1 each medium green and red bell pepper, thinly sliced
3/4 cup (175 mL) thinly sliced onion wedges
1 (15-in/38-cm) loaf French bread
1 can (8 oz/250 g) pizza sauce
6 oz (175 g) pizza cheese blend (1 1/2 cups/375 mL)
1 tsp (5 mL) Italian seasoning (optional)

Steps:

  • Preheat oven to 400°F (200°C). Remove casings from sausage links and cut into 1/2-inch (1-cm) nuggets. In (10-in./24-cm) Skillet, cook and stir sausage over medium-high heat until no longer pink; remove from Skillet. Add peppers and onion to Skillet; cook and stir 6-8 minutes or until crisp-tender.Slice bread loaf in half lengthwise using Bread Knife; place cut sides up on Rectangle Stone. Spread pizza sauce evenly over bread. Top with 1/2 cup (125 mL) of the cheese, vegetables and sausage. Top with remaining cheese and sprinkle with seasoning, if desired. Bake 15-18 minutes or until cheese is melted and bread is crisp. Serve immediately.

1 24-inch loaf soft French or Italian bread
1/4 cup extra-virgin olive oil
2 cloves garlic, grated
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
6 ounces smoked sausage, thinly sliced
1 small onion, thinly sliced
1 green or red bell pepper, sliced
1/2 cup barbecue sauce
2 cups shredded Monterey Jack cheese (about 8 ounces)
1 cup shredded smoked cheddar cheese (about 4 ounces)
Chopped fresh cilantro, for topping

Steps:

  • Preheat the oven to 500˚. Line a rimmed baking sheet with foil. Trim the ends from the bread, then cut into 4 equal pieces; split each piece in half. Arrange the bread cut-sides up on the prepared baking sheet.
  • Mix 3 tablespoons olive oil with the garlic and oregano. Brush the oil on the cut sides of the bread, then season with salt and pepper. Bake until lightly toasted, 4 to 5 minutes. Let cool slightly.
  • Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sausage and cook, stirring, until crisp, about 5 minutes. Transfer to a plate with a slotted spoon. Add the onion and bell pepper to the skillet and season with salt and pepper. Cook, stirring occasionally, until tender and lightly browned, about 5 minutes. Stir in 1/4 cup barbecue sauce and cook until the vegetables are glazed, about 2 minutes.
  • Combine the Monterey Jack and cheddar in a medium bowl. Sprinkle about 1/4 cup of the cheese mixture on each bread slice, then top with the onion-pepper mixture, sausage and remaining cheese. Bake until the cheese is melted and bubbling, about 8 minutes.
  • Microwave the remaining 1/4 cup barbecue sauce in a microwave-safe bowl until warm, about 30 seconds. Drizzle on the pizzas and sprinkle with cilantro.

1/2 medium red onion, halved and sliced 1/4 inch thick
1 cup jarred pizza sauce
3 cloves garlic, grated
2 sprigs thyme, leaves only
1 long loaf French bread or baguette (about 22 inches long), halved crosswise and cut horizontally
2 cups shredded mozzarella
1/2 green bell pepper, sliced into 1/4-inch-thick strips
1/2 red bell pepper, sliced into 1/4-inch-thick strips
2 tablespoons grated Parmesan
Crushed red pepper flakes and granulated garlic, for serving

Steps:

  • Preheat the oven to 375 degrees F with one rack positioned at the bottom of the oven and another at the top.
  • Cook the sausage in a medium skillet over medium-high heat, breaking up any clumps with a wooden spoon, until some of the fat has rendered and the sausage is brown, 6 to 8 minutes. Add the onions and cook, stirring occasionally, until slightly softened, about 2 minutes.
  • Meanwhile, add the pizza sauce, garlic and thyme to a small saucepan. Heat over medium heat to let the flavors infuse while the sausage and onions cook.
  • Line a rimmed baking sheet with parchment and arrange the bread on top, cut-side up. Spread the tops evenly with the pizza sauce, then sprinkle with the mozzarella. Divide the sausage mixture among the bread pieces, then top off with the green and red bell peppers and Parmesan.
  • Bake on the bottom rack of the oven until the bread is crisp and the cheese is melted, about 10 minutes. Increase the oven temperature to 450 degrees F and move the baking sheet to the top rack. Continue to bake until the cheese is bubbling and the peppers are browned in spots, about 7 minutes.
  • Serve immediately with crushed red pepper flakes and granulated garlic on the side.

1 pound sweet Italian sausage
5 tablespoons olive oil, divided
2 large onions, sliced
1 clove garlic, pressed
1 (8 ounce) can tomato sauce
salt and pepper to taste
crushed red pepper to taste
¼ cup sliced stuffed green olives
1 (1 pound) loaf French bread, sliced horizontally
6 ounces mozzarella cheese, shredded

Steps:

  • Remove sausage from casings and saute sausage in 2 tablespoons olive oil until browned. Drain to remove excess oil. Remove from skillet and set aside. In skillet, heat 3 tablespoons olive oil, add onions, garlic and saute stirring until onions wilt down. Add tomato sauce, salt, pepper and red pepper to taste. Simmer about 5 minutes on low.
  • Stir together the sausage and onion and chopped olives. Toast bread lightly under broiler. Top with sausage mix and sprinkle grated mozzarella over all. Broil about 3 minutes under broiler until cheese melts. Watch carefully with oven door open. Remove from broiler, slice and serve.

8 ounces Italian Sausage (casings removed and torn into pieces or use bulk sausage (use mild or hot sausage))
1 Loaf French Bread (about 18 inches long)
2 tablespoon Extra Virgin Olive Oil
¾-1 cup Pasta Sauce (use a meatless variety (or use Pizza Sauce))
7-8 ounces Shredded Mozzarella Cheese
2 tablespoon White Onion (thinly sliced)
2 tablespoon Black Olives (thinly sliced)
½ teaspoon Dried Oregano
¼ teaspoon Garlic Powder
Crushed Red Pepper for serving (optional)
Parmesan Cheese for serving (optional)

Steps:

  • Heat a non-stick skillet over medium heat. Add the sausage to the skillet and cook 8-10 minutes until cooked through. Stir the sausage frequently and break up any large pieces.
  • Remove the cooked sausage from the skillet and place it on a plate that is lined with a paper towel to drain.
  • Preheat Oven 350°F
  • Cut the bread loaf in half to make 2 pieces (each about 9 inches). Cut each piece lengthwise to open it up. Brush the inside of each with olive oil.
  • Spoon on the pasta sauce and spread it in a thin layer on all 4 pieces.
  • Divide about ¾ of the mozzarella cheese (1½ cup) among the 4 slices. Reserve about ½ cup to top at the end.
  • Arrange the sausage, sliced onions, and black olives on the pizzas and top with the reserved cheese. Sprinkle the top with the dried oregano and garlic powder.
  • Place the pizza on a baking sheet that's lined with a cooling rack (if you have one).
  • Bake until the cheese is melted, and the bread is toasty, approximately 15-20 minutes, check it after 12 minutes and gauge the remaining time from there.
  • Serve with crushed red pepper and parmesan cheese, if desired.
