Number Of Ingredients 8

15-20 small cremini mushroom caps - sometimes called baby portabellos
8 ounce(s) good quality bulk breakfast sausage
6-8 slice(s) bacon, cooked and crumbled
4 ounce(s) cream cheese, well-softened
1 cup(s) panko breadcrumbs
1 teaspoon(s) garlic powder
1/4 cup(s) chopped fresh parsley
1/2 cup(s) shredded parmesan cheese

Steps:

  • Clean mushrooms with a damp cloth. Remove and trim stems; chop stems and reserve. Arrange caps on a parchment-lined shallow baking sheet.
  • Cook and crumble sausage into fine crumbs until well done. Drain off fat and pat excess fat from sausage with paper towels.
  • Combine sausage, bacon, softened cream cheese, bread crumbs, reserved mushroom stems, garlic powder, and parsley until well-mixed. Stuff and mound about a tablespoon of filling into each mushroom cap.
  • Top each with 1/2 teaspoon shredded Parmesan cheese. Bake at 400°F for 15-20 minutes. Serve immediately.

½ cup chopped green onions
2 (8 ounce) packages cream cheese, softened
20 fresh mushrooms, stems removed
1 pound sliced bacon, cut in half

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the green onions and cream cheese . Stuff mushroom caps with the cheese mixture. Wrap each mushroom with a half-slice of bacon, and secure with toothpicks. Place on a baking sheet.
  • Bake for 20 minutes in the preheated oven, until the bacon is cooked through.

24 large fresh mushrooms
1/4 tablespoons extra-virgin olive oil, divided
12 ounces sweet Italian sausage (4 links), removed from casing
1 1/2 cups leeks (green parts), cleaned and finely diced
1 cup cornbread stuffing mix
1/2 cup chicken broth, heated to a simmer
1/2 teaspoon dried sage
1 teaspoon crushed garlic
1/4 cup grated Parmesan, divided

Steps:

  • Preheat oven to 375 degrees F. Spray a rimmed baking sheet with cooking spray and set aside.
  • Wipe mushrooms clean with paper towels. Remove stems and dice. Hollow out the caps if necessary. Brush each cap with olive oil.
  • In a large skillet over medium heat add 2 tablespoons olive oil and mushroom stems, cook for 1 minute and then add sausage; breaking up any clumps. Saute for 3 minutes. Add the leeks and saute for another 3 minutes or until sausage is completely browned and leeks are tender. Remove from pan and set aside.
  • In a medium bowl, combine stuffing mix and hot broth. Let sit for 2 minutes or until slightly softened.
  • Stir in browned sausage mixture, sage, garlic, and 2 tablespoons Parmesan into stuffing.
  • Fill each mushroom with stuffing mixture and arrange caps on prepared baking sheet. Sprinkle mushrooms with remaining 2 tablespoons of Parmesan.
  • Bake in preheated oven for 20 to 25 minutes, or until golden. Serve immediately.

EASY SAUSAGE STUFFED MUSHROOMS

24 large mushrooms, stems removed, or more as needed
1 pound bulk hot Italian sausage
1 onion, diced
4 ounces grated Parmesan cheese, divided
¼ cup Italian bread crumbs
1 teaspoon minced garlic
1 teaspoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Hollow out each mushroom cap, reserving scrapings.
  • Heat a skillet over medium-high heat. Cook and stir sausage, onion, and reserved mushroom scrapings in hot skillet until sausage is browned and cooked through, 4 to 6 minutes. Drain and discard grease; return sausage mixture to skillet.
  • Stir 3 ounces Parmesan cheese, bread crumbs, garlic, and parsley into sausage mixture. Cook and stir until heated through, 3 to 5 minutes.
  • Stuff each mushroom cap with sausage mixture and place on a baking sheet.
  • Bake stuffed mushrooms in the preheated oven for 12 minutes. Sprinkle remaining 1 ounce Parmesan cheese over mushrooms and bake until mushrooms are cooked through and cheese is melted and bubbling, about 3 minutes.

12 large fresh mushrooms
2 tablespoons butter, divided
2 tablespoons chopped onion
1 tablespoon lemon juice
1/4 teaspoon dried basil
Salt and pepper to taste
4 ounces bulk Italian sausage
1 tablespoon chopped fresh parsley
2 tablespoons dry bread crumbs
2 tablespoons grated Parmesan cheese
Thinly sliced green onions, optional

Steps:

  • Preheat oven to 400°. Remove stems from mushrooms; place caps in a greased 15x10x1-in. pan. Finely chop stems; wrap in paper towels and squeeze to remove moisture., In a skillet, heat 1-1/2 tablespoons butter; saute onion and stems over medium-high heat until tender. Stir in lemon juice and seasonings; cook until juices are almost evaporated. Cool slightly., Mix sausage, parsley and onion mixture; spoon into mushroom caps. Mix bread crumbs and cheese; sprinkle over tops. Dot with remaining butter., Bake until sausage is cooked through, 15-20 minutes, basting occasionally with pan juices. If desired, top with green onions.

8 bacon strips, cooked and crumbled

Steps:

  • Preheat broiler. Mix cream cheese and garlic powder. Stir in bacon and green onion., Place mushrooms in an ungreased 15x10x1-in. pan, stem side up. Fill with cream cheese mixture. Broil 4-6 in. from heat until heated through, 4-6 minutes.
