loosely stuffing a turkey.

3 cups chopped onions
2 cups chopped celery
1/2 cup butter, cubed

1/4 cup chopped fresh sage or 4 teaspoons dried sage leaves

2 to 3 cups reduced-sodium chicken broth

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a large bowl. In the same skillet, saute onions and celery in butter until tender. Add garlic and cook 1 minute longer., Add the bread cubes, apples, pecans, sage, thyme, salt, pepper and onion mixture to the sausage. Stir in enough broth to reach desired moistness. Transfer to a greased 13-in. x 9-in. baking dish (dish will be full). Bake, uncovered, at 375° for 25-30 minutes or until lightly browned.

Number Of Ingredients 11

1 pound fresh white bread without crust, cubed (for 7 to 8 cups of bread cubes)
1/2 pound pitted prunes
1 pound bulk breakfast sausage (fresh turkey or duck sausage can be substituted)
5 tablespoons butter or margarine
3 stalks celery, diced fine
1 large yellow onion, peeled and diced fine
3 Granny Smith apples, peeled, cored and diced
2 teaspoons ground sage
1 tablespoon dried thyme
Salt and freshly ground black pepper to taste
1/4 to 1/3 cup chicken or turkey stock, approximately

Steps:

  • Preheat oven to 350 degrees.
  • Spread bread cubes on one or more baking sheets and toast in oven until dry and golden brown, about 20 minutes. Transfer bread to a very large mixing bowl and set aside.
  • While bread is toasting, put prunes in a small saucepan, cover with water, bring to a simmer and cook about 10 minutes, until tender. Drain and chop prunes in a food processor or by hand. Fold prunes into the bread cubes.
  • Crumble sausage into a large, heavy skillet and saute, stirring with a fork, until cooked through and browned. Drain well of fat and add to the bread cube mixture. Discard the fat.
  • Add the butter to the skillet and saute the celery, onion and apples over medium-high heat until tender, about 15 minutes. Add sage, thyme, salt and pepper. Stir in the stock.
  • Add the contents of the skillet to the bread mixture and toss to combine all ingredients. Adjust seasonings and, if necessary, add more stock. The bread in the stuffing mixture should be just moist, neither crunchy nor sodden. Let stuffing cool and refrigerate if not using immediately. The turkey should be stuffed just before roasting. Any excess stuffing can be baked in a covered casserole during the final half hour the turkey is roasting.

1 loaf (2 pounds) day-old country bread, crust removed and bread torn into 1-inch cubes
4 cups chicken stock
12 ounces prunes, cut into 1/2-inch pieces (about 2 cups)
3 tablespoons extra-virgin olive oil, plus more if needed
2 bunches hearty leafy greens, such as kale, stemmed and coarsely chopped (about 8 cups)
2 pounds sweet Italian sausage, casings removed, crumbled
5 celery stalks, chopped
4 carrots, chopped
2 onions, chopped
Coarse salt and freshly ground pepper
1/2 cup chopped fresh flat-leaf parsley
1 tablespoon chopped fresh thyme
2 tablespoons unsalted butter, cut into pieces

Steps:

  • Preheat oven to 250 degrees. Bake bread on a baking sheet in a single layer until dried but not browned, about 15 minutes. Remove bread, and let cool. Raise oven temperature to 350 degrees.
  • Bring stock to a boil in a medium saucepan. Remove from heat. Add prunes, and let soak for 20 minutes.
  • Meanwhile, heat 2 tablespoons oil in a large high-sided skillet over medium-high heat. Working in batches, cook greens until tender, about 10 minutes, and transfer to a plate. Let cool. Wipe out skillet.
  • Heat remaining tablespoon oil in skillet over medium heat. Brown sausage, stirring occasionally, until just cooked through and no longer pink, about 10 minutes. Transfer to a large bowl using a slotted spoon. Add more oil to skillet if needed, and cook celery, carrots, and onions until tender, about 6 minutes. Season with salt and pepper.
  • Drain prunes, reserving poaching liquid. Add prunes, bread, greens, and vegetable mixture to bowl with sausage. Gradually add reserved poaching liquid (about 2 1/2 cups), stirring to combine. Stir in parsley and thyme. Season with salt and pepper.
  • Divide stuffing between two 9-by-13-inch baking dishes. Dot tops with butter. Bake until browned, about 45 minutes.

STUFFING:
2 cups chopped celery
1 cup chopped onion
1 garlic clove, minced
3 tablespoons butter
6 cups chopped peeled apples
2 cups pitted dried plums (prunes), chopped
1/3 cup chopped fresh parsley
1 tablespoon rubbed sage
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground thyme
1 bay leaf, crumbled
1 cup apple juice
1 egg, lightly beaten
3 to 4 cups coarse bread crumbs
GLAZE (optional):
1 cup orange juice
1/2 cup chili sauce
1 tablespoon brown sugar
2 tablespoons cornstarch
1 tablespoon soy sauce
1 teaspoon prepared mustard
1/4 teaspoon garlic powder

Steps:

  • Sprinkle inside of goose with salt. Prick skin well; set aside. In a skillet, saute celery, onion and garlic in butter; transfer to a large bowl. Add the next 10 ingredients. Add bread crumbs until stuffing has the desired consistency. Stuff the goose. Place with breast side up on a rack in a large shallow roasting pan. Bake, uncovered, at 350° for 3 to 3-1/2 hours or until thermometer reads 185°. Drain fat from pan as it accumulates. If desired, make glaze: Combine all ingredients in a saucepan. Cook and stir until bubbly; cook and stir 2 minutes more. Brush over the goose during the last 20 minutes of baking. Remove all stuffing.

2 tablespoons butter
½ cup chopped celery

1 tablespoon chicken broth

Steps:

  • Place ground pork breakfast sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • Melt butter in a medium saucepan over medium heat. Stir in celery, onion and water chestnuts. Cook and stir until tender. Remove from heat.

1 pound sweet Italian sausage (bulk, or casings removed)
1 onion, finely chopped
5 stalks celery, finely chopped
2 apples, chopped
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
Kosher salt and freshly ground pepper
1 12-ounce bottle hard cider
2 1/2 cups low-sodium chicken or turkey broth
2 large eggs
1/2 cup chopped fresh parsley
12 cups 1/2 -inch stale white bread cubes (about 1 1/4 pounds)
1 cup walnuts, roughly chopped
2 tablespoons fat from the turkey drippings (or butter)

Steps:

  • Preheat the oven to 375 degrees F and butter a 3-quart baking dish. Melt 2 tablespoons butter in a large skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until browned and cooked through, 6 to 8 minutes. Remove with a slotted spoon and transfer to a plate.
  • Melt the remaining 6 tablespoons butter in the skillet, then add the onion, celery, apples, sage, thyme, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the vegetables are tender, about 5 minutes. Add the cider. Bring to a boil, scraping up any browned bits, and cook until reduced by half, about 5 minutes. 1 ½ lbs mild pork sausage
5 cups day old French bread, cut into ½ inch cubes and toasted
1/3 c fresh parsley, chopped
2 tbsp sage, chopped
1 tbsp thyme, minced
¼ tsp ground allspice
¼ tsp ground nutmeg
1 ½ c heavy cream
4 tsp arrowroot or cornstarch
¼ c cold water

Steps:

  • In a ceramic or glass bowl let 6 ounces pitted pruned, chopped coarse, macerate in ½ cup Madeira for 2 hours. In a stainless steel or enameled skillet cook 2 cups chopped onion in 1 ½ sticks (3/4 cup) unsalted butter over moderate heat for 5 minutes, or until it is softened. Add 2 cups each of chopped celery and peeled, cored, and chopped tart apple, cook the mixture for 5 minutes, or until the celery is softened slightly, and transfer it with a slotted spoon to a large bowl. In the fat remaining in the skillet cook 1 ½ pounds sausage meat, breaking it up with a fork, and the reserved turkey liver, minced, stirring occasionally, for 5 minutes, or until the mixture is lightly colored, and transfer the mixture to the bowl. Cut enough day-old French or Italian bread into ½ inch cubes to measure 5 cups, spread it in a jelly-roll pan and toast it in a preheated moderately slow oven (325 F) for 20 to 30 minutes, or until it is crisp and slightly golden. Transfer the bread to the bowl, add the prune mixture, 1/3 cup chopped fresh parsley leaves, 2 tablespoons minced fresh sage or 2 teaspoons dried, 1 tablespoon minced fresh thyme or 1 teaspoon dried, ¼ teaspoon ground allspice, and freshly grated nutmeg, slat, and pepper to taste, and toss the stuffing well.
