1 lb ground sausage
4 slices thick-cut bacon
1/2 diced onion
2 cloves minced garlic
3 tablespoons all purpose flour
1 teaspoon salt
2 teaspoons black pepper
2 cups half and half
2 tablespoons butter
12 freshly baked (use your favorite recipe or you can use store-bought) biscuits

Steps:

  • In a large skillet, combine sausage, bacon, onion and garlic. Cook over medium heat, until sausage is browned and crumbles. Stir in flour, salt and pepper; cook 1 minute, stirring constantly. Gradually stir in half and half. Cook over medium heat, stirring constantly until mixture is thickened. Stir in butter.

1 pound bulk pork breakfast sausage
¼ cup all-purpose flour, or instant flour like Wondra
1 teaspoon freshly ground black pepper, or to taste
2½ cups whole milk
Salt to taste
ground sage to taste (optional)
ground fennel to taste (optional)
ground red pepper to taste

Steps:

  • Set a large, heavy-bottomed skillet over medium heat and cook the sausage, breaking it up with a wooden spoon, until it is loose and no longer pink, approximately 10 minutes. Taste sausage and adjust seasonings - you may wish to add sage and fennel aggressively.
  • Sprinkle the flour and pepper over the sausage and cook, stirring constantly, until the flour has been absorbed by the fat and has gathered its flavors close, approximately 2 to 5 minutes.
  • Slowly stir in the milk and cook at a bare simmer until the gravy gets thick and the roux covers the back of a spoon. If it is too thick for your liking add more milk and stir. Check seasonings and serve over split or roughly crumbled biscuits.

1 pound sage-flavored bulk pork sausage
2 tablespoons finely chopped onion
6 tablespoons all-purpose flour
1 quart milk
1/2 teaspoon poultry seasoning
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
Dash Worcestershire sauce
Dash hot pepper sauce
Biscuits

Steps:

  • Crumble sausage into a large saucepan; cook over medium-low heat. Add onion; cook and stir until transparent. Drain, discarding all but 2 tablespoons of drippings. Stir in flour; cook over medium-low heat about 6 minutes or until mixture bubbles and turns golden. Stir in milk. Add seasonings; cook, stirring, until thickened. To serve, slice biscuits and spoon gravy over halves.

1 pound ground pork sausage
3 tablespoons all-purpose flour
3 cups milk

Steps:

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
  • Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
  • Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

1 pound ground pork sausage
3 tablespoons bacon grease
¼ cup all-purpose flour
3 cups milk
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Brown sausage in a large skillet over medium-high heat. Set aside, leaving the drippings in the skillet.
  • Mix bacon grease into the sausage drippings. Reduce heat to medium, combine with flour, and stir constantly until mixture just turns golden brown.
  • Gradually whisk milk into skillet. When the mixture is smooth, thickened, and begins to bubble, return the sausage to skillet. Season with salt and pepper. Reduce heat, and simmer for about 15 minutes.

1 lb sausage (I prefer Jimmy Dean)
1/2 lb diced good thick pepper bacon
1 cup flour
1 tablespoon butter
1/2-1 teaspoon kosher salt
1/2-1 teaspoon pepper
1/2 teaspoon season salt
1 -2 quart milk (I use skim)

Steps:

  • Fry the diced bacon until slightly crisp, pour out bacon and grease and set aside until later.
  • Fry the sausage in the same dutch oven until browned, adding a little of the pepper to the sausage as it cooks.
  • Add the bacon grease and 1/4th of the bacon to the cooked sausage. Cook on low and add the butter until melted. Add the flour and season salt. Cook for 3 minutes to get rid of the flour taste. Stirring constantly.
  • Heat to medium, slowly add the milk, only enough at a time so it doesn't get too runny. Add the rest of the bacon.
  • Add the salt and pepper for your taste. I believe the more pepper the better. The longer this simmers the more flavor it has. This is great with biscuits, hashbrowns or chicken fried steak.
  • I always divide the gravy into plastic bowls enough for 1 meal and freeze for another day.

One day DH wanted biscuits and gravy, but I didn't have sausage, only bacon. So, I found a recipe online and went for it. Thus, bacon gravy was born!

6 slices bacon
2 tablespoons bacon grease
2 tablespoons flour
2 cups milk
salt and pepper

Steps:

  • Preheat a large skillet to medium-hi. Place 6 slices of bacon in the skillet and cook until just under crispy.
  • Remove bacon from skillet and drain; set aside. Discard all but 2 tablespoons of the bacon grease.
  • Add flour to grease, and whisk together. Cook for about a minute without burning the flour.
  • Add milk; whisk together.
  • Heat until bubbling. Simmer for 5-10 minutes, until sauce starts to thicken.
  • Meanwhile, crumble bacon. Add salt and pepper (to taste), and bacon to gravy. Allow to simmer until desired consistency.
  • Serve over biscuits.

1 pound bulk pork sausage
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1-1/4 cups milk
1/2 teaspoon ground mustard
1/4 teaspoon seasoned salt
1/4 teaspoon pepper
1 cup sour cream
Warm biscuits

Steps:

  • In a heavy skillet, brown and crumble sausage over medium heat until fully cooked. Drain and set aside. In the same skillet, combine soup and milk. Add mustard, seasoned salt and pepper; bring to a boil. reduce heat. Add sausage and sour cream. Simmer until heated through (do not boil). Serve over warm biscuits.
