Great low-carb keto appetizer or snack made with only 4 ingredients.

1 pound pork sausage, casings removed
1 pound spicy Italian sausage, casings removed
1 cup crushed pork rinds
1 cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine pork sausage, Italian sausage, pork rinds, and mozzarella cheese in a bowl. Mix well and form into about 48 equal-sized meatballs. Arrange meatballs in a shallow baking pan.
  • Bake in the preheated oven meatballs are nicely browned and an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 20 minutes.

My sister has made these for many years. We use them for snacks on New Year's Eve and take them to work for snacks, esp. at holiday time. They have less bisquick mix than most of the sausage-cheese roll recipes, so are more moist. Also, that gives them less carbs!

10 ounces cheddar cheese
2 cups Bisquick baking mix

Steps:

  • Mix the three ingredients together with a spoon and your hands as needed.
  • Form into 1" size balls and place on a cookie sheet.
  • Bake at 350 degrees for 20-25 minutes.
