CROSTINI WITH MOZZARELLA AND TOMATO
I had this in an Italian Restaurant close to home. This is my version. Make extra because these little treats disappear rather quickly.

Steps:
- Preheat the oven's broiler. Brush the slices of bread lightly with olive oil, and place on a baking sheet. Toast under the broiler for about 3 minutes. Watch carefully. Rub each crostini with a garlic clove for flavor.
- Place the tomatoes into a medium bowl, and drizzle with olive oil. Season with salt and pepper.
- Place the crostini on a serving tray. Top each one with a slice of mozzarella cheese, cover with a spoonful of tomatoes, and garnish with fresh basil.

- Preheat oven to 400°. Arrange bread slices on an ungreased baking sheets; bake until lightly toasted, 6-8 minutes. , In a large skillet, cook and crumble sausage over medium heat until no longer pink, 5-7 minutes. Remove from pan with a slotted spoon; pour off drippings., Whisk together eggs, salt and pepper; stir in green onions. In same pan, cook and stir egg mixture just until thickened and no liquid egg remains; stir in sausage., Spoon salsa over toasts. Top with sausage mixture; sprinkle with cheese. Bake until cheese is melted, 1-2 minutes. Top with sour cream and cilantro.

- In several large skillets, brown sausage; drain. In several large stockpots, combine the spaghetti sauce, mushrooms, tomato juice, onions, Italian seasoning, salt and pepper. Stir in sausage. , Grease eight 6-qt. baking dishes. Layer half of the noodles, sliced cheese and meat sauce in pans. Repeat layers. Sprinkle shredded cheese equally over each pan. , Cover and bake at 350° for 1 hour. Uncover; bake 15 minutes longer or until cheese is melted.,
