1 stick butter
1 whole large onion, halved and sliced
1 1/2 pounds ground beef
5 dashes Worcestershire sauce
Salt and fresh ground black pepper
8 slices rye bread
8 slices Swiss cheese

Steps:

  • In a medium skillet, melt 2 tablespoons of the butter over medium-low heat. Throw in the sliced onions and cook slowly until the onions are golden brown and soft, 20 to 25 minutes, stirring occasionally.
  • In a medium bowl, mix together the ground beef, Worcestershire and some salt and pepper. Form into 4 patties.
  • Melt 2 tablespoons of the butter in a separate skillet over medium heat. Cook the patties on both sides until totally done in the middle.
  • Assemble the patty melts this way: Slice of bread, slice of cheese, hamburger patty, a quarter of the cooked onions, another slice of cheese and another slice of bread.
  • On a clean griddle or in a large skillet over medium heat, melt 2 tablespoons of the butter and grill the sandwiches until golden brown. Remove the sandwiches and add the remaining 2 tablespoons butter to the skillet. Return the sandwiches to the skillet, flipping them to the other side. Cook until golden brown and crisp, and until the cheese is melted. Slice in half and serve immediately!

1 lb hot Italian sausage or 1 lb mild Italian sausage, casings removed
2 green peppers or 2 yellow peppers, diced
1 1/2 cups pasta sauce, your favorite
1 1/2 cups mozzarella cheese or 1 1/2 cups provolone cheese, grated
2 panini buns, split in half

Steps:

  • Heat the broiler.
  • Sauté sausage on medium high heat breaking them up as you go. Cook until no longer pink, about 8-10 minute.
  • Drain on paper towel.
  • Discard fat from pan.
  • In same pan over medium heat cook peppers for 10 minutes or until brown edges form.
  • Return sausage to pan along with the sauce and simmer until almost all the liquid has evaporated.
  • Transfer into bowl and add 1/2 cup of the cheese.
  • Place the bun halves on broiler pan.
  • Divide and spread the sausage mixture on the halves.
  • Sprinkle with remaining cheese.
  • Broil until bubbling and bread is crisp.

1/2 small onion, thinly sliced
salt
fresh ground black pepper
1/2 teaspoon crushed red pepper flakes
1 tablespoon butter
4 slices Italian bread (thin slices)
4 slices provolone cheese (deli-sliced)
1 cup pizza sauce or 1 cup tomato sauce

Steps:

  • Heat a medium nonstick skillet over med-high heat.
  • Add in 1 tablespoon olive oil and the sausage patties.
  • Cook the patties 4 minutes on each side; then remove from the pan.
  • Add another tablespoon olive oil to the pan; then add the bell peppers, onions, salt, pepper, and pepper flakes.
  • Cook about 5 minutes or until the vegetables are tender but still have a bite to them.
  • Pile the veggies on the patties and return pan to the stove.
  • Add butter to the pan; let butter melt.
  • Add 2 slices bread, top each with a slice of cheese, a sausage patty, some peppers and onions, another slice of cheese, then the remaining slices of bread.
  • Press and cook patty melts 2 or 3 minutes on each side.
  • Warm a cup of marinara sauce, pizza sauce, or tomato sauce in the microwave (1 ½ minutes on HIGH).
  • Cut sandwiches corner to corner and serve with sauce for dipping.

Another open faced sandwich. The idea for this came from Bangers and Mash, one of DH favorite meals. Its too hot to make it durring the summer tho, so I thought this would cure the craving, at least until autumn. I got 6 melts out of this but felt that I stretched the sausage meat too far so I am suggesting that this makes 4. If your bread is small or if you need to stretch it, you can get 6 out of these. I used Jimmy Dean sausage, the kind you get in the tubular shaped package near the breakfast meats since I was shopping on a budget, but use whatever type you like best. I made these with Dijon mustard but we also thought Colmans mustard would be a nice touch. Use your favorite or whatever you have on hand. I served these with fries.

1 tablespoon olive oil
1 large onion
2 tablespoons red wine vinegar
1 tablespoon brown sugar
1 lb ground sausage
4 slices rye bread, 1/4 inch thick
Dijon mustard, to taste
4 slices swiss cheese (to taste)

Steps:

  • Peel and slice onion into thin rounds (or half rounds)and cook in olive oil over medium heat, stirring frequently, until they are very soft.
  • Meanwhile, form sausage meat into 4 thin patties. Try to form them so that they are slightly bigger than the bread slices since they will shrink when you cook them.
  • When the onions are soft add the brown sugar and the vinegar. Stir and cook until the onions are browned.
  • Fry sausage patties in a pan (use a little extra oil if your pan isn't non-stick) for about 3 to 5 minutes per side until cooked through or to your desired doneness (we like them very brown).
  • Meanwhile, spread dijon mustard on each slice of bread in desired amounts.
  • Top each slice of bread with a cooked sausage patty, then the onions, then the cheese.
  • Place under the broiler (set to low so it won't cook too fast or burn) until cheese is melted and bubbling.

1 jar (26 ounces) meatless spaghetti sauce
1/2 cup water
1 can (6 ounces) tomato paste
1 large green pepper, thinly sliced
1 large onion, thinly sliced
1 tablespoon grated Parmesan cheese
1 teaspoon dried parsley flakes
8 brat buns, split
Additional Parmesan cheese, optional

Steps:

  • Place sausages in a large skillet; cover with water. Bring to a boil. Using your hands, combine gently, but thoroughly. Form into 4 thin, equal-sized patties, transfer to a plate and chill for 15 minutes.
  • While the burgers chill, heat 1 tablespoon of the olive oil in a heavy skillet over medium heat. Add the bell pepper and onion, season lightly with salt and pepper and cook until the onion is translucent and the peppers have softened, 3 to 4 minutes. Transfer to a bowl and set aside.
  • In the same pan, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the burgers and cook until no longer pink in the middle, about 4 minutes per side. Transfer the burgers to a plate and wipe out the pan.
