This breakfast casserole with biscuits can be made the night before and is perfect for a weekend!

Number Of Ingredients 6

16 oz container of biscuits
6 eggs
1/2 cup milk
1 1/2 cups of shredded cheddar/jack mix
2 cups cut up breakfast sausage
Salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees and spray a 9x13 casserole dish with cooking spray.
  • Open up a package of biscuits and cut each into 6 pieces.
  • Spread cut biscuits in the bottom of the greased casserole dish.
  • Cook breakfast sausage according to package directions. Cut into bite sized pieces and spread over top of biscuits.
  • Sprinkle 1/2 cup of shredded cheese over the sausage.
  • Beat 6 eggs with milk and pour over the biscuits and sausage.
  • Sprinkle remaining cheese over the top and add a shake of salt and pepper.
  • Bake at 350 degrees for 30-35 minutes until the eggs are set.

1 cup(s) mozzarella cheese
1 cup(s) cheddar cheese
6 eggs
3/4 cup(s) milk

Steps:

  • Cut biscuits into six to eight pieces place in a grease 8×8 pan, brown sausage on the stove top and drain spread over the cut up biscuits, beat eggs and add milk and salt and pepper to them and pour over sausage and biscuits, sprinkle both shredded cheeses over the top.
  • Bake in 8×8 pan at 425 for 30-35 min. Let sit 5 min.

Packaged biscuits and frozen sausage patties really help speed this tasty breakfast and brunch casserole along. It's easy, cheesy, and you can prep it the night before, so you don't have to spend time prepping it in the morning when your stomach's already growling.

2 12 ounce pkg. (20 total) refrigerated flaky biscuits
1 6.4 ounce pkg. frozen brown-and-serve sausage patties, thawed and quartered
1.5 cup shredded white cheddar cheese (6 oz.)
8 eggs
3 cup milk
1.5 teaspoon dry mustard
0.5 teaspoon salt
0.25 teaspoon black pepper

Steps:

  • Preheat oven to 400°F. Quarter biscuits; spread on a large baking sheet. Bake 8 to 10 minutes or until golden. Cool on baking sheet on a wire rack. Butter a 3-qt. rectangular baking dish. Place half of the biscuit pieces in prepared baking dish. Top with sausage and half of the cheese. Top with remaining biscuit pieces.
  • In a large bowl whisk together eggs, milk, dry mustard, salt, and pepper. Pour egg mixture over layers in dish. Using the back of a spoon, gently press down on layers. Top with remaining cheese. Cover and chill overnight.
  • Preheat oven to 350°F. Bake, uncovered, 50 minutes or until golden and egg mixture is set, covering with foil the last 5 to 10 minutes if necessary to prevent overbrowning. Let stand 10 minutes before serving.

1 pound bulk breakfast sausage
7 eggs
1 1⁄4 cups whole milk
3 ⁄4 cup heavy cream
1 teaspoon each table salt and black pepper
8 frozen buttermilk biscuits, partially thawed, halved
1 1⁄2 cups Cheddar, shredded & divided
GRAVY:
3 tabvlespoons unsalted butter
3 tablespoons all-purpose flour
2 cups whole milk
1 tablespoon chopped fresh sage
1 ⁄2 teaspoon red pepper flakes
Salt and black pepper to taste

Steps:

  • Preheat oven to 375° fahrenheit. Coat a 7×11-inch baking dish with nonstick spray. For the casserole, brown sausage in a sauté pan over medium heat, breaking into chunks; transfer to a paper-towel-lined plate. Reserve drippings for sage gravy. Whisk together eggs, 1¼ cups milk, cream, 1 teaspoon salt and 1 teaspoon black pepper in a large measuring cup; set aside. Layer biscuit bottoms in prepared dish. Sprinkle half the sausage over biscuits, top with half the Cheddar, and add biscuit tops. Pour egg mixture over top; bake 30 minutes. Sprinkle remaining Cheddar over top and bake casserole until center is set, an instant-read thermometer registers 165° fahrenheit, and a toothpick inserted into a biscuit comes out clean, 10-15 minutes more. Let casserole sit 10 minutes. For the gravy, melt butter in reserved sausage drippings in a sauté pan over medium heat. Whisk in flour until smooth; cook 2 minutes. This recipe came about when I had all the ingredients for a great breakfast but didn't want to cook everything separately. Threw it into a casserole dish and voila! This is by far the best breakfast casserole I've ever had. It's wonderful when having "breakfast for dinner!"

1 teaspoon butter, or as needed
1 (16 ounce) package bacon
1 (16 ounce) can refrigerated biscuit dough
8 frozen hash brown patties, or to taste
8 eggs
¾ cup milk
2 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Butter a 9x13-inch baking dish and set aside.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy but not fully browned, 6 to 8 minutes. Drain bacon slices on paper towels.
  • Slice biscuits lengthwise and place on the bottom of the baking dish, sealing the dough to cover the bottom completely. Top with hash brown patties. Layer bacon over the hash browns.
  • Whisk eggs and milk together, then pour over the casserole. Top with Cheddar cheese.

1 teaspoon salt
1 teaspoon ground mustard
6 slices white bread, cut into 1/2-inch cubes
1 cup shredded Cheddar cheese

Steps:

  • Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
  • Beat eggs in a large bowl; stir in milk, salt, and mustard. Fold bread cubes, Cheddar cheese, and sausage into egg mixture. Pour into a lightly greased 7x11-inch baking dish. Cover and refrigerate for 8 hours or overnight.

2 cups 2% milk
1 teaspoon salt
1 teaspoon ground mustard
